Fast, easy and delicious! You can make this recipe with different kinds of noodles and vegetables and also you can add more or less hot peppers (or Tabasco!) if you enjoy spicy food!

3 cups rotini pasta or 3 cups other large pasta
12 ounces lean ground beef
1/2 cup chopped onion
1 cup grated carrot
1 (24 ounce) jar prepared pasta sauce
1/2 teaspoon italian seasoning (oregano or basil)
1/2 teaspoon hot pepper flakes (optional)
1 (17 ounce) container light ricotta cheese
1 egg
1 cup grated part-skim mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • In a large pot of boiling water, cook pasta until tender but firm; drain.
  • In a large skillet, cook beef over medium-high heat until browned. Add onions and carrots; cook for 3 to 4 minutes. Stir in pasta sauce and Italian seasoning (oregano or basil). Remove from heat and set aside.
  • In a bowl, combine ricotta cheese, egg and 1/2 cup of the mozzarella cheese. Set aside.
  • To Assemble: Spread half of the meat mixture on bottom of greased 13x9-inch baking dish. Top with all of the pasta. Spread all of the cheese mixture over pasta. Top with remaining meat mixture. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
  • Bake in preheated oven, uncovered for 35 to 45 minutes or until bubbling.
  • Let stand for 10 minutes before serving.

1 (12 ounce) package breakfast sausage
1 (32 ounce) jar spaghetti sauce
1 (16 ounce) package cottage cheese
1 (8 ounce) container sour cream
2 teaspoons dried parsley
1 (16 ounce) package lasagna noodles
4 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup water

Steps:

  • Cook sausage in a large skillet over medium heat. Drain excess fat. Reduce heat to low, stir in the jar of spaghetti sauce, and heat through. Set aside.
  • In a large bowl, combine cottage cheese, sour cream. Stir in dried parsley to taste.
  • Spoon 1/2 of the meat sauce into the bottom of a 9x13 inch baking dish. Place 1/2 of the uncooked noodles over the sauce, then 1/2 of the cottage cheese mixture, 1 cup of the mozzarella cheese, and 1/4 cup grated Parmesan cheese. Repeat layers. Top with remaining 2 cups of mozzarella cheese. Pour water around the outside edge of pan. Cover tightly with aluminum foil.
  • Bake in a preheated 350 degree F(175 degree C) oven for one hour. Uncover. Continue baking for an additional 20 minutes, or until bubbly and browned. Remove from oven, and let stand 15 to 20 minutes before serving.

Because it's too much trouble messing with lasagna noodles and making those careful layers. The quality of the chosen sauce is key. A friend of mine couldn't figure out how she could make the same recipe I did but mine was better until we realized that she was buying a cheap, minimally seasoned spaghetti sauce. Use more or less sauce according to how wet your family prefers lasagna. Lazy Lasagna is easy to halve or double, just adjust the cooking time for the smaller or larger pan.

1 lb pasta shells or 1 lb macaroni
1 lb ground beef or 1 lb bulk Italian sausage, browned and drained
1 lb ricotta cheese
1 lb pre-shredded mozzarella cheese
1/2 cup parmesan cheese
1 -2 quart spaghetti sauce (I prefer Classico)
olive oil

Steps:

  • Cook pasta a bit less than fully done.
  • Grease a 9x13 pan with olive oil.
  • Layer 1/2 the amount each of pasta, ground beef, ricotta, parmesan, spaghetti sauce, and mozzarella in that order.
  • Repeat except for the mozzarella.
  • Draw a wooden spoon through the layers in an S-shaped pattern to mesh the layers without actually stirring them together.
  • Top with the remaining mozzarella.
  • Bake at 350F for 30-45 minutes or until the cheese is as brown as you like it and everything is bubbling hot.
  • Note -- steamed and drained zucchini or very well-drained, frozen spinach is a good addition.
  • Note -- Can substitute ground turkey or chunks of cooked chicken/turkey for the ground beef if desired.

1/2 pound pork sausage (ground)
1/2 pound ground beef (lean-90%)
3/4 cup onion (chopped)
1.5 tablespoon garlic (minced)
1/4 teaspoon salt
1/4 teaspoon pepper

1/2 teaspoon Italian seasoning
2 cups beef stock or broth
2 cups water
3 cups pasta sauce (jarred)
1/4 cup basil (fresh and diced)
1 cup mushrooms (sliced)

1 cup mozzarella cheese (shredded)
16 ounces pasta (dried-skinny lasagna noodles)

Steps:

  • Turn Ninja Foodi on saute-hi.
  • Once pot is hot, add sausage, ground beef and onion and saute until browned.
  • Add garlic and mushrooms and stir.
  • Add seasoning and pasta sauce. Stir well. Be sure to use your spoon or spatula to scrape the bottom of the pot to remove the browned bits of meat.
  • Add broth and water-do not stir.
  • Add pasta by breaking in half or thirds and stacking in a criss cross pattern.
  • Set Ninja Foodi to Pressure cook function on high for 3 minutes, close the lid and move valve to seal position.
  • If you are using different pasta follow these instructions: When cooking pasta in the Ninja Foodi, feel free to modify the pasta from the recipe. If you like bowties- go for it. If you like penne- go for it. The trick is to look at the cooking times on the box. Whatever the box says- cut it in half and subtract 2 minutes. So, if the box says to cook for 10 minutes, you will cut that in half (5) and subtract 2. Altogether you would cook for 3 minutes.
  • When timer beeps, quick release pressure and then remove lid.
  • Add in ricotta cheese and stir.
  • Add in Parmesan cheese and stir.
  • Add in basil and stir.
  • Add in mozzarella cheese and stir.

12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls

1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. 1 (24oz) jar of marinara or pasta sauce
2 cups shredded mozzarella ((heaping))
1/2 cup shredded parmesan ((optional))

Steps:

  • Preheat your oven to 400 degrees and grease a 9x13 baking dish.
  • Spread a thin layer of your marinara sauce onto the bottom of the pan (about 3/4 cup).
  • Arrange half of the frozen ravioli in a single layer over the sauce (should be about 12 of them).
  • Top with half of the remaining sauce and half of the mozzarella.
  • Repeat the layers starting with what's left of the ravioli. Finish by topping with the remaining sauce and cheese. Sprinkle with parmesan if you'd like.

16 ounces/1 pound lasagna noodles (broken into smaller pieces)
24 ounces spaghetti sauce
24 ounces water (just fill the sauce jar with water)
20 ounce bag of frozen Italian meatballs (about 40 small meatballs)
16 ounces ricotta cheese
16 ounces/4 cups shredded mozzarella cheese (divided in half)

Steps:

  • Add everything except 2 cups of shredded mozzarella to a large broiler safe pot or dutch oven. We used a 6.5 quart enameled cast iron dutch oven.
  • Stir everything together, it will be watery, don't worry. Sprinkle remaining cheese over top.
  • Cover and cook at 375 degrees for 45 minutes. If your meatballs are frozen, you may need to add an additional ten minutes of cook time. Remove cover and turn on broiler until cheese browns and crisps a little. Watch closely so it doesn't burn!
  • Remove from oven and stir. It will seem a little watery at first, but let it rest 3 - 5 minutes and it will be perfect. My kids devoured the entire pot for lunch!

I'm including the ingredients for a "lazy" marinara sauce in case you don't have any jars of storebought in the pantry.

  • Brown the beef with the optional onion, optional garlic, herbs, and salt and pepper in a large, ovenproof skillet (I use one that's made of castiron). When the meat is thoroughly cooked -- it will take 8 to 10 minutes -- drain off any fat and take everything out of the pan. Now put the still-frozen ravioli into the pan, breaking them up if they are clumped. Spread the ground beef mixture evenly over the ravioli, and ladle the spaghetti sauce evenly over the ground beef mixture. Over medium heat, without stirring, cook until the ravioli is heated through and beginning to brown on the bottom -- about 10 minutes.
  • Take the skillet off the heat, lay the provolone slices over the ground beef mixture, and sprinkle the whole thing with the Parmesan. Bake for 10 minutes, or until the cheese is melted. Serve hot.

25 ounce frozen cheese ravioli (square shaped (no need to thaw))
1 1/2 cups shredded mozzarella cheese (divided)
1/2 teaspoon Italian seasoning (***optional***)
1/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning (or dried oregano)

Steps:

  • Preheat the oven to 350F degrees. Optional*** coat interior of pan with non-stick cooking spray.
  • In a medium skillet, crumble and brown the beef over medium heat until completely browned. Drain off the excess fat. Mix in seasoning and garlic powder after draining the meat.
  • Reserve ¾ cup of the spaghetti sauce; set aside. Add the remaining spaghetti sauce to the skillet with the browned meat. Stir well then cover and simmer over medium-low heat for 10 minutes, stirring occasionally.
  • Spread ¼ cup of the reserved spaghetti sauce into the bottom of a 9x13 inch glass baking dish. Arrange one third of the frozen ravioli in a single layer in the pan.
  • Top the ravioli in the pan with half of the ground beef mixture, then sprinkle with 1/2 cup of the shredded cheese.
  • Place another 1/3 of the frozen ravioli over the meat sauce and cheese. Top with the rest of the meat and another third of the cheese.
  • Place the final 1/3 of the frozen ravioli on top of the casserole. Top with the remaining ½ cup of the spaghetti sauce. Sprinkle with the remaining cheese.
  • Cover the casserole with aluminum foil and bake at 350 degrees F for 20 minutes-30 minutes, remove foil and bake another 10 minutes until the cheese is completely melted and beginning to bubble around the edges.
  • Allow to rest for 15 minutes before slicing out servings.

1 pound lean ground beef
½ cup diced onion
1 teaspoon minced garlic (divided)
1 teaspoon Italian Seasoning

25 ounces marinara sauce ((I like Mezzetta's Marinara))
¼ cup water
1 cup part-skim ricotta cheese
1 egg
3 cups shredded part-skim mozzarella cheese (divided)
½ cup grated Parmesan cheese (divided)
1 teaspoon dried parsley flakes (or 1 tablespoon fresh)
fresh basil (optional for garnish)

Steps:

  • Cook the pasta one minute shy of the package directions. Drain well and set aside.
  • Meanwhile, in a large, deep skillet or Dutch oven, cook beef, onion, and ½ teaspoon garlic over medium heat until meat is no longer pink. Drain the grease and return the pan to the heat. Sprinkle with Italian Seasoning, salt and ¼ teaspoon pepper and cook, stirring, for a minute or two. Add the marinara and water and let it simmer for a couple of minutes until warmed through. Stir in the cooked pasta, remove from the heat and set aside.
  • Preheat oven to 350 degrees F. Coat a 13- x 9-inch baking dish with non-stick cooking spray.
  • Add ricotta and egg to a large mixing bowl and stir until smooth. Add half of the shredded mozzarella, remaining garlic, half of the Parmesan cheese, parsley and remaining pepper.
  • Add half of the beef/pasta mixture to the prepared baking dish. Spoon dollops of the ricotta mixture evenly over the top. Top with remaining beef/pasta mixture, spreading it out with the back of a spoon to cover the creamy layer.
  • Cover with foil and bake for 30 minutes. Remove foil and sprinkle with remaining mozzarella and Parmesan cheese. Bake, uncovered, 5 to 10 minutes longer or until bubbly and cheese is melted. Garnish with fresh basil and let stand for 5 minutes before serving.

6 cups Bolognese sauce, recipe follows
3 cups Bechamel sauce, recipe follows
1 pound freshly grated mozzarella
Freshly grated Parmigiano Reggiano cheese, for sprinkling
2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
1 large carrot, finely chopped
1 onion, finely chopped
1 large celery stalk, finely chopped
2 dried chili peppers, crushed
Sprig fresh rosemary
1/2 pound ground beef
1/2 pound ground pork
1 cup white wine
3 cups tomato sauce or La Salsa di 5 Minuti, recipe follows
3 basil leaves, torn
Salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 clove garlic, finely chopped
Dried chili peppers, crushed
1 (28-ounce) can peeled plum tomatoes, pureed
Salt
3 fresh basil leaves, torn
5 tablespoons butter
5 tablespoons flour
4 1/2 cups milk

Steps:

  • To assemble:
  • Preheat the oven to 400 degrees F. Cover the bottom of a deep baking dish with a layer of Bolognese sauce. Lay out the uncooked pasta sheets over the sauce until they cover the baking dish entirely. Cover the pasta with another generous layer of Bolognese sauce. The liquid from the sauce will cook the dried pasta so be sure to add enough sauce. Drizzle the bechamel sauce and sprinkle the mozzarella on top, until both are distributed evenly. Add another layer of dried pasta, laying the sheets in the opposite direction. Repeat the process of adding sauces, mozzarella, and pasta for another 2 to 3 layers or until two-thirds of the baking dish's depth is filled. Top off the last layer of sauces and mozzarella with a generous sprinkle of the Parmigiano cheese.
  • Place the pan in oven for approximately 40 minutes and let rest for 20 minutes before serving.
  • In a hot saucepan, melt the unsalted butter with the olive oil, and add the carrots, onion, celery, and chili pepper. Cook the ingredients over medium heat, until they are soft. Add a sprig of rosemary. Add the ground beef and pork, and cook until golden brown. Remove the rosemary sprig, and add the white wine. Let reduce. Add the tomato sauce or La Salsa di 5 Minuti, and let simmer on low heat for 1 hour. Before serving, add basil leaves and salt to season. Serve immediately.
  • Salsa di 5 Minuti:
  • Heat olive oil in a saucepan and add onion, garlic, and chili peppers. Gently fry ingredients together. Add pureed plum tomatoes to saucepan. Simmer on low to medium heat for 10 minutes.
  • Season with salt to taste. Add basil leaves at the very end.
  • Bechamel:
  • In a saucepan, heat up the milk, and bring to a gentle simmer. In another saucepan, melt the butter and immediately add the flour.
  • Lower the heat, and mix until the butter has absorbed all the flour and is the consistency of thick dough. Make sure the butter-flour mixture does not burn or brown.
  • Remove the saucepan from the heat, and whisk in a couple of ladles of heated milk into the butter-flour mixture. Whisk until the flour has absorbed all of the milk. Put the saucepan back on the burner over medium heat, and whisk in the remainder of the milk.
  • Continue whisking until the sauce thickens and becomes a creamy velvety consistency.

4 cups Mafalda pasta (mini lasagna noodles) (1 pound)
3 cups water
Grated Parmesan (optional)
Shredded Mozzarella (optional)

Steps:

  • Using the Sauté function on your instant pot, brown ground beef and onion. Drain excess grease, and scrape off any bits off the bottom of the pan to prevent a burn error.
  • Return drained beef and onions to the instant pot insert. Stir in cream cheese and spaghetti sauce until creamy.
  • Put the uncooked pasta on top of the sauce. Do not stir.
  • Add just enough water to submerge the noodles, around 3 cups. Do not stir!
  • Cover and seal the instant pot. Cook on high pressure for 4 minutes. Release pressure following Quick Pressure Release method.

1 1/2 pounds ground lamb
A couple sprigs rosemary, leaves picked and finely chopped
1 tablespoon fresh oregano or marjoram, finely chopped or 1 teaspoon dried

Salt and freshly ground black pepper
1 onion, finely chopped
1 carrot, peeled and finely chopped or grated
4 large cloves garlic, grated or finely chopped
1/4 cup tomato paste
2 cups chicken stock
1 cup dry white wine
Salt
1 pound wavy edge lasagna noodles, broken into large, irregular pieces
3 tablespoons butter
2 rounded tablespoons all-purpose flour
2 1/2 cups milk
Freshly ground black pepper
Freshly grated nutmeg
2 cups fresh ricotta cheese
A generous handful, freshly chopped mint and/or parsley (about 1/4 to 1/3 cup)
2 (10-ounce) boxes organic, chopped spinach, defrosted and drained
1 cup shredded or freshly grated Parmigiano-Reggiano cheese

Steps:

  • For the ragu: Heat 2 tablespoons extra-virgin olive oil in a Dutch oven over medium-high heat. When the oil smokes, pat the ground lamb dry and add to pan, brown to caramelize the meat, season with rosemary, marjoram, cloves, salt, and pepper. Once the meat has browned, add the onion, carrot, garlic and cook to soften 10 minutes more, stirring frequently. Stir in tomato paste, cook 1 minute or until fragrant. Stir in stock then wine, reduce heat to low and gently simmer.
  • In salted boiling water, undercook the pasta by 2 minutes from package directions. Reserve a cup of starchy pasta liquid.
  • Meanwhile, heat the butter in a saucepot over medium heat, whisk in 2 tablespoons flour, 1 to 2 minutes, whisk in the milk and simmer to thicken. Season the bechamel sauce with salt, pepper, and nutmeg, to taste.
  • Drain the pasta and add back to the pasta pot. Toss the pasta with the lamb ragu and some of the reserved starchy cooking water to loosen. Pour the pasta into a large casserole. Scatter the spinach around on top of pasta.
  • Combine the ricotta with mint and/or parsley, dot the pasta with ricotta evenly around the casserole. Pour the bechamel sauce in even layer around the casserole and top with grated cheese. Cool and store for make-ahead meal. Reheat in 350 degree F oven, covered, for 30 minutes then raise the heat to 425 degrees F and bake uncovered, until brown and bubbly, 15 to 20 minutes.
  • To serve immediately, transfer the casserole to a preheated 425 degree F oven and bake about 15 to 20 minutes, to brown.
