A dear friend shared her version of 24 hour salad with me. Hope you enjoy it as much as we do!

¾ pound sliced bacon
1 large head iceberg lettuce, shredded
¼ cup sliced onion
¼ cup thinly sliced celery
1 (8 ounce) can water chestnuts, drained and sliced
1 (10 ounce) package frozen peas
1 cup mayonnaise, or to taste
1 tablespoon white sugar
2 tablespoons grated Romano or Parmesan cheese
4 tomatoes, cut into wedges
2 hard-cooked eggs, sliced
1 tablespoon chopped fresh parsley for garnish

Steps:

  • Spread the lettuce out on a large serving dish or bowl. Sprinkle the onion, celery, water chestnuts and frozen peas (unthawed) over the lettuce in layers. Spread mayonnaise over the top like a frosting. Sprinkle with sugar and grated cheese. Cover and refrigerate overnight.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Before serving, sprinkle crumbled bacon over the top, and garnish with tomato wedges, slices of hard-cooked egg, and parsley.

3 slices of bacon (cut in thirds)
1 hard boiled egg (chopped)
crisp green lettuce of your choice (I used Batavian, but romaine would be great as well)
grape tomatoes (sliced in half)
English cucumber (sliced in thin wedges)
carrots (sliced thinly into bite size pieces)
salad dressing of your choice (I used this Peppery Dill Ranch Dressing)

Steps:

  • Line a baking sheet with foil and then spread the bacon pieces across it. Place in the cold oven and set temperature to 400 degrees. Bake for about 20 minutes, until the bacon is cooked through, but not completely crispy. The bacon will become crispier as it cools. When bacon is done, place on a plate lined with a paper napkin or towel.
  • Layer your plate with lettuce, tomatoes, carrots and cucumbers. Top with bacon and egg. Drizzle with dressing, if desired. Enjoy!

4 large potatoes (washed and unpeeled)
4 hard-boiled eggs (save 1 for garnish)
½ white onion (diced)
2 celery stalks (chopped)
4 tablespoons of mayonnaise
1 teaspoon mustard
1 teaspoon of vinegar
Salt and pepper to taste
Chopped dill - you can also use parsley or cilantro
Paprika powder

Steps:

  • Place the whole unpeeled potatoes in a pot with plenty of water and a little salt. Cook until soft, about 30-40 minutes depending on size. I usually try to poke a knife through the middle to check for doneness.
  • Put the potatoes in a bowl of cold water to cool them and then proceed to peel them and cut them into small or medium chunks.
  • To cook prepare the hard-boiled eggs, bring water to a boil in a medium sized saucepan. Then gently add the eggs - one by one using a spoon so they don't break. You can add a teaspoon of baking soda - this helps make it easier to peel them. Let the eggs cook in the boiling water for 10 minutes, then transfer them to a bowl with cold water until you are ready to peel them.
  • I recommend saving one of the eggs to use as a garnish for the salad. Peel and then dice the rest of the hard-boiled eggs.
  • In a medium bowl or platter, add the chopped potatoes, the chopped hard-boiled eggs, the diced white onion, and the chopped celery.
  • To prepare the dressing, mix the mayonnaise (or yogurt) with the mustard, vinegar, salt and pepper. Pour this dressing on top of the chopped potatoes/eggs and mix well.
  • Taste the salad and adjust the amount of salt/pepper to taste. Add the chopped dill and paprika. If you saved one of the hard-boiled eggs, cut it into quarters or slices and use them to decorate the salad. The salad can be served on top of lettuce leaves.
  • The salad can be served immediately, or it can be kept in the refrigerator until serving time. Personally, I find that the flavor improves if it is left to rest for a few hours before serving.

  • Hard-boil, peel and slice eggs. Place 2 eggs in a sauce pan. Completely cover with water. Place on high heat and bring to a boil. Let them boil for 10 minutes. Remove eggs from sauce pan with a slotted spoon. Place in a bowl filled with ice and cool water and let them sit in the water for 5 minutes. Remove the eggs and wipe with a kitchen cloth. Peel the eggs and slice them into quarters.
  • Rinse, spin and chop the lettuce. Cut off the core of the lettuce (the white part at the end) then discard. Carefully separate the lettuce leaves then thoroughly rinse them. Place in a salad spinner and spin until dry. (If you do not have a salad spinner, dry the leaves with a clean kitchen towel or good quality paper towel.) Stack a quarter of the lettuce leaves on a chopping board. Slice in the middle across the core then chop the leaves. (Please see step by step photos in the post to see what I mean.Arrange the lettuce leaves on a large platter.
  • Arrange the salad. Arrange the other vegetables over the lettuce leaves: the cucumber, avocado, carrots, and red onions. Also add the hard-boiled eggs.Cover the salad with plastic wrap and place in the fridge until ready to serve!
  • Make the dressing: Combine all the ingredients for the dressing in a small mixing bowl or a liquid measuring cup. Whisk well to combine. The dressing will thicken up.

  • Eggs: bring the water up to a boil, then lower it to a vivid simmer. Using a tablespoon gently lower the eggs to the pot, and then switch the timer: cook 7-8 minutes for a firmly set, but still soft, yolk.
  • Salad: Wash the lettuce leaves, dry well, and chop or tear into pieces. Wash and cut the pepper in half vertically, remove the seed and slice it crosswise. Roughly chop the sun-dried tomatoes.
  • Dressing: while the eggs are cooking make the dressing whisking the ingredients in a small jug or just put everything in a jam jar and shake. (The recipe calls only 1/4 tsp of salt, but you can adjust the seasoning later according to your taste).
  • Place the vegetables in a large salad bowl, pour the dressing and toss to combine. Taste and make sure you're happy with the seasoning.

Once boiling, turn the heat down but keep the water at a rolling boil. Add the eggs carefully with a slotted spoon. Set a timer for 10 minutes. Once time is up, pour out the hot water.
