1 sheet refrigerated pie crust
3/4 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
1/4 cup cold water
5 cups fresh blueberries, divided
1 tablespoon butter
1 tablespoon lemon juice

Steps:

  • Preheat oven to 425°. On a floured surface, roll dough to fit a 9-in. pie plate. Trim and flute edge. Refrigerate 30 minutes. Line crust with a double thickness of foil. Fill with pie weights. Bake on a lower oven rack until golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes. Cool on a wire rack., In a saucepan over medium heat, combine sugar, cornstarch, salt and water until smooth. Add 3 cups blueberries. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly., Remove from the heat. Add butter, lemon juice and remaining berries; stir until butter is melted. Cool. Pour into crust. Refrigerate until serving.

Number Of Ingredients 18

4 pints (8 cups) fresh blueberries
1/4 cup sugar, plus a heavy pinch
1/4 cup water
1 1/2 tablespoons cornstarch
1 teaspoon ground cinnamon
1 teaspoon vanilla
1 teaspoon kosher salt
2 tablespoons cold unsalted butter, diced
Zest of 1 lemon
1 double 9-inch Pie Crust, recipe follows (2 discs)
Beans or pie weights, for blind baking
1 egg, lightly beaten
4 1/2 cups all-purpose flour
2 big pinches sugar
2 pinches salt
2 sticks (1 cup) cold unsalted butter, cubed
1 cup very cold water
2 tablespoons vinegar

Steps:

  • Combine 3 pints of the blueberries, 1/4 cup sugar, and the water, cornstarch, cinnamon, vanilla and salt in a saucepan. Bring to a simmer and cook until the mixture is gooey and thick, 30 to 45 minutes. Remove from the heat and stir in the remaining 1 pint blueberries and the butter and lemon zest. Let cool.
  • In the meantime, roll out 1 disc of pie dough and place it in a 9-inch pie dish, tucking and crimping the edges. Freeze for 15 minutes.
  • Preheat the oven to 350 degrees F.
  • Place a piece of parchment paper inside the frozen pie shell and fill with beans or pie weights. Bake for 20 minutes, then remove the beans and parchment and continue baking for another 10 minutes. Let cool for 5 minutes.
  • Add the filling and bake until a skin forms on top of the filling. Remove from the oven and set aside.
  • Whisk together the egg, a heavy pinch of sugar and a splash of water in a small bowl. Roll out the second disc of pie dough and use cutters to make cut-out leaves or rosettes and vines. Brush the tops of the cut-outs with egg wash.
  • Top the pie with the cut-outs. Bake until the decorative pie topping is golden brown, 5 minutes.
  • Lower the oven temperature to 300 degrees F and continue baking for another 30 minutes. Let cool.
  • Add the flour, sugar and salt to the bowl of a food processor; pulse to combine. Add the butter and pulse until mealy. Put the mixture in a large mixing bowl.
  • Combine the water and vinegar in a small bowl. Gradually drizzle the liquid into the flour mixture and gently bring the dough together until it is homogenous--be careful not overmix. Divide the dough into two balls, press into discs and wrap tightly in plastic wrap. Chill in the refrigerator for 30 minutes.

3 cups all purpose flour
1/2 tsp. sea salt
3 tbsp. sugar
2 sticks butter, cut into 16 pieces
1 tsp. apple cider or white vinegar
1 tbsp. vanilla extract
1/2 cup ice water, plus more as needed
2 pints ripe blueberries, divided
3/4 cup sugar
1/2 tsp. ground cinnamon
1 tsp. fresh lemon juice
3 tbsp. cornstarch
1/4 tsp. sea salt
1 egg, beaten
1 tbsp. cream
3 tbsp. sugar

Steps:

  • Measure all crust ingredients and place in the freezer for 15 minutes.
  • In the base of a food processor pulse together flour, salt, and sugar until well mixed.
  • Add half of the butter, pulse until butter pieces are the size of nickels. Add remaining butter, and pulse until butter pieces are the size of nickels, dimes, and peas.
  • Transfer dry dough to a large bowl. Add vinegar and 1/4 cup ice water. Using hands, gently mix dough. Continue adding water as needed, 1 to 2 tablespoons at a time until dough comes together. Dough should be slightly crumbly, but holds together when pinched.
  • Transfer dough to a lightly floured work surface; divide dough in half, flatten each half into a round disc. Wrap each disc in plastic and refrigerate at least 30 minutes, or up to 48 hours.
  • In a large bowl combine half of the blueberries, sugar, cinnamon, lemon juice, cornstarch and salt; lightly mash together with a potato masher, back of a spoon, or fork.
  • Stir in remaining blueberries; let stand 10 minutes.
  • Make the egg wash. In a small bowl, whisk together egg and cream. Set aside until ready to use.
  • Preheat oven to 425 F.
  • Remove dough from refrigerator, let stand 5 minutes. On a lightly floured work surface, roll one piece of dough into a 1/8-inch thick round. Transfer dough to a pie dish; spoon in blueberry mixture. Brush exposed dough with egg wash.
  • One a lightly floured work surface, roll second piece of dough into a 1/8-inch thick round. Place dough on top of blueberries. Press edges of top and bottom dough together to seal, crimp as desired.
  • Make 2-to-4 small slits on top of pie for venting; lightly press top crust down with hands so that the dough is in contact with the blueberries.
  • Brush dough with remaining egg wash, sprinkle with sugar.
  • Place pie on a baking sheet. Place baking sheet in oven. Bake 20 minutes. Reduce heat to 375, continue baking 25 to 35 minutes, or until filling is bubbly and top crust is golden brown.
  • Remove pan from oven, let cool at least 30 minutes before slicing.

1/2 cup granulated sugar
3 tablespoons cornstarch
2 teaspoons lemon zest plus juice of 1/2 lemon
1 teaspoon vanilla extract
3 sheets frozen puff pastry (from two 17.3-ounce packages, such as Pepperidge Farm), thawed
1 large egg beaten with 2 tablespoons water
2 cups powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • For the filling: Combine the blueberries and granulated sugar in a medium saucepan over medium heat. Bring to a boil, reduce the heat and cook, stirring, until the sugar is melted and the berries have started to burst, a few minutes. Stir together the cornstarch and lemon juice in a small bowl until combined, then add to the blueberry mixture. Add the lemon zest and vanilla and continue to cook until glossy and thickened, 2 to 3 minutes. Remove from the heat and let cool completely. Cover and refrigerate until ready to use.
  • For the pastry: Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment.
  • To make the pies, unfold the thawed pastry and roll out to 10-inch squares if necessary. Cut each square in quarters, making four 5-inch squares from each. Spoon 1 1/2 tablespoons of cooled filling onto one corner of each square. Brush around the squares with the egg wash. Fold the pasty over the filling on each to make a triangle, pressing lightly to remove any air pockets. Crimp the edges shut with a fork. Put the pies on the prepared baking sheets. Brush the tops of the pies with the egg wash. Bake until golden brown, about 20 minutes. Transfer to a cooling rack set over a baking sheet.
  • For the glaze: Mix the powdered sugar, vanilla and 1/3 cup cold water in a bowl until smooth. Drizzle the glaze over the pies and let set until dry.

¾ cup white sugar
⅓ cup all-purpose flour
2 teaspoons grated lemon zest
1 tablespoon lemon juice
5 cups fresh or frozen blueberries
⅔ cup packed brown sugar
¾ cup rolled oats
½ cup all-purpose flour
½ teaspoon ground cinnamon
6 tablespoons butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Press the pie crust into the bottom and up the sides of a 9 inch pie plate. In a large bowl, stir together the sugar and flour. Mix in the lemon zest and lemon juice. Gently stir in the blueberries. Pour into the pie crust.
  • In a medium bowl, stir together the brown sugar, oats, flour and cinnamon. Mix in butter using a fork until crumbly. Spread the crumb topping evenly over the pie filling.
  • Bake for 40 minutes in the preheated oven, or until browned on top. Cool over a wire rack.

The crusty top to this blueberry pie makes it! A very easy recipe and delicious! My former mother in law shared this recipe with me many years ago. She doesn't remember this recipe but I do! It's one of my favorite pies. I will post a picture of finished product next time I bake this pie. Batteries died in camera before I finished...sorry!

1 - unbaked pie shell, i use my 100 year old pie crust recipe, pilsberry pie crust otherwise
1/4 cup(s) butter
1 cup(s) sugar
1 - egg, beaten
3/4 cup(s) all purpose flour
1 teaspoon(s) vanilla extract

Steps:

  • Wash blueberries, drain well; place blueberries in pie shell.
  • Cream butter and sugar until smooth; add egg, flour and vanilla; mix well. This mixture will be stiff. Spread evenly over blueberries. NOTE: To make spreading easier, I put dollops of the this mixture over the top of pie and use the back of a spoon to spread. Dip the spoon in water for easier spreading. Sprinkle top of pie crust with sugar.
  • Bake at 350 degrees for 50 minutes.

This particular blueberry pie is a classic rendition. I like to keep such nostalgic dishes fairly straight forward. The only artist license I took was with the crust. I tweaked my favorite pie crust recipe by incorporating ground almonds and amaretto! The almonds create a slightly more brittle, but exquisitely flaky crust and the amaretto deepens the sweet, nutty flavor. It was a superb crust, if I do say so myself!

1/2 cup ground raw almonds
2 1/4 all-purpose flour
1 teaspoon salt
2 tablespoons sugar
12 tablespoons unsalted butter, chilled and cut into cubes
7 tablespoons shortening, chilled and cut into cubes
2 tablespoons Amaretto
2 -3 tablespoons cold milk
6 cups blueberries
1/2 cup flour
1/2 teaspoon cinnamon
3/4 cup sugar
1 orange, zest of
1 tablespoon orange juice
2 tablespoons butter, cut into cubes
1 egg

Steps:

  • Ground the almonds in the food processor until fine.
  • Add the flour, salt, and sugar. Pulse a few times to mix. Add the COLD butter and shortening cubes and pulse until the mixture resembles peas.
  • Add the amaretto and 1 tablespoon of cold milk. Pulse again until the dough comes together. Add another 1-2 tablespoons of milk if needed. Dump the dough out onto a sheet of plastic wrap.
  • Separate into two equal pieces and flatten into two disks. Wrap each disk in plastic and refrigerate for at least 30 minutes.
  • Meanwhile, mix the blueberries with the following 5 ingredients and set aside.
  • Preheat the oven to 425 degrees F. Move to racks to a lower and middle position.
  • Flour a work surface and roll out one disk of dough in a 12 inch circle. Fold the dough over the rolling pin to transfer it to a 9 inch pie pan. Repair any cracks.
  • Crimp or pinch the edges.
  • Roll out the second disk of dough and cut out shapes with a floured cookie cutter.
  • Pour the berry filling into the pie crust and top with 2 tablespoons of butter cubes. Arrange the dough shapes over the filling. Whisk an egg with 1 tablespoon of water and brush the egg wash over the pie crust.
  • Place the pie on the lower rack and bake for 15 minutes. Lower the heat to 375 degrees F, and move the pie up to the middle rack. Bake another 35-45 minutes-until the crust is golden brown and the blueberry filling in bubbling. If the pie crust browns too quickly, cover it with foil.
  • Once out of the oven, resist the urge to cut into the pie and have a slice. The pie needs to cool to room temperature for the filling to thicken up! It usually takes about 2 hours!

So good, so quick, so easy! I came up with this when I was still single and satisfied my sweet cravings on much more of a regular basis! You need to tweak it to your liking--you need the perfect crust, and the right granola for sure! After that, all you need is to decide on what flavor you're craving and you've got your very own slice of history! Mmmm!

1 (12 inch) prepared pizza crust (*medium thick*)
1 (540 ml) can mixed berry pie filling
3/4-1 cup sweetened granola cereal, clusters
milk
icing sugar
vanilla

Steps:

  • Preheat oven to 350°F.
  • Place crust on pizza pan and bake until *almost* perfect (bottom should be getting firm).
  • Remove from oven, and poke it with a fork all over to prevent bubbling.
  • Top with pie filling of your choice (mixed berry, blueberry and raspberry are my favorites!) about 1-inch from the edge.
  • Sprinkle granola over the top quite generously (but don't over do it!) breaking up really big chunks with your fingers (but still leaving it a bit chunky!).
  • Prepare the icing accordingly so that you have a "just pour able" consistency (I make about 1/2 cup!) and drizzle as much as you would like over the top to the edges.
  • Return pizza to the oven and wait for your creation to perfect itself (just until the filling is heated through).
  • Remove from oven, slice into pie or square slices, and serve while hot (I always drizzle a little more icing over the top once it comes out of the oven, but that's just me!).

½ cup light brown sugar
