An oatmeal breakfast that is more like a coffee cake. Its easy and my family just loves this! Its a one of our breakfast favorites.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, stir together the oats, brown sugar, salt and baking powder. In a separate medium bowl, stir together the eggs, milk, vanilla and canola oil. Pour the wet ingredients into the dry ingredients, and stir until well blended. Spoon into the prepared baking pan, and spread evenly. Sprinkle walnuts over the top.
- Bake for 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean.

GROUND BEEF A LA KING
Instead of using puff pastry shells, this tasty dish can be served over mashed potatoes.

- Bake pastry shells according to package directions. In a microwave-safe bowl, combine the carrots and 1 cup of water. Cover and microwave on high for 8-10 minutes or until crisp-tender. , Meanwhile, in a large skillet, cook the beef, mushrooms and shallots over medium heat until meat is no longer pink; drain. Combine flour and broth until smooth. Add the broth mixture, tomato paste, wine, tarragon, salt, pepper and remaining water to beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. , Drain carrots; add to skillet. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Remove top of pastry shells; fill with beef mixture.

EASY A LA KING BISCUIT CASSEROLE
An A La King mixture including cubed chicken, peas, mushrooms, bell pepper and broth is poured into a casserole dish and baked with biscuits on top. Classic A La King goes casserole!

- Melt butter in a medium saucepan over medium heat; stir in flour, then pour in broth and let thicken, stirring. Add chicken, peas, mushrooms, carrots, onion and bell pepper. Mix together and bring to a boil.
- Preheat oven to 350 degrees F (175 degrees C).
- Pour chicken mixture into a 9x13 inch baking dish. Place refrigerated biscuits over top and bake in preheated oven for 25 to 30 minutes, or until biscuits are done.

- Preheat oven to 350 degrees with rack in the center of oven.
- Lightly oil 8" square glass baking dish.
- In a large bowl, stir together oats, raisins, granulated sugar, baking powder, 1 1/2 tsp cinnamon, and salt.
- In another bowl, whisk together applesauce, yogurt, milk, oil eggs, and vanilla, until smooth.
- Stir into oat mixture, then pour into baking dish.
- Stir together brown sugar with remaining 1/4 tsp cinnamon and sprinkle over oatmeal, then bake until a wooden pick inserted into center comes out clean, about 30 to 40 minutes.
- Cool to warm in pan on a rack 20-30 minutes, then cut into squares.
- **Note: Baked Oatmeal can be made 1 day ahead and chilled, covered. Blot away any moister from surface, then reheat in a preheated 325 degree oven, covered with foil, until heated through, about 15 minutes.

My recipe for seafood a la King can be served as a chowder, over basmati rice, in puff pastries, or simply over toasted English muffins. Any way you serve it, it is delicious.

- INTO a 4-quart pot, add 2 medium bay leaves, 1/4 teaspoon dried thyme, 1 (8 ounce) bottle clam juice, the strained juice from 1 (10 ounce) can baby clams in juice (reserve clams and set aside), and 1 (15 ounce) can low sodium chicken broth.
- ADD 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion (and if desired, a few pre-cooked bacon crumbles); BRING to a boil.
- REDUCE heat to medium; COVER.
- COOK for 7 minutes, or until potatoes are firm-tender.
- UNCOVER; ADD 1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes and 1 (15-16 ounce) jar traditional Alfredo sauce; MIX well.
- REDUCE heat to medium-low; STIR in reserved clams, 3 tablespoons snipped green onions, 2 teaspoons fresh lemon juice, 1/4 teaspoon white pepper, and 1/2 cup canned coconut milk.
- POUR 2 cups whole milk into a medium bowl; WHISK 1/4 cup flour gradually into milk, blending well; STIR slurry into pot slowly, while stirring rigorously.
- ADD 1/4 cup frozen peas, 1/4 cup minced red peppers, 2 tablespoons minced cilantro, and 1/2 teaspoon Old Bay Seasoning; SIMMER uncovered, stirring as needed, up to 30 minutes, or to desired consistency.
- STIR in 8 ounces pre-cooked deli shrimp; FOLD in 8 ounces cooked chunked imitation crabmeat carefully without breaking up meat; HEAT then carefully fold again; REMOVE bay leaves.
- SERVE warm as a chowder, in pre-baked puff pastry shells, over steamed basmati rice, or over toasted English muffins; GARNISH with fresh cilantro or fresh dill sprigs and/or dill weed; ENJOY!

- Preheat oven to 350°; butter a medium baking dish.
- Add the oats and butter to a heatproof mixing bowl.
- Pour 1 ½ cup boiling water over them and let stand 5 minutes.
- Stir in the milk, brown sugar, cinnamon, and salt.
- When well mixed, stir in the apples.
- Spoon mixture into the prepared dish.
- Cover and bake for 35 minutes, then uncover and continue to cook for 5-10 minutes, until thick and bubbly.

- Preheat oven to 350°F Grease an 8x8 square baking pan with nonstick cooking spray.
- In a medium size bowl, combine oats, baking powder, salt, and cinnamon. Stir.
- Beat egg in a separate large bowl. Add vanilla, milk, and ½ cup brown sugar. Whisk until well blended.
- In a separate bowl, mash one banana with 2 tbsp brown sugar. Chop one banana in small pieces. Slice remaining banana in rounds.
- Add dry oat mixture to milk mixture. Stir lightly until combined. Add mashed banana and chopped banana (not slices). Stir once.
- Place about half of the sliced banana in bottom of pan. Pour in oat mixture. Press the remaining sliced banana into the top of the oat mixture.
- Bake for 40-45 minutes, or until center is firm.
- While oatmeal cools, melt peanut butter over very low heat, stirring constantly, until a thin sauce forms (be careful not to burn). Serve oatmeal with melted peanut butter, chopped peanuts, and freshly sliced banana.
