HERTZOGGIES RECIPE

300 g self-raising flour
50 g castor sugar
125 g butter, cold and cubed
3 extra-large egg yolks
Ice water
smooth apricot jam
a little flour
5 extra-large egg whites
160 g castor sugar
160 g desiccated coconut

Steps:

  • Place the flour and sugar into a food processor and pulse until mixed.
  • Add the butter cubes and pulse a few times to cut the butter into the flour mixture.
  • Beat the egg yolks and add them to the flour mixture. Pulse a few more times until the dough starts to form a ball. Add a little ice water if too stiff.
  • Remove from the processor and place on a floured surface.
  • Bring together with your hands and cover it with cling film. Refrigerate for at least an hour.
  • When ready to make the hertzoggies, preheat the oven to 180°C.
  • Prepare a muffin or patty pan tray with non-stick cooking spray.
  • On a floured surface, roll out the dough and cut circles with a cookie cutter to fit into the pan cavities.Press the dough into prepared pans.
  • Put 1 teaspoon of smooth apricot jam in the flour and coat the "ball" of jam (this prevents the jam from boiling out the tarts). Now place the jam on the dough in the pans.
  • Beat the egg whites until stiff. Add the castor sugar while beating.
  • Fold in the coconut.
  • Place a spoonful of the meringue mixture on top of the dough and apricot jam.
  • Bake for 10 minutes, or until golden brown.
  • Cool and store in an airtight container.

250 ml all-purpose flour
15 ml sugar
1/2 tsp salt
1 tsp baking powder
65 g cold butter
2 egg yolks
25 ml water
250 ml desiccated coconut
100 ml sugar
2 egg whites

Steps:

  • Preheat the oven to 180 degrees Celsius and grease a patty pan tray.
  • In a mixing bowl sift the flour, salt and baking powder together and rub in the butter with your fingers.
  • Add the sugar, egg yolks and water and knead to form a soft dough.
  • Roll the dough out to half a cm thickness and cut with a 7 cm small cookie cutter.
  • Press the dough into the tray and fill with jam.
  • Whisk the egg whites to stiff peak stage and add the coconut and sugar.
  • Add a tablespoon of the coconut meringue to cover the jam.
  • Bake in the preheated oven for 20-25 minutes until the hertzoggies are golden.

Yes, it's really their only name! It's a tremendously popular cookie or tartlet, often found in home industry outlets. They were named after a prime minister of South Africa (1924 -1939), J B M Hertzog. Must have been his favourite teatime snack! Please note that no South African dessicated coconut is sweetened.

250 g flour, unsifted
25 g superfine sugar
2 teaspoons baking powder
1/2 teaspoon salt
125 g butter, room temp
3 large egg yolks, from very large eggs
15 ml water
4 -6 tablespoons apricot jam, fine
3 large egg whites, from very large eggs
250 g sugar
500 ml desiccated coconut

Steps:

  • Sift together the flour, superfine (caster) sugar, baking powder and salt.
  • Rub the butter lightly into the flour with fingertips until like crumbs.
  • Beat egg yolks lightly with the water, and add.
  • Mix until a soft, manageable dough forms. Add a tiny bit more water if the dough is too firm.
  • Knead this dough well, cover, and set aside.
  • Heat oven to 180 deg C/350 deg F.
  • Grease the hollows of patty pan tins, or spray with nonstick spray. (I'm talking about the shallow hollows -- not deep ones like for muffins).
  • Roll the dough out thinly on a floured surface.
  • Press out circles large enough to form adequate pastry crusts for the patty hollows.
  • Line the patty hollows with the pastry.
  • Put a small blob of jam in each crust -- about 3/4 teaspoon.
  • Whip the egg whites until quite stiff.
  • Slowly add the sugar and whisk well after each addition.
  • Stir in the dessicated coconut.
  • Put spoonsful of this filling in the patty hollows over the jam blobs. Try to do this neatly as it affects the final shape of the cookie.
  • Bake the cookies 20 - 25 minutes in centre of oven.
  • Cool slightly in the pans, then lift out and cool on wire racks.
  • About 30 cookies.
