Steps:
- Preheat oven to 350 degrees.
- Measure out cake flour, baking soda, salt, cinnamon, cloves, and nutmeg into a large bowl and sift three times.
- Cream butter with an electric mixer until fluffy.
- Add sugar and cream together.
- Add egg and mix.
- Add pecans and dates. Mix to combine.
- Alternate adding a little bit of the sifted flour and spices with a little bit of applesauce, starting and ending with the applesauce. Mix until just combined each time you add.
- Pour ingredients into a buttered and floured tube cake pan.
- Bake for 50-60 minutes. Mine was done right at 50 minutes when I tested it with a toothpick into the center.
- Allow the pan to cool for 10-15 minutes before loosening the edges with a knife and inverting cake to a cooling rack.
- Tastes best served warm with butterscotch sauce and vanilla ice cream.
- In a small saucepan, melt butter on medium heat. Add brown sugar, heavy cream and salt. Bring the sauce to a low boil and keep it boiling for 7 minutes, stirring occasionally.
- Remove from heat. Add vanilla extract and stir to combine.
- This sauce will thicken slightly as it cools, and will thicken significantly if refrigerated. Pours best at room temperature.

Steps:
- Preheat oven to 350 degrees F. Spray a 13- x 9-inch baking dish with non-stick cooking spray.
- In a large bowl, use an electric hand mixer or stand mixer to cream the butter, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
- In a separate bowl combine the flour, cinnamon, nutmeg, cloves, salt and baking soda; gradually add to creamed mixture in small amounts, alternating with the light sour cream, and mix well (batter will be stiff). Use a spoon to stir in apples until well combined.
- Spread into prepared baking dish, smoothing surface with the back of a spoon. Bake for 35 to 40 minutes or until top is lightly browned and toothpick inserted into center of cake comes out clean.
- Meanwhile, in a small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Add salt and gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Reduce heat to low and simmer for about 3 minutes. Remove from the heat and stir in vanilla. Serve drizzled over cake.

APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

UPSIDE-DOWN BUTTERSCOTCH APPLE SOUR CREAM CAKE
Baker's sugar, a favorite of pastry chefs, is also called superfine sugar. It measures the same as regular but dissolves more quickly. It's available at some supermarkets. You can also make your own by whizzing granulated sugar in a food processor until powdery.

Steps:
- For cake:
- Preheat oven to 375°F. Mix flour, baking powder, and salt in medium bowl. Using electric mixer, beat butter in large bowl until smooth. Gradually add sugar and beat until well blended. Add eggs and vanilla; beat until blended. Beat in flour mixture, then sour cream. Stir in chopped apple. Set aside while preparing butterscotch-caramel apples.
- For butterscotch-caramel apples:
- Melt butter in 10-inch-diameter nonstick ovenproof skillet over medium heat. Add brown sugar and butterscotch morsels; stir until melted and smooth and mixture is bubbling, about 2 minutes. Add apple slices to skillet and cook until golden brown, using tongs to turn slices, about 3 minutes per side (there will be a lot of liquid in skillet). Remove skillet from heat and let cool 3 minutes. Using tongs, arrange apple slices in skillet in concentric circles or other pattern.
- Carefully spoon cake batter in small dollops atop apples in skillet. Using offset spatula, gently spread batter evenly to edges of skillet (batter will seem to float on top of apples and pan juices). Bake until cake is golden brown and tester inserted into center comes out clean, about 30 minutes. Cool in skillet 10 minutes. Run knife around edges of cake to loosen. Place large platter atop skillet. Using oven mitts or pot holders, hold platter and skillet firmly together and invert, allowing cake to settle onto platter. Serve cake warm.
APPLE BUTTERSCOTCH CAKE
From October 2006 Nick Jr. Family magazine. Yummy, moist snack cake with all kinds of wonderful nutritious ingredients. I found this sweet enough on its own, but you could sprinkle some powdered sugar on top to make it look pretty. Great for lunch boxes!
