Baby bok choy are so crisp & good. I made up this recipes the other evening for supper as a side dish to serve with chicken. The secret is to add the greens for th last minute only. If you like your green beans well done steam them first I like mine still crisp so 7 minutes stir fry is just right

2 baby bok choy
1 medium onion, coarsely chopped (approx 1 cup)
1 cup fresh green beans, ends off cut in 1 inch pieces
salt
pepper
light vegetable oil cooking spray

Steps:

  • Cut the white part of the bok choy into 1-inch pieces and coarsely chop the greens, keep separate.
  • Heat non stick skillet lightly sprayed with veggie oil.
  • Stir fry the bok choy white stems, onions and green beans, over medium high heat for approx 6-7 minutes.
  • Add bok choy greens and stir fry 1 minute longer until the greens are just wilted and heated through.
  • Enjoy.

When you see bok choy you might think stir-fry, but we here treat it like a hearty green, wilting it and softening it in bacon drippings. Then we add big, creamy butter beans and a splash of vinegar. Serve it right out of the pan or at warm room temperature. And if you have it on hand...stir fresh corn kernels in with the beans.

4 slices bacon, cut into 1/4-inch pieces (about 4 ounces)
1 pound baby bok choy (about 4 heads)
1/2 onion, thinly sliced
One 15-ounce can butter beans, drained and rinsed
1 tablespoon white balsamic vinegar
Kosher salt

Steps:

  • Add the bacon to a large skillet and cook over medium heat, stirring occasionally, until brown and crisp, about 6 minutes. While the bacon cooks, cut the stems from the bok choy into 1-inch pieces and the leafy tops into 3-inch pieces.
  • Add the onion to the bacon and cook, stirring, until softened slightly, 4 to 5 minutes. Toss in the beans and stir until heated through, about 2 minutes. Transfer the vegetables with a slotted spoon to a bowl, leaving the fat in the pan.
  • Add the bok choy stems to the pan, increase the heat to medium-high and cook, stirring, until slightly softened, about 2 minutes. Add the bok choy leaves and cook, stirring, until wilted, about 1 minute. Remove the pan from the heat and stir in the vinegar. Return the onion-bean mixture back to the pan and season with salt. Serve warm or at room temperature.

1 tablespoon hoisin sauce
1 tablespoon soy sauce
2 teaspoons sesame oil

vegetable oil
1 medium sweet onion, thinly sliced
1 1/2 cups sliced red bell peppers
1 1/2 cups sliced green bell peppers
2 cups sugar snap peas
2 baby bok choy
1 1/2 cups dried shiitake mushrooms, reconstituted and drained
6 ounces cooked pork tenderloin, thinly sliced
green onion, sliced for garnish

Steps:

  • In a small dish, whisk together the sauce ingredients and set aside.
  • In a large wok or skillet heat add a small amount of vegetable oil and heat over medium high heat. When a drop of water sizzles in the pan add the onions and cook until lightly browned.
  • Stir in the peppers and peas. Cut the baby bok choy in fourths lengthwise and then in 1 inch lengths. Add to wok and stir-fry until the bok choy begins to turn dark green, about 3 minutes. Add drained mushrooms, sliced pork if using and sauce. Cook just until warmed through.

2 tablespoons grapeseed oil
1 medium red onion, thinly sliced
1 red bell pepper, julienned
1 1/2 cups green beans, ends trimmed, cut into 2 to 3-inch pieces
2 cups cremini mushrooms, wiped clean, halved and sliced
3 baby bok choy, sliced into 1/2-inch pieces
3 cloves garlic, thinly sliced
1 tablespoon soy sauce
2 teaspoons fish sauce

  • In a wok or large saute pan, add the grapeseed oil and when almost smoking, add the onions and bell peppers. Saute, stirring constantly, for 2 minutes. Add the green beans and mushrooms and cook for 2 minutes more.

1 teaspoon Sriracha, sambal oelek or other Asian chile sauce
1 teaspoon sugar
1/4 cup vegetable oil
6 ounces Canadian bacon, cut into 1/2-inch pieces
10 ounces shiitake mushrooms, stemmed and sliced
Kosher salt
1 red bell pepper, chopped
1 red onion, chopped
2 cloves garlic, minced
6 heads baby bok choy, trimmed and chopped
4 cups cooked brown rice, for serving

Steps:

  • Combine the soy sauce, Sriracha and sugar in a bowl; set aside. Meanwhile, heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the Canadian bacon; cook, stirring, until crisp and browned around the edges, about 4 minutes. Transfer to a bowl.
  • Add 1 more tablespoon vegetable oil to the skillet, then add the mushrooms and 1/4 teaspoon salt. Cook, stirring occasionally, until the mushrooms start browning, 4 minutes. 400g bok choy of your choice
5 cloves garlic, coarsely chopped
3 slices ginger
1/2 tsp salt
1 tsp sugar
1/4 tsp ground white pepper
1 tbsp oyster sauce
1 tsp light soy sauce
1/2 tsp sesame oil
1 tbsp water

Steps:

  • Rinse the baby bok choy with water to remove all the dirt and sand. Drain.
  • Heat some oil in the wok. Saute the coarsely chopped garlic and ginger over low to medium heat until fragrant.
  • Add the bok choy to stir-fry over high heat.
  • Season with salt, sugar, and white pepper.
  • Add some water if it is too dry, 1-2 tbsp at a time,
  • Stir-fry until the bok choy is tender-crisp.
  • Bring all the Ingredients in B to a boil in a small pan to thicken it. Set aside.
  • Drizzle the sauce on the bok choy. Serve.
  • Separate the leaves from the stem.
  • Cut the stem into short sections on a bias.
  • Stir fry the stem and the leaves separately.
  • When both are tender and still crisp, combine both in the wok, season with salt, sugar, and pepper.
  • Transfer to the serving plate.

Steps:

  • Trim and discard the rough bottoms from the baby bok choy. Separate the leaves, rinse, and pat dry.
  • In a small bowl, combine the soy sauce, rice wine, and sugar. Set aside.
  • Heat a wok or large skillet over medium-high heat until a bead of water sizzles and evaporates on contact. Add the peanut oil and swirl to coat the bottom and sides. 400 g rump steak, thinly sliced
2 garlic cloves, crushed
salt & freshly ground black pepper
fresh ginger, grated, to taste
2 tablespoons soy sauce, low sodium
1 tablespoon medium-dry sherry
2 tablespoons peanut oil
2 medium yellow onions, sliced into quarters and then each quarter halved
2 mandarin oranges, juice of
1/2 cup chicken stock
3 cups baby bok choy, halved and sliced
2 mandarin oranges, peeled and broken into segments
20 snow peas

Steps:

  • Slice the steak into thin strips and place in a bowl. Add the crushed garlic and season to taste with salt, freshly ground black pepper and grated fresh ginger. Cover the meat with soy sauce. Add the dry cooking sherry. Stir together, cover and place in the fridge, for several hours or preferably overnight. The longer the meat marinates the better.
  • Heat a little of the oil in a non-stick wok or large non-stick sauté pan.
  • Fry the onion, until it begins to soften, remove and set aside.
  • Add the rest of the oil to the wok, and on a very high heat, keeping the beef strips moving constantly, fry the meat, so that it is browned on all sides and the juices are sealed inches.
  • Slightly lower the heat and return the onion to the pan.
  • Add the mandarin juice.
  • Cook down for a few minutes until the liquid begins to reduces.
  • Stirring constantly, slowly add the chicken stock, a little at a time, and continue to cook down to reduce the liquid.
  • Once the liquid has reduced to almost nothing (no more than say a tablespoon), add the bok choy and the mandarin segments.
  • Turn the heat down and, still stirring and tossing gently, cook until the vegetables are cooked as you like them. Remember: less is best!
  • Still tossing gently, add the snow peas to the wok for the last 30 seconds.
  • Remove from the heat.
  • Serve in four serving bowls over steamed rice.
