- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Mix in corn, tomatoes, oil, chili powder, and cumin. Bring to a boil; remove from heat.
- Combine milk, cornmeal, and eggs in a large bowl. Stir in meat mixture. Mix in olives. Pour into the prepared baking dish.
- Bake in the preheated oven until golden and set, 50 to 60 minutes; mixture should not be mushy.

- Heat oven to 350°F. Spray 8-inch (2-quart) glass baking dish or pan with cooking spray.
- In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Sprinkle with taco seasoning mix; stir. Stir in salsa, chiles, corn, beans and 1 cup of the cheese.
- Meanwhile, make cornbread & muffin mix batter as directed on pouch. Stir in remaining cheese. Pour beef mixture into baking dish; spread batter on top.
- Bake 30 to 35 minutes or until cornbread topping is golden brown. Cool 5 minutes. Cut into 3 rows by 3 rows; serve with Make it FRESH toppings.
EASY TAMALE CASSEROLE
A co-worker recently gave me this recipe. You can't get much easier than this!!! You can use fresh or frozen tamales. I'm sure you could easily substitute your favorite cheeses and add kernel corn, pinto beans, rotel tomatoes, etc. Simply great with cornbread or salsa biscuits. Can easily be expanded. Enjoy!

- Preheat oven to 350°F.
- Shuck husks off tamales and place, single layer, in a 9x13 baking dish.
- Mix all other ingredients (except for shredded cheddar cheese for top) until well blended. It will have a very soupy consistency.
- Pour over tamales and bake for 30 minutes or until bubbling hot.
- Sprinkle w/ cheddar cheese and bake a few more minutes until melted.
- Serve hot!

This is easy, and fast to put together. I won't lie and tell you it's good for you, but when you get a deal on canned goods, you can get really creative! I imagine you could modify this recipe in many directions to make it interesting :)

- Drain and unwrap tamales. Reserve the sauce.
- Slice tamales crosswise. In mixing bowl combine the tamale sauce, flour, chili powder, garlic salt, and salt. Add eggs, corn, olives, and sliced tamales.
- Turn into a 10 X 6 X 22 baking dish. Bake uncovered, in a 350º oven for 40 minutes or until set.
- Sprinkle with cheese. Bake 3 minutes more or until the cheese is melted.
- Cut into squares to serve.

EASY TAMALE CASSEROLE
My mom liked to make the Hamburger Helper® version of this recipe. When I moved to another state, I could not find it, so I came up with this. Memories of home. My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat a cast-iron skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Season beef with salt and pepper.
- Stir onion into the ground beef; cook and stir for 1 minute and immediately remove skillet from heat.
- Stir pinto beans and crushed tomatoes into the beef mixture.
- Beat cream-style corn, cornbread mix, and egg together in a bowl until smooth; spread over the top of the ground beef mixture in the skillet. Sprinkle Cheddar cheese over the corn mixture.

- Preheat the oven to 400°F (200°C).
- Season the lamb shanks all over with salt and pepper.
- Heat the canola oil in a large Dutch oven over medium-high heat.
- Sear 2 lamb shanks at a time until a dark brown crust forms on one side, 3-5 minutes. Sear the other sides of the meat until evenly browned. Remove the shanks from the pan and set aside. Remove all but 2 tablespoons of fat from the pan.
- Add the minced carrots, onion, celery, and minced garlic to the pot. Season with salt and pepper, and cook until the vegetables are deeply caramelized, 15-20 minutes.
- Add the tomato paste and cook until it browns and is aromatic, 5 minutes.
- Add the red wine and scrape the bottom of the pot to release the flavorful browned bits stuck to the bottom. Cook until the wine reduces by half and thickens slightly, 3 minutes.
- Add the chicken stock, orange juice, lemon juice, rosemary, thyme, and bay leaves. Stir and bring to a boil.
- Return the lamb shanks to the Dutch oven, cover, and place in the oven for 2 hours, turning the shanks halfway through, until the lamb is tender and the braising liquid has thickened.
- About halfway through the lamb cooking time, add the oblique-cut carrots, Brussels sprouts, red pearl onions, and whole garlic cloves to a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to combine. Roast in the oven for 1 hour, or until the vegetables are tender.
- Right after the potatoes finish boiling, drain and transfer to a large bowl. Season with plenty of salt and a bit of white pepper, and mash the potatoes until as smooth as possible.
- Fold in the butter, sour cream, and heavy cream until smooth and light.
- Make the citrus gremolata: In a small bowl, combine the parsley, lemon zest, flaky salt, garlic, chives, horseradish, and orange zest.
- To serve, scoop mashed potatoes onto a plate. Add roasted vegetables and a lamb shank. Top with the braising liquid and citrus gremolata.

TRUE BANGERS AND MASH WITH ONION GRAVY
Bangers and mash gets its name because sausages used to burst (or bang) while cooking, due to rusk (dried bread) being added to the meat. Mash, meanwhile, refers to the mashed potatoes. This recipe was a staple at our home in Dublin at Halloween. It is a very cheap, very traditional supper, and one that truly requires good sausage. Try to use a good quality sausage or perhaps even a bratwurst. Please note that this is a very thin gravy, as is traditional. It will still be very liquidy.

- Preheat oven to 200 degrees F (95 degrees C).
- Cook the sausage links in a skillet over medium-low heat until browned on all sides, about 5 minutes per side; transfer to an oven-safe dish and move to the preheated oven to keep warm.

- First, prepare the filling. Heat the oil in a medium-size skillet over medium heat. Add the onion and pepper and cook, stirring occasionally, until the vegetables soften, about 5 minutes. Add the garlic and cook 1 minute more. Stir in the tomato and continue cooking until a sauce has formed, about 5 minutes. Stir in the paprika, cumin, red pepper flakes, salt, and pepper. Add the beef to the mixture and cook, breaking it into smaller pieces, until the meat loses its pink color, about 5 minutes. Stir in the flour and cook for 2 minutes more. Add the chicken broth and continue cooking, stirring often, until the mixture thickens, about 5 minutes. Remove the filling from the heat and let it cool.
- Make the dough. Put the hominy in a food processor and pulse it until it's smooth, scraping down the sides as necessary, about 1-1/2 minutes. Add the cheese and butter and pulse until well blended, about 30 seconds more. Add the eggs and the yolk and pulse again. Add the mustard, baking powder, salt, and hot sauce and process until a light, fluffy dough has formed. Transfer the dough to a cake pan, spread it over the bottom, and divide it into 10 portions.
- To assemble each tamale, place half a portion of dough in the center of a sheet of parchment paper. Flatten the dough into a 3- by 5-inch rectangle, then spread 1/4 cup of filling onto the center of the rectangle. Cover the filling with the other half of the dough and pat it down. - Fit each of two large pots with a steaming basket or colander. Add water to each pot, filling it to just below the bottom of the basket. Remove the baskets and bring the pots of water to a boil.

When the water is boiling in each pot, set a basket inside and cover the pot with a clean kitchen towel. Top the towel with a tightly fitting lid and steam the tamales, replacing water as needed until they are firm to the touch, about 30 to 40 minutes. Use tongs to remove the tamales from the baskets (a parent's job). Let the tamales cool slightly before serving with your favorite salsa. Makes 10 tamales.
