¼ cup diced dried apricots
1 (12 ounce) package fresh cranberries
½ cup raisins
¾ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground allspice
1 pinch ground cloves
1 cup water
¾ cup white sugar
½ cup cider vinegar

Steps:

  • In a medium bowl, mix together the apricots, cranberries, raisins, cinnamon, ginger, allspice, and cloves.
  • In a medium saucepan, boil water and sugar, stirring constantly, until sugar is dissolved. Add the dried fruit mixture and vinegar. Bring to a boil, reduce heat, and simmer for 10 minutes. Remove from heat, and allow to cool for 5 minutes. Serve immediately, or refrigerate in a covered container.

1 cup low-sodium chicken broth
½ cup orange juice

Steps:

4 Granny Smith apples - peeled, cored and sliced
1 ½ cups whole berry cranberry sauce
1 cup whole wheat pastry flour
1 cup rolled oats
⅔ cup packed brown sugar
⅔ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place apple slices in an 8 or 9 inch square baking dish. Spread the cranberry sauce over the apples. In a medium bowl, stir together the flour, oats, brown sugar, cinnamon, and butter until crumbly. Sprinkle over the apples and cranberry sauce, covering completely.

This is better than any bread pudding!!! This is best served at room temperature, yeah right, just try and wait that long, you will have it half gone before it even reaches room temperature LOL! it is THAT good, try this, you will LOVE IT! Dried cherries can be used in place of the dried apricots and raisins can be replaced for the cranberries, I use Ocean Spray Craisins when I make this! If you prefer a less sweeter kugel then reduce the white sugar to 1-1/4 cups or less.

4 large baking apples (use Granny smith if possible, cored and medium diced)
1/3 cup brown sugar
1/4 cup fresh orange juice
6 plain matzohs (broken into 2-3-inch pieces, use unsalted matzoh)
1 cup warm water
8 large eggs
3/4 teaspoon salt
1 1/4 teaspoons cinnamon (can use more)
1 1/2 cups sugar
1/2 cup melted butter (or use margarine)
1 1/4 cups dried cranberries (I use Ocean Spray Craisins for this)
1 1/4 cups dried apricots, chopped coarsely
5 tablespoons cold butter (cut into small pieces) or 5 tablespoons margarine (cut into small pieces)
2 tablespoons sugar (use white or brown sugar for sprinkling)

Steps:

  • Set oven to 350°F.
  • Grease a 3-quart casserole dish (you can also make this in a 13 x 9-inch baking dish, I used my 3-quart Corning Ware casserole dish for this).
  • In a bowl toss the apple pieces with 1/3 cup brown sugar (can use less than 1/3 cup sugar if desired) and 1/4 cup fresh orange juice; set aside.
  • In another bowl soak the matzoh pieces in 1 cup warm water until soft but not mushy; set aside.
  • While the matzoh is soaking, in a large bowl whisk the eggs until well blended; add in the salt, cinnamon, 1-1/2 cups sugar, melted butter, cranberries (or Craisins) and chopped dried apricots; mix to combine.
  • Gently squeeze the liquid from the matzohs (don't worry about squeezing all of the water out completely!) add to the egg mixture along with the chopped apples; mix very well.
  • Transfer the mixture into greased baking dish.
  • Sprinkle lightly with about 2 tablespoons white or brown sugar, then dot all over with the cold butter pieces.
  • Bake covered with foil for about 40 minutes.
  • Remove from oven uncover, then return and bake uncovered for another 20 minutes, or until the casserole is set.
  • Serve at room temperature.

  • Add cranberries, cinnamon, allspice, sugar, and apple juice to pot and bring to a boil, stirring occasionally. Turn down to a simmer and add preserves and let simmer until it's the desired consistency. It took about 8-10 minutes. Remove from stove and let cool.

2 cups sparkling apple-cranberry juice

Steps:

  • Preheat oven to 400°F. Remove stems from apples.Using melon baller, scoop out core of each apple, making 1-inch-wide hollow center but leaving bottom of apple intact. Make 1/8-inch-deep cut in skin around center of each apple. Arrange apples, hollowed side up, in 8x8x2-inch glass baking dish.
  • Mix raisins, cranberries, sugar, apricots, and 1/2 teaspoon allspice in small bowl. Pack fruit mixture into hollows of apples. Sprinkle any remaining fruit mixture around apples in dish. Drizzle butter into filling and around apples in dish. Pour sparkling juice and cranberry concentrate into dish. Sprinkle remaining 1/4 teaspoon allspice into dish. Bake apples uncovered until tender, occasionally basting with cranberry juice mixture, about 1 hour 10 minutes.
  • Transfer apples to 4 bowls. Pour juices from dish into medium saucepan and boil until thick enough to coat spoon, about 4 minutes. Spoon sauce over apples.

1/4 cup dried apricot, chopped fine
1/4 cup sugar
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 1/2 cups apricot preserves
1 (12 ounce) bag cranberries
1 teaspoon fresh ginger, grated

Steps:

  • Bring water, apricots, sugar, salt, cayenne, and apricot preserves to boil in large saucepan over medium heat. Add cranberries and simmer until slightly thickened and two-thirds of berries have popped open, about 5 minutes. Stir in ginger, transfer to serving bowl, and cool completely.
