4 pounds sweet potatoes (about 6 large)
1/2 cup orange juice
1/2 cup heavy cream
4 tablespoons (1/2 stick) unsalted butter, melted
1/4 cup light brown sugar
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. Remove from the oven and scoop out the insides as soon as they are cool enough to handle. Place the sweet potato meat into the bowl of an electric mixer fitted with a paddle attachment and add the orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt, and pepper. Mix together until combined but not smooth and transfer to a baking dish.
  • Bake the potatoes for 20 to 30 minutes, until heated through.

  • Toss 3 sweet potatoes (cut into 1-inch-thick rounds) with 2 tablespoons olive oil and 1 teaspoon ras el hanout on a baking sheet. Season with salt, pepper and a pinch of cayenne. Roast at 400˚, 30 minutes. Smash the potatoes, then roast at 475˚ until crisp, 25 to 30 minutes. Drizzle with 1/4 cup plain yogurt mixed with 1/4 teaspoon each lemon juice and zest and a pinch each of salt and pepper.

6 sweet potatoes, peeled and cubed
¾ cup milk
½ cup butter
¾ cup maple syrup

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  • With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

This is our version for Thanksgiving. Wonderful fresh taste! Not for those who want a marshmallow covered sweet potato! Recipe can be double but you must allow for more cooking time.

4 tablespoons unsalted butter, cut into 4 pieces
2 tablespoons heavy cream
1/2 teaspoon salt
1 teaspoon sugar
2 lbs sweet potatoes, peeled, quartered lengthwise, and cut crosswise into 1/4 inch-thick (about 2 large or 3 medium-small potatoes)
salt & freshly ground black pepper

Steps:

  • Combine butter, cream, salt, sugar, and sweet potatoes in large saucepan.
  • Cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork.
  • This will take between 30 to 45 minutes.
  • Take off heat and mash sweet potatoes in saucepan with potato masher.
  • You can also put potatoes into kitchen aid mixer and mix.
  • Stir in salt and pepper to taste.
  • Serve immediately.

6 sweet potatoes or 6 yams
1/4 lb butter
1/2 cup whipping cream
1/2 teaspoon ground cinnamon
1 tablespoon honey

Steps:

  • Bake orgaic yams or sweet potato at 400 degrees potato with jacket for about 90 minutes until very soft when a fork is inserted.
  • Remove skins from potato by cutting in half and squeezing cooked potato into food processor. Add grass-fed butter and puree until fully mashed.
  • Add grass-fed cream, organic cinnamon, raw honey and mix again.
  • Note if you do not have a food processor place potato into a large bowl and use high powered cake mixer.
  • Place content into a glass 1 quart baking dish and heat for 5 minutes at 400 degrees.
  • Serve and enjoy!
