ONE POT BACON FRIED RICE
Quick and easy bacon fried rice recipe, homemade with simple ingredients in one pot over stovetop. Loaded with crispy bacon, scrambled eggs, frozen vegetables. This 30 minute meal is better than Chinese takeout.

Steps:
- Heat a nonstick pot over medium high heat.
- Add bacon and cook for a few minutes until crisp. Remove bacon from pot and keep aside. Crumble it when it cools down a bit. Don't throw away the bacon fat.
- In the same pot with bacon fat, add sesame oil, onion, garlic, frozen vegetables and saute for a few minutes until they are tender.
- Push these vegetables to one side of the pot and add eggs.
- Scramble them until fully cooked.
- Mix them together with the veggies.
- Add boiled rice, cooked bacon, soy sauce, Sriracha sauce, salt, pepper and mix everything together.
- Garnish with some more cooked bacon and lots of green onions. Enjoy!

RICE AND GRAVY
Steps:
- Place the peas in a medium saucepan and cover with cold water. Add 1 tablespoon of the bacon grease and the salt. Bring to a simmer and cook the peas until tender, about 1 hour.
- Remove from the heat, drain and set aside.
- In a medium cast-iron pan set over medium heat, add the remaining 1 tablespoon bacon grease, the flour and some salt and pepper. Constantly stir the flour until it just starts to turn deep golden brown and resembles peanut butter. Add 2 1/4 cups water, and continue to stir, scraping the browned bits from the bottom of the pot. Continue to stir until thick and bubbly.
- Add the cooked peas to the gravy and reduce the heat to low. Cook for 10 more minutes, then add a little more flour or water if needed to achieve the desired consistency. Add salt to taste and serve over the rice.

- Cook bacon in large skillet until crispy. Remove cooked bacon to paper towels to absorb grease. When cool, crumble bacon into small pieces. Set aside.
- Do NOT clean skillet. Leave 2 Tablespoons bacon grease in skillet. Discard the rest.
- In separate bowl or container, whisk together milk, flour, salt and pepper, until lump-free. Pour the milk/flour mixture into skillet with remaining bacon grease. Add crumbled bacon pieces. Heat mixture on medium (whisking/stirring constantly) until it comes to a boil; reduce heat a bit, and continue cooking and stirring, until gravy has thickened (5-6 minutes). Give it a taste test.
- Add additional salt and pepper, to taste (I ALWAYS add more). Once gravy has thickened, add 1-2 Tablespoons cold butter. Stir until butter is melted, incorporated into gravy, and mixture is heated through.
- Slice warm biscuits in half horizontally. Place biscuit halves onto serving plate. Spoon hot gravy over each half. Serve and enjoy!

- Cut beef into about one inch cubes.
- Place a medium sized sauce pot on medium heat.
- Add bacon grease or cooking oil.
- Add beef.
- Add onions.
- Stir the meat and onions until the meat is lightly brown.
- Add beef broth and bring to a rolling boil.
- Cover, reduce heat to medium-low and simmer for 1 hour or until beef is tender.
- In a small bowl, mix Cornstarch with cold water, stir well.
- Slowly add the cornstarch to the beef and broth, stirring constantly.

- Preheat oven to 350° F. Grease a 2-quart baking dish; set aside.
- In a large skillet, cook bacon over medium heat until crisp, about 7-8 minutes. Use a slotted spoon to remove bacon to a paper towel-lined plate, reserving the drippings in the pan. Melt butter in the same skillet over medium-high heat. Add onion and cook, stirring, until the onion softens, 3 to 4 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds. Stir in the tomato paste, kosher salt, sugar and pepper. Cook for 1 more minute.

- Preheat a large skillet to medium-hi. Place 6 slices of bacon in the skillet and cook until just under crispy.
- Remove bacon from skillet and drain; set aside. Discard all but 2 tablespoons of the bacon grease.
- Add flour to grease, and whisk together. Cook for about a minute without burning the flour.
- Add milk; whisk together.
- Heat until bubbling. Simmer for 5-10 minutes, until sauce starts to thicken.

- Cut bacon into half-inch pieces with kitchen scissors and add to a cold pan. Heat the pan to medium heat and cook bacon, stirring frequently, until bacon is crisp and fat is rendered. Remove bacon to a paper-towel-lined plate and leave the grease in the pan.
- Add flour to the pan with the bacon grease and cook over medium heat, stirring constantly, for several minutes to create a roux. Scrape up any bits of bacon that may have stuck to the bottom of the pan.

SOUTHERN-STYLE SPANISH RICE WITH BACON

- Gather the ingredients.
- In a large skillet, fry bacon until cooked, but not crisp, over medium heat. Remove from skillet, drain on paper towels, and dice and set aside.
- Pour the bacon fat into a measuring cup; if there is less than 1/4 cup add enough butter to make 1/4 cup of fat. (Add a teaspoon of butter at a time, stirring-the hot bacon fat will melt the butter.)
- Pour the melted fat back into the skillet, and add the onion and rice. Sauté over medium heat, stirring constantly, until rice is lightly browned and onion is tender.
- Remove from heat; stir in diced bacon, tomatoes with juice, water, salt, pepper, and chili powder. Return to the heat, cover, and simmer until rice is tender and liquid is almost all absorbed-about 20 minutes.
- Add cheese, lower the heat and stir until cheese is melted.
- Serve hot and enjoy!
