DELICIOUS SPINACH SQUARES
Steps:
- 1. Preheat oven to 350F. Grease an 8x11" baking dish and set aside. 2. Stir together flour, baking powder, salt, pepper and nutmeg in a large bowl. 3. In another medium sized bowl whisk the eggs well and then whisk in the milk and butter. Stir in the cheese, spinach, red pepper and onion. 4. Pour the spinach mixture over the flour and stir to just combine. Pour into the prepared baking dish. 5. Bake for 30-35 minutes or until set. Let cool 10 minutes and then slice into squares.

- Brush the bottom and sides of a 13x9-in. baking dish with 1 tablespoon butter; set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. - Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.

- Cook spinach according to package instructions and drain.
- Preheat oven to 350.
- Melt butter in a 9x13" baking pan (don't let it burn).
- Remove from oven.

My mother used to make these for Thanksgiving and Christmas. They are easy to make and is great for holiday meals. You will love this recipe even if you don't like spinach!

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13-inch baking dish.
- Bring a large pot of water to a boil and add spinach. Cover, reduce heat, and cook until heated through, 5 to 6 minutes. Drain well, squeezing out excess moisture with your hands. Set aside to cool.
- Melt butter in a saucepan over medium heat; stir in onion and cook until soft and translucent, 5 to 10 minutes.
- Transfer onions to a double boiler; mix in milk, Cheddar cheese, flour, and ground black pepper; cook and stir until blended and smooth, about 5 minutes. Remove from heat; fold in eggs and spinach. Pour the spinach mixture into baking dish and smooth top.
- Bake, uncovered, in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool briefly before cutting into squares.

- Heat oven to 350 degrees F.
- Butter a 13 x 9-inch baking pan.
- Place the butter in the prepared baking dish, and melt in the oven; remove pan and set aside.
- In a large bowl beat the eggs thoroughly.
- Blend in flour, half and half, cayenne, garlic powder and Parmesan cheese seasoning salt, black pepper and baking powder.
- Add in 2-1/2 cups grated cheddar or mozzarella cheese, green onion and spinach; mix well.
- Spoon the mixture into baking dish on top of the melted butter, and level off.
- Drizzle the top with 2 tablespoons melted butter.
- Sprinkle with grated Parmesan cheese.
- Bake for about 30 minutes or until golden brown and set.
- Remove from oven, and cool for 40-45 minutes.
- If desired you may sprinkle about 1 cup shredded cheddar or mozzarella cheese immediately after baking.
- Cut into squares.
- Note: these squares freeze very well.

A good friend of mine gave me this wonderful recipe. She told me that every time she made these for a party everyone would demand the recipe with their mouths' full! On my end, every time there's some kind of pot-luck around everyone requests that I bring this dish. Prep time does not include defrost time.

Steps:
- Defrost and drain the spinach. Thoroughly squeeze handfuls to remove the liquid. Reserve for another use if desired. The water leftover from this is great for cooking pasta or rice!
- Preheat oven to 350 degrees.
- Mix drained spinach with all remaining ingredients except cooking spray.
- Spray a 9x2x13 baking pan with cooking spray. Bake for 30 - 40 minutes until top is nicely browned. Let cool and cut into squares.
- My favorite way to have leftover spinach squares is to cut one up into small pieces and use it as omelet filling. Yummy!
- Cut into 24 squares for hors d'oeuvres.
