These applesauce muffins are so popular at the restaurant I own that I had the recipe printed up on a card to share with guests. -Linda Williams, LaFayette, Alabama

Number Of Ingredients 12

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, optional
Cinnamon-sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

1 1/4 cups oat-bran cereal, uncooked
1 cup whole wheat flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsweetened applesauce
1/2 cup honey
1/4 cup vegetable oil
1 teaspoon pure vanilla extract
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees.
  • Coat 12 medium-size cups with vegetable oil or line with paper baking cups.
  • In a medium bowl combine Oat Bran cereal, cinnamon, baking powder, soda, and salt.
  • In a large bowl combine applesauce, honey, oil, egg, and vanilla.
  • Stir in dry ingredients; mix well.
  • Stir in nuts.
  • Fill prepared muffin cups almost full.
  • Bake 15 to 20 minutes or until golden brown.
  • Serve warm.

1 1/4 c oat bran
1 c whole wheat flour
2 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 Tbsp brown sugar
3/4 c unsweetened applesauce
3/4 c apple juice, frozen concentrate
1/4 c vegetable oil
2 large egg, whites
1 tsp vanilla extract
1/4 c chopped walnuts or pecans
1/4 c chopped apple

Steps:

  • 1. Preheat oven to 350.
  • 2. In a medium bowl, combine oat bran, whole wheat flour, cinnamon, baking powder, baking soda, and salt.
  • 3. In a large mixing bowl, whisk together brown sugar, applesauce, apple juice concentrate, oil, egg whites, and vanilla. Mix until combined well.
  • 4. Stir dry ingredients into wet ingredients. Mix well until no flour remains.
  • 5. Fold in finely diced apples and nuts of choice.
  • 6. Line muffin tin with paper liners and fill them until they are almost full. It should just be enough for 12.
  • 7. Bake 15 - 20 minutes or until a toothpick comes out clean in the center of the muffin.

3 tablespoons Grape-nuts cereal
2 tablespoons flour
1/4 teaspoon ground cinnamon
1 1/2 teaspoons vegetable oil
1 1/2 teaspoons water
2/3 cup granulated sugar
1/4 cup packed brown sugar
1/2 cup low-fat milk
1/3 cup unsweetened applesauce
2 tablespoons vegetable oil
1 large egg
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup chopped peeled apple
2 teaspoons flour

Steps:

  • Preheat oven to 350°F Spray a 12-cup muffin pan with Pam.
  • Make topping: in a bowl, stir together brown sugar, cereal, flour, cinnamon, oil and water just until crumbly. Set aside.
  • Make muffins: in a large bowl and using a whisk or electric beaters, combine sugar, brown sugar, milk, applesauce, oil and egg.
  • In another bowl, stir together 1 cup flour, baking powder, baking soda and cinnamon. With a wooden spoon, stir the mixture into the applesauce mixture just until everything is combined.
  • In a small bowl, stir together apples and 2 tsp flour; stir the mixture into the batter. Divide the batter among the prepared muffin cups. Sprinkle the topping evenly over top.
  • Bake for 18 to 20 minutes or until a tester inserted into the middle of a muffin comes out dry.

1-1/2 cups quick-cooking oats
1-1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup fat-free milk
3 tablespoons canola oil
1 egg white
TOPPING:
1/4 cup quick-cooking oats
1 tablespoon brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon butter, melted

Steps:

  • In a large bowl, combine the first seven ingredients. In another bowl, combine the applesauce, milk, oil and egg white. Stir into dry ingredients just until moistened. Fill muffin cups coated with cooking spray three-fourths full., Combine topping ingredients; sprinkle over batter. Bake at 400° for 16-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack.
