Summer Tomato & Cantaloupe Salad image

A summery, 10-ingredient melon salad with cantaloupe and mint tossed in lime juice, paired with cucumber, tomatoes, and onion tossed in a light vinaigrette. Refreshing, fiber-rich, and so delicious.

1/2 cup thinly sliced cucumber
1/2 cup cherry tomatoes ((thinly sliced))
1/4 medium red onion ((thinly sliced))
1 Tbsp olive or avocado oil
2 tsp apple cider vinegar
1 healthy pinch each sea salt + black pepper
3 Tbsp lime juice
1 Tbsp maple syrup
1 pinch sea salt
1 Tbsp olive or avocado oil
3 heaping cups cantaloupe ((cubed or scooped with a melon baller // ~1 cantaloupe as original recipe is written))
2 Tbsp fresh mint

Steps:

  • Add cucumber, tomato, and onion to a small mixing bowl and top with olive oil, apple cider vinegar, salt, and pepper. Toss to combine. Then taste and adjust flavor as needed, adding more vinegar for acidity or salt and pepper for flavor balance. Set in the refrigerator to chill.
  • Next, prepare dressing by adding lime juice, maple syrup, and sea salt to a small mixing bowl and whisking to combine. Then slowly stream in olive oil while whisking to combine. Taste and adjust flavor as needed, adding more lime juice for brightness/acidity, maple syrup for sweetness, or salt for flavor balance. Set aside.
  • Add cantaloupe to a large serving bowl and top with dressing. Gently toss to combine. Then add the cucumber-tomato-onion salad on top, leaving any excess liquid/dressing behind.
  • Gently toss to combine and garnish with fresh mint. Serve.
  • Best when fresh, though leftovers keep in the refrigerator up to 3 days. Leave mint on the side to keep as fresh as possible.

Steps:

about 500g different-coloured heirloom tomatoes , chopped into large chunks (smaller ones left whole or halved)
1 Charentais melon , segmented and cut into chunks roughly the same size as the tomatoes
12 slices prosciutto - the best you can afford
handful mint , leaves picked, shredded
crusty bread , to serve
1½ tbsp sherry or red wine vinegar
3 tbsp olive oil
1 tsp honey

Steps:

  • To make the dressing, whisk all the ingredients together in a bowl and set aside.
  • Toss the tomatoes and melon together in a bowl with a little dressing, some sea salt and black pepper. Loosely lay the prosciutto over a platter and pile the tomatoes and melon on top. Drizzle with extra dressing, scatter with mint and serve straight away with crusty bread.

1 pound ripe tomatoes, peeled and seeded if desired, cut in thin wedges or diced
1 small ripe honeydew melon or cantaloupe, peeled and cut into 1-inch dice or shaped into melon balls
2 to 3 tablespoons Champagne vinegar or sherry vinegar
1 tablespoon fresh lime juice
1 teaspoon mild honey, like clover, or agave nectar
4 tablespoons grapeseed oil, rice bran oil or canola oil
1 tablespoon chopped flat-leaf parsley
1 tablespoon chopped fresh mint
1 tablespoon chopped chives
Fresh watercress for garnish (optional)

Steps:

  • Put the cucumbers in a colander set in the sink or a bowl. Sprinkle with salt and let drain for 30 minutes. Meanwhile, prepare the other ingredients.
  • Toss the cucumbers, tomatoes and melon together in a bowl. Whisk together the vinegar, salt to taste, lime juice, honey and oil and toss with the fruit and vegetable mixture. Cover the bowl and refrigerate for 1 to 2 hours.
  • Just before serving, toss with the herbs. Line plates with watercress if desired. Taste the salad, adjust the seasonings and serve over the watercress.

cucumbers (peeled, seeded, cut into 1 inch pieces)
red onion (diced or thinly sliced)
feta cheese of ricotta insalata (crumbled)
basil (julienned)
2 tbsp Sherry vinegar or balsamic vinegar
1/4 cup extra virgin olive oil
salt and pepper (to taste)

Steps:

  • Combine watermelon, tomatoes, and cucumbers in a large bowl. Sprinkle 1 teaspoon kosher salt and mix. Let stand 5 minutes. Meanwhile make the dressing. Pour vinegar into a small bowl, whisk oil into vinegar into emulsion forms. Salt and pepper to taste.
  • Drain excess liquid from tomatoes and watermelon mixture. Add onions and julienned basil. Mix lightly. Crumble feta cheese on top of salad and drizzle with vinagrette. Serve.

1/2 seedless cucumber
1 pint cherry tomatoes
1/4 seedless watermelon
1 cup fresh mozzarella balls (bocconcini)
1 lime
handful of fresh basil leaves
extra-virgin olive oil
flaky salt and red pepper flakes

Steps:

  • Halve cherry tomatoes, and add to a large serving bowl. Depending on the cucumber's thickness, slice or chop so that pieces are similar in size to the cherry tomato halves, and add to the bowl. Chop watermelon to a similar size, and add about a cup of watermelon cubes to the bowl.
  • Cut the mozzarella in halves or quarters, depending on size, and add them to the bowl, along with the juice of your lime, the basil leaves, a big drizzle of olive oil, a big pinch of flaky salt, and a sprinkle of red pepper flakes.
  • Use a serving spoon to gently toss it all together, then drizzle with a bit more olive oil and eat!

4 heirloom tomatoes
1 small seedless watermelon
2-inch piece of ginger
2 tablespoons rice vinegar
1/4 cup fruity extra-virgin olive oil
Kosher salt
Freshly ground black pepper
8 leaves basil (preferably opal basil)

Steps:

  • Peel tomatoes: Bring a pot of water to a boil. Cut an "X" on the bottom of each tomato, then place into boiling water for about 10 seconds. Remove and discard peel; chop tomatoes and set aside. Remove watermelon rind: Slice off the bottom and top, then stand it upright on its flattened base. Remove the rind by carefully cutting strips away from top to bottom, following the flesh of the watermelon. Once the rind has been removed, slice the watermelon into rounds, then into strips. Chop the strips into a dice the same size as the tomato pieces. There should be equal amounts of tomato and watermelon.
  • Peel ginger with a vegetable peeler or the back of a knife; grate on a Microplane directly into the tomato-watermelon mixture. Add rice vinegar and olive oil. Sprinkle a reasonable amount of salt to balance the sweetness of the tomatoes and watermelon, making it savory. Add a few cranks of pepper and gently mix. Taste to adjust seasonings, and add more salt and grated ginger if necessary. Then gently toss again. Place in a serving bowl. Using scissors, thinly cut leaves of opal basil directly on top of the tomato-watermelon salad before serving.

1 white salad onion, finely sliced in rings
3 ripe heirloom tomatoes, sliced
¼ watermelon, rind trimmed and cut into 5cm points or 3cm dice
salt flakes and freshly ground black pepper
200g firm feta, cut into rough 4mm slices
2 tbsp wild fennel flowers* or some picked fennel fronds or 1 tbsp fennel pollen**
For the tomato vinaigrette
1 large ripe tomato, coarsely grated
1 garlic clove, finely grated
100ml extra virgin olive oil
40ml white wine vinegar
1 tbsp sumac
freshly ground black pepper
½ tsp salt flakes
1 tsp caster sugar

Steps:

  • 1. To make the vinaigrette, combine all the ingredients in a bowl and set aside. 2. Soak the onion rings in iced water for 5 minutes (this softens their flavour). Drain and pat dry. 3. Arrange the tomato and watermelon on a serving plate and season with salt and pepper. Scatter over the onion, then spoon over the vinaigrette. Top with the feta and add the fennel flowers just before serving. *Once you're aware of wild fennel, you'll see it all over the place - maybe not on city streets, but it commonly crops up in any open spaces where the wind-broadcast seeds have lodged - by rivers and creeks, in parks, by railway lines. The flowers are a vibrant yellow and the fronds and soft seeds are just as tasty. **Fennel pollen is available from specialty food stores and delicatessens.

3 teaspoons sugar
1/2 teaspoon salt

1/2 small red onion, quartered and sliced thin (optional)
1/2 cup red wine vinegar
1/4 cup extra-virgin olive oil
feta or other crumbly white cheese to use as a topping

Steps:

  • Place watermelon and tomato cubes into a large bowl. Add sugar, salt, and pepper and combine gently. Allow to sit for 10 minutes. Make dressing during this time.
  • In a small bowl, combine red onion, red wine vinegar, and extra-virgin olive oil. Add dressing to bowl with watermelon and tomato and combine gently. Cover and refrigerate for one hour prior to serving.
  • Sprinkle with crumbled or diced feta or other white, crumbly cheese.

  • Zitronensaft, Agavendicksaft, Salz, Pfeffer mit dem Olivenöl kräftig verrühren. Über den Tomaten-Melonen-Salat tröpfeln und mit Blättern der fischen Minze garnieren. Einige Minuten ziehen lassen und dann mit frischem Baguette genießen.
