2 medium zucchini
2 egg whites or 1 egg (whisked)
1/2 cup almond flour (or almond meal)
1/2 cup grated parmesan cheese*
2 teaspoons Italian seasoning
1 teaspoon sea salt

Steps:

  • Preheat oven to 425°F. Coat a baking sheet with cooking spray or line with parchment paper. In a small bowl, mix together almond flour, parmesan cheese, Italian seasoning and salt.
  • Slice each zucchini in half lengthwise and then slice each half into two 2 pieces widthwise. Slice each zucchini piece into 4-6 fries, trying to keep them all around the same size.
  • Dip a zucchini piece into the egg wash and shake any excess off before dredging into the almond flour parmesan mixture. Place coated zucchini fry onto prepared baking sheet and repeat with remaining zucchini pieces.
  • Place zucchini in the preheated oven and bake for 10 minutes. Flip and return to the oven. Bake for another 10 minutes, or until zucchini fries are crisp and golden brown. Remove from oven and serve immediately. They're delicious on their own, but feel free to pair with your favorite dipping sauce.

Steps:

  • Preheat oven to 425f degrees and line a baking sheet with parchment paper.
  • Cut zucchini into thick slices and pat dry with a paper towel.
  • In a large mixing bowl, mix almond meal with seasonings.
  • In a separate shallow bowl crack eggs and whisk together.

Steps:

  • Pre-heat oven to 425F. Line a baking sheet with aluminum foil or parchment paper and lightly grease with oil. Set aside.
  • Combine 2 eggs in a small shallow bowl and set aside. Combine the breadcrumbs and parmesan cheese in another bowl and set aside. Prepare zucchini by trimming the ends and cutting into 1/2 inch strips or slices.

1/2 cup Panko breadcrumbs
1/3 cup white whole wheat flour (or all-purpose flour)
1/4 cup finely grated Parmesan cheese
1/2 teaspoon kosher salt
1/4 teaspoon onion powder
1/4 teaspoon ground black pepper
2 large egg whites
Nonstick cooking spray (olive oil or canola oil flavored)
1/2 cup non-fat plain Greek yogurt
2 tablespoons chopped fresh basil (or 1/2 teaspoon dried basil)
1 clove minced garlic (about 1 teaspoon)
1/4 teaspoon Worcestershire sauce
1/8 teaspoon kosher salt

Steps:

  • Make the fries: Position racks in the center of your oven and preheat the oven to 425 degrees F. Coat a large, rimmed baking sheet with nonstick spray.
  • Spread the sliced zucchini onto paper towels or a damp kitchen towel. Lightly pat dry. Let rest on the towels while you prepare the coating.
  • In wide, shallow dish (a pie dish works well) combine the Panko, flour, Parmesan, salt, onion powder, and pepper. In a separate bowl that is large enough to coat the zucchini, briskly whisk the egg whites until lightly foamy.

Steps:

  • Preheat oven to 425F. To cut zucchini into sticks, begin by trimming off the ends of each squash. Cut zucchini in half lengthwise, then place each half cut side down on a cutting board. Make long, thin slices down the length of the zucchini, about ½" thick. Next, cut each stick into fries about 3" long. Size will vary depending on how big the squash is. The important thing is that they're mostly uniform in shape and size.
  • Assemble breading station. Place rice flour in a medium bowl. Place beaten egg whites or whole eggs in a small shallow dish. Finally, place panko (or other breadcrumbs) in a medium bowl. Add parmesan and kosher salt to the panko, then mix to combine.
  • Begin my dredging the zucchini sticks in rice flour on all sides. Transfer zucchini to egg wash, working in batches so as not to crowd the bowl. Make sure zucchini is evenly coated in egg before transferring to the panko.
  • Finally, toss zucchini sticks to ensure panko is on all sides. Place breaded zucchini fries on a wire rack placed on top of a rimmed baking sheet. Continue until all zucchini is breaded.
  • When ready to bake, cook zucchini fries for 20-24 minutes, or until golden brown and crispy on all sides. Immediately sprinkle zucchini with a generous pinch of maldon sea salt. Serve immediately with marinara.

1/4 cup grated Parmesan cheese optional
2 eggs
2 tablespoons olive oil

  • Pre-heat oven to 425F. Line a baking sheet with aluminum foil or parchment paper and lightly grease with oil. Set aside.

4 medium zucchini
1 cup dry bread crumbs (use GF breadcrumbs to make these GF)*
¼ cup freshly grated Parmesan or Pecorino cheese (omit to make these dairy-free)
1 teaspoon garlic powder
½ teaspoon ground paprika
⅛ teaspoon dried oregano
⅛ teaspoon crushed red pepper
1 teaspoon sea salt
2 large eggs**
Unrefined, cold-pressed extra virgin olive oil spray

Steps:

  • Preheat the oven to 425 degrees. Line 2 baking sheets with parchment paper and brush parchment with olive oil.
  • To cut your zucchini into fries, cut each zucchini in half crosswise. Cut each half lengthwise into halves or in thirds, and each one of those pieces into 4 sticks or into ½-inch wide sticks.
  • In a shallow dish, combine breadcrumbs, Parmesan, garlic powder, paprika, oregano, red pepper and salt. In a separate shallow dish beat eggs very well.
  • One by one, dip each zucchini stick into the egg mixture, then into the bread crumb mixture. Shake to remove any excess and place on the baking sheet.
  • Once all are coated with breadcrumb mixture and on the prepared baking sheet, spray with olive oil.
  • Bake for 15-20 minutes, or until golden and crispy on the outside and soft on the inside, flipping over halfway to ensure browning on both sides. Serve plain or with marinara sauce or Ranch dressing.

1/2 cup all-purpose flour
Kosher salt
2 large eggs
2 1/2 cups panko breadcrumbs (see Cook's Note)
1/2 cup finely grated Parmesan
1 pound zucchini (2 to 3 small-to-medium zucchini), cut into 3-inch-by-1/4-inch sticks

Steps:

  • Adjust 2 oven racks to the top and bottom thirds of the oven and preheat to 425 degrees F. Put the wire racks in the baking sheets and coat each generously with cooking spray.
  • Combine the flour and 3/4 teaspoon salt in a large re-sealable plastic bag. Combine the eggs and 3/4 teaspoon salt in another large plastic bag; combine the breadcrumbs, Parmesan and 3/4 teaspoon salt in a third large plastic bag.
  • Add about a half of the zucchini sticks to the bag with the flour and use a combination of your hands and shaking the bag to coat the zucchini. Remove the zucchini and shake off any excess flour. Transfer to the egg wash and repeat until coated. (It's less messy if you use only one hand for the dry ingredients and the other for the wet.) Let any excess egg drip off before transferring to the breadcrumb mixture; repeat until fully coated (you'll still see some green and white of the zucchini peeking through the breading). Transfer to the prepared baking sheets and coat the breaded zucchini generously with cooking spray (there's no need to turn them). Repeat with the remaining zucchini.
  • Bake, rotating the baking sheets from top to bottom about halfway through, until golden brown and tender, 25 to 30 minutes. Sprinkle with a little salt and serve warm with your favorite dipping sauces.
