"I can only roast chicken the way I roast chicken," the chef André Soltner told The Times's Molly O'Neill in 1991. Mr. Soltner, then the chef of the celebrated Lutece in Manhattan, was explaining a controversial step in his recipe for the bird, which results in marvelously juicy, flavorful meat. When the internal temperature of the bird has come up to around 158 degrees on a meat thermometer, he adds a teaspoon of water to the roasting pan, turns off the heat of the oven, and allows the chicken to steam gently for three minutes. "For the soft breast," he said. Thyme, tarragon and onion, along with a shower of salt and pepper and just a little butter, do the rest of the work. Amazingly, perhaps, the skin stays crisp. It's a method well worth trying.

2 sprigs fresh thyme
3 sprigs fresh tarragon, removing and reserving the leaves of 1 sprig
2 small white onions, halved
1 poussin or small chicken (about 20 ounces)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons peanut oil
2 sprigs fresh parsley
1/4 cup white wine
1/4 cup chicken broth
2 tablespoons minced Italian parsley
1 tablespoon butter

Steps:

  • Preheat the oven to 450 degrees. Place the thyme, 2 of the tarragon sprigs, the parsley sprigs and onions in the cavity of the chicken; season inside and out with the salt and pepper.
  • On the stove, heat a roasting pan over high heat. Add the peanut oil and the chicken and brown on all sides, about 1 to 2 minutes per side. Remove from the heat and place in the oven. Roast for 20 to 25 minutes, basting frequently, or until a meat thermometer reaches between 158 and 160 degrees when inserted in the thigh.
  • Immediately drop 1 teaspoon of water in the roasting pan, close the oven door and turn off the heat. After 3 minutes, remove the pan from the oven and place the bird on a platter. Carefully drain the fat from the pan and place on top of the stove over medium heat. Add the wine and, using a wooden spoon, scrape the pan well. Add the chicken broth, the reserved tarragon leaves and the parsley. Simmer for 2 minutes and then remove from heat. Whisk in the butter and serve immediately over the chicken.

Kosher salt

1 large bunch fresh thyme, plus 20 sprigs

4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

4 cloves garlic, chopped
1 tablespoon chopped fresh thyme

1 lemon, zested and halved

1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.
  • Loosen skin on chicken breast; rub butter mixture between skin and breast meat. Press on the skin to distribute evenly. Rub oil, remaining 1/2 teaspoon salt, and 1/2 teaspoon pepper all over; place lemon halves inside cavity. Set in a baking pan.
  • Roast in the preheated oven, basting after 30 minutes, until chicken is no longer pink, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Let rest before carving, about 15 minutes.

1 (4 lb) free-range chicken
fine sea salt
fresh ground black pepper
6 tablespoons unsalted butter, at room temperature
1/2 cup chopped dill
1 bunch fresh dill
1 lemon, quartered
5 -6 medium leeks, white and light green parts only, thoroughly washed and cut into 2-inch pieces
4 -5 lbs russet potatoes, cut into 1-inch slices
8 garlic cloves, unpeeled
3 cups chicken stock
fresh dill (to garnish)
lemon wedge (to garnish)
grated lemon zest (to garnish)

Steps:

  • Preheat the oven to 425°F.
  • Rub the chicken with salt and pepper.
  • In a small bowl, combine the butter and chopped dill. Rub the chicken with about 2 tablespoons of the dill butter.
  • Carefully lift up the skin from the chicken breasts at the cavity, using your fingers or a blunt knife to loosen the skin; be careful not to tear it. Insert about 1 tablespoon of the dill butter under the skin of the breast and make sure that the skin covers the meat when you are done.
  • Refrigerate the remaining butter.
  • Fill the cavity of the chicken with the lemon quarters and the bunch of dill.
  • Place the chicken, breast side up, on a V-shaped rack in a roasting pan. Place the roasting pan on the middle oven rack and roast the chicken for 25 minutes.
  • Remove the chicken from the oven and rub with about 1 tablespoon of the dill butter, holding the butter in your fingers. When most of the butter has melted and you are at risk of burning your fingers, place the remaining lump on the breast of the chicken.
  • Remove the roasting pan from the oven. Fill the pan with the leeks, potatoes, and garlic and add the chicken stock. Turn the chicken, breast side down, and place it in the roasting pan. Reduce the oven temperature to 350°F
  • Return the roasting pan to the oven and roast for 50 to 60 more minutes, or until the chicken is cooked through.
  • Test for doneness by piercing it with a sharp knife at the thickest part of the thigh; the juices should run clear. (If there is any trace of pink in the juices, return the chicken to the oven.)
  • Transfer the chicken to a carving board and let it rest, uncovered, for 15 minutes.
  • Check the potatoes for doneness. If they are still firm, increase the oven temperature to 400F and continue baking until the potatoes are nice and tender.
  • Squeeze the garlic out of their skins. Leave the roasting pan in the oven with the heat turned off.
  • Transfer the potatoes, leeks, and garlic to a serving platter. Carve the chicken at the table (discard the lemon and dill inside the cavity).
  • Garnish with dill and lemon wedges and sprinkle lemon zest on top.

Pastry for a 2-crust, 9-inch pie
5 ounces thick-sliced mild smoked bacon
1 1/4 pounds smooth skinned Long Island or Maine potatoes, peeled and sliced thin
1/4 cup finely chopped parsley
Salt and freshly ground black pepper to taste
4 hard-cooked eggs, peeled and sliced thin
1/2 cup creme fraiche or heavy cream

Steps:

  • Line the bottom of a nine-inch pie pan with a little more than half of the pastry and chill. Reserve and chill the remaining pastry.
  • Cut the bacon strips crosswise into pieces a quarter-inch wide. Sautee the bacon until just beginning to brown around the edges. Drain on absorbent paper.
  • Wash the potato slices in cold water to remove excess starch. Drain and dry them. Toss with parsley and season to taste with salt and pepper. Make a layer of overlapping slices of potato in the pastry shell, using half the potatoes. Cover with the pieces of bacon, then arrange the egg slices over the bacon and top with the rest of the potato. Spread with the creme fraiche. Refrigerate.
  • Preheat the oven to 400 degrees.
  • Roll out the remaining dough into a circle to fit the top of the pie. Beat the remaining egg yolk with a teaspoon of cold water, brush the edges of the pastry, cover the pie and crimp and seal the edges. Brush the top with egg wash and cut several decorative slits in it.
  • Bake for 20 minutes. Lower the oven temperature to 350 degrees and bake 50 minutes longer, then lower the heat to 300 degrees and bake another 10 minutes. Allow the pie to rest 10 minutes before cutting and serving.
