THE WORLD'S BEST CHOCOLATE OATMEAL CAKE

The World's Best Chocolate Oatmeal Cake image

This world's best chocolate oatmeal cake recipe is from my coworker's grandma. Made with chocolate chips, cocoa, and oatmeal, topped with fudge frosting.

Provided by Pinch of Yum, recipe from Mimi's Grandma

Categories     Dessert

Time 1h

Yield 20

Number Of Ingredients 16

1 cup brown sugar
1 cup white sugar
1/2 cup butter, melted
2 eggs, lightly beaten with fork
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons unsweetened cocoa powder
1 cup quick cooking oats*
1 3/4 cups boiling water
1 12 oz bag chocolate chips, divided (go for the Ghirardelli*)
6 tablespoons butter
6 tablespoons milk
1 1/2 cups sugar
1/2-3/4 cup chocolate chips (Ghirardelli again, please)
1/2-3/4 cup mini marshmallows*

Steps:

  • Preheat oven to 350. With an electric mixer, cream the butter and sugars. Add the eggs and mix well.
  • Add flour, soda, salt and cocoa and mix until just incorporated. The batter will be very thick.
  • Add water to oatmeal and let stand for a few minutes. Once oats are soft, add oats/water mixture to the batter and mix well. Stir in half of the bag of chocolate chips (6 ounces).
  • Pour into a greased or buttered rectangular 9×13 cake pan. Sprinkle the top of the cake with the rest of the bag of chocolate chips (6 ounces).
  • Bake at 350 for 30-40 minutes or until the surface springs back lightly when touched and your house smells amazing. Do not overbake. Let cool completely.
  • For the frosting, melt the butter, sugar, and milk in a large saucepan over medium-low heat. Bring to a boil and boil for 30 seconds.
  • Reduce heat to low and add chocolate chips and marshmallows. Stir or whisk until frosting is smooth. Pour immediately over the cooled cake. The frosting crystallizes almost immediately as it cools so it's important to get it on the cake while it's still piping hot. Allow the frosted cake to cool for 5 minutes before serving. Or... not.

KIDS CAN MAKE: OATMEAL-CHOCOLATE SNACK CAKES

Kids Can Make: Oatmeal-Chocolate Snack Cakes image

These delightful treats have a soft, tender crumb that harks back to old-fashioned snack cakes from the grocery store. For little kids: Let them dump the ingredients into the mixing bowls, whisk together the dry ingredients and stir in the chocolate chips. For big kids: Let them measure out the ingredients, spray the baking pan with cooking spray and help spread the batter in the baking pan.

Provided by Food Network Kitchen

Time 1h5m

Yield 12 snack cakes

Number Of Ingredients 10

Cooking spray
1 cup whole-wheat pastry flour
3/4 cup rolled oats
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
6 tablespoons unsalted butter, melted and slightly cooled
1 large egg
3/4 cup packed light brown sugar* (See Cook's Note)
1/2 cup unsweetened applesauce
3/4 cup semisweet mini chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom of a 9-inch square baking pan with a foil strip long enough to overhang on 2 opposite sides. Spray the foil lightly with cooking spray; set aside.
  • Whisk together the flour, oats, baking soda and salt in a medium bowl; set aside. Whisk the butter, egg, brown sugar and applesauce in a large bowl until combined. Add the dry ingredients to the wet and mix until barely mixed. Stir in the chocolate chips.
  • Spread the batter in the prepared baking pan. Bake until the cake is light brown around the edges and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Remove from the oven and let cool on a rack for 15 minutes. Use the foil overhang to lift the cake out of the pan and let cool completely on the rack. Invert onto a plate and peel the foil off. Re-invert the cake onto a cutting board, cut into 12 pieces and serve.

CHOCOLATE OAT CAKES (SCOTLAND)

Chocolate Oat Cakes (Scotland) image

These are our take on the classic British digestive biscuit. We added chocolate to highlight the richness of the oats, and hazelnuts for texture and crunch. We love that they aren't too sweet, making them the perfect match for afternoon tea. Baking them in muffin tins gives them a gorgeous tea-cake shape, but they're also delicious as drop cookies.

Provided by Food Network Kitchen

Categories     dessert

Time 1h

Yield about 20 cookies

Number Of Ingredients 11

1/4 cup hazelnuts, finely chopped
2/3 cup all-purpose flour
1/3 cup Dutch-process cocoa powder
1/4 cup wheat germ
1/2 cup rolled old-fashioned oats
1/2 teaspoon freshly ground cardamom
1/4 teaspoon ground cinnamon
1/8 teaspoon fine salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup sugar
2 large egg yolks

Steps:

  • Preheat oven to 350 degrees F. Line 2 mini muffin tins with mini muffin liners, or set out 20 mini muffin liners on a baking sheet. Lightly spray liners with nonstick spray and sprinkle the hazelnuts into the bottom of each muffin liner.
  • Whisk the flour, cocoa, wheat germ, oats, spices and salt together in a medium bowl.
  • With an electric mixer on medium speed, beat the butter and sugar in another bowl until combined, about 2 minutes. Add the egg yolks and beat together. Add dry ingredients and mix until just combined.
  • Scoop a tablespoon of dough (about 3/4 ounce) into the mini muffin tins or liners, on top of the nuts. (Alternatively, drop heaping tablespoons of the dough onto a parchment-lined baking sheet and top with chopped nuts.) Bake until the cookies are cooked through and nuts are toasty, about 15 minutes (drop cookies will bake slightly faster). Transfer cookies to a rack to cool. Serve.
