Take a tough chuck roast, slow cook it on low for hours and turn it into a buttery soft roast with a creamy mushroom onion gravy - ALL in one roaster!

5 pounds chuck roast
1 tablespoon olive oil
one 454 grams package of white or cremini mushrooms
1 large yellow onion, chopped
one 1 ounce package dry onion soup mix
two 10.75 ounce can of cream of mushroom soup
1 1/4 cups water

Steps:

  • Pre-heat your oven to 400 °F.
  • Heat a skillet or the Dutch oven over medium heat with the olive oil it. Place the chuck roast in and brown on all sides in the hot oil. Place into the Dutch oven or lidded roaster.
  • Place the mushrooms and onion around the chuck roast.
  • Whisk together the soups and the water until as smooth as possible ( it usually is chunky a bit, that's ok!) Pour over the roast.
  • Place the lid on top of the roaster/Dutch oven and place in the preheated oven. Cook for 20 minutes then turn down the oven to 325°F.
  • Cook for another 4-5 hours until the roast pulls apart easily when touched with a fork.
  • Remove and plate. Whisk together the mushrooms and onions and drippings to make a gravy. Serve over the beef.

*This is a recipe with no exact amounts. Use as little or as much of each ingredient as you like.
Beef Roast-cooked through (I used a top round or bottom round roast)
Mayonnaise
Sweet Pickle Relish
Bread, buns, or crackers to serve

Steps:

  • Cut the beef into ½ to 1 inch cubes.
  • Grind the meat in a meat grinder to a fine consistency.
  • In a bowl, combine the beef, mayonnaise, and relish.
  • Stir to combine.
  • Serve on sandwich buns or on crackers.
  • *For the beef, I used a top round roast that had been cooked in a slow-cooker until cooked through. I used only about half of the roast since that is what I had as leftovers.

1 shallot , finely chopped
4 handfuls of a mix of bitter leaves, such as frisée , mizuna and watercress
1 tbsp sherry vinegar
4 tbsp olive oil
selection of micro-leaves , if you can get them
5 tbsp grated horseradish
4 tbsp crème fraîche
pinch mustard powder
juice 1⁄2 lemon

Steps:

  • To make the horseradish cream, whisk all the ingredients together with salt and pepper until spoonable, then set aside. Lay the slices of beef on four serving plates. In a bowl, mix the beetroot, shallot and salad leaves together. Dress with the sherry vinegar and 3 tbsp of the olive oil, then gently toss.
  • Neatly pile a mound of salad into the centre of each plate and scatter some microleaves around the outside. Top the salad with a neat spoonful of horseradish cream, drizzle with the remaining olive oil and serve.

1 large red bell pepper, diced
1 large green pepper, diced
1/2 cup chopped red onion
4 cups halved cherry tomatoes

Steps:

  • Bring a large pot of water to a rolling boil. Season with salt. Add the pasta and give it a stir. Cook until aldente (it should have a slight bite to it). Drain and rinse under cold water until chilled.
  • Add mayo and beef bouillon to a large bowl. Whisk until smooth. Add the sour cream, buttermilk, vinegar, and salt. Whisk until smooth. Add the pasta. Toss until completely coated. If needed, add a little bit of buttermilk to thin the dressing out. Season to taste with salt and pepper.

2 large carrots (cut into bite size batons)
1 tsp cumin seeds
salt & pepper to taste
0.5 tbsp olive oil
2 tbsp olive oil
2 cloves garlic (thinly sliced)
200 g runner beans (Stringed & sliced)
1 tbsp red wine vinegar
1 pinch sugar (optional)
salt & pepper to taste
1 tbsp parsley (finely chopped)
1 - 1.5 kg sirloin of beef roasting joint
0.5 tbsp olive oil
salt & pepper
4 handfuls cavolo nero or curly kale (stripped from the stems & roughly torn)
salt to taste
0.5 tbsp olive oil
3 tbsp mayonnaise
3 tbsp full fat plain yogurt
3 tsp creamed horseradish
black pepper to taste
2 handfuls pea shoots

Steps:

  • Preheat the oven to 220C/425F/Gas 7
  • Put the prepared carrots in a shallow roasting tray and sprinkle with the cumin and salt.Drizzle with the olive oil then mix together with your hands so that the carrots are coated.
  • Put in the hot oven and cook until just cooked and starting to char at the edges (10-15 min).Set aside at room temperature.Reduce the oven temperature to 200C/fan 180C/gas 6 ready to cook the beef.
  • Put the olive oil and sliced garlic in a small frying pan. Heat gently and cook until the garlic is golden brown. Remove the garlic and set aside. Leave the oil to cool.
  • Cook the sliced beans in boiling water until just tender. Tip into a colander and cool under a running tap. Drain well and transfer to a bowl.
  • Put the red wine vinegar in a small bowl with the sugar if using plus a little salt and pepper.When the olive oil you browned the garlic in is cold, whisk it into the vinegar. Taste and adjust seasoning, adding more olive oil or vinegar if liked.
  • Pour the dressing over the beans and mix well.Just before serving, stir in the reserved garlic slices and the parsley.
  • If you haven't done so already, preheat the oven to 200C/fan 180C/gas 6.
  • Rub the olive oil all over the beef then season well with salt and pepper.
  • Put the beef in the oven and cook for 10 minutes plus:10-12 minutes per 450g for medium-rare (recommended)15-20 minutes per 450g for medium20-25 minutes per 450g for medium-well-done25-30 minutes per 450g for well doneBaste two or three times during the cooking.
  • When the beef is cooked to your liking, remove from the oven and cover tightly with foil.Set aside to rest for 15-30 minutes.Reduce the oven temperature to 180C/fan 160C/gas 4 ready to cook the kale.
  • If you haven't done so already, preheat the oven to 180C/fan 160C/gas 4.
  • Put the torn kale in a large baking tray.Sprinkle with salt, drizzle with the olive oil and mix with your hands to coat the leaves.
  • Place in the oven and bake until crispy (10-20 min), stirring regularly and making sure the kale doesn't burn.Remove from the oven and set aside to cool.
  • Whisk together the mayonnaise, yogurt and horseradish. Season with black pepper.
  • Slice the beef thinly and lay slices around the edge of each plate.Between the slices, put piles of roasted carrots and runner beans.Put the crispy kale in the centre of the plate.Dress the plate with pea shoots if using.Drizzle generously with the horseradish dressing.
