BUTTERY APPLESAUCE 0R SLICED APPLE SIDE
I had a dozen gala apples and didn't want to make a pie,so I decided to make them into a side dish.I still needed to make something else because that was alot of apples.I decided on applesauce.Since I don't care for regular sauce I gave it a try to make my own.The sauce turned out smooth and creamy,with a buttery flavor.It is now my favorite sauce for pork and the slices a side dish.

Steps:
- WASH APPLES.SLICE INTO QUARTERS AND REMOVE THE CORE.(DO NOT PEEL).
- MELT BUTTER IN A LARGE STOCK POT WITH WATER.
- ADD APPLES AND REMAINING DRY INGREDIENTS.SPRINKLE DRY INGREDIENTS ON TOP OF THE APPLES.
- STIR APPLES AND SUGAR MIXTURE AND COVER AND COOK UNTIL APPLES ARE VERY TENDER.
- WHILE WARM PUT IN A SMALL FOOD PROCESSOR AND PROCESS UNTIL YOU HAVE APPLESAUCE CONSISTENCY.AS A SIDE SERVE HOT AND ADD A DOLLOP OF WHIPPED CREAM ON TOP.
SAUTEED APPLES
This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish.

Steps:
- In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
- Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

BUTTERY SPICED SOUS-VIDE APPLES
Steps:
- Fill sous-vide cooker with hot water and heat to 170 degrees. Place lemon zest in a bowl. In another bowl, place apples. If using large apples, cut in half. Cut lemon and squeeze juice over apples, turning to coat.
- To bowl with lemon zest, add butter, salt, spices, sugar and raisins; mix together. Divide mixture among apples, packing it into hollowed core. If using apple halves, rub mixture all over them.
- Place two apples in a sealable plastic bag, and seal it after removing as much air as possible; try squeezing most of it out and then carefully sucking out the rest with a straw as you seal the bag. Or, seal apples in plastic with a FoodSaver or similar vacuum device. Repeat with remaining apples. (For sous-vide cooking at home, a complete vacuum seal is not necessary if food will be served immediately after cooking.)
- Place plastic bags in sous-vide chamber, making sure they are submerged in hot water. Cook at least 2 hours. Food may remain in cooker for up to 2 additional hours; it will not cook any further. When opening bags, be careful as juices will be hot. Serve apples in bowls, topped with crème fraîche, whipped cream or ice cream.

- Turn your oven up to 350°F.
- While your oven is heating, peel and core and slice your apples.
- Finely slice your onions.
- Add the sliced apples to an oven proof dish.
- Add the onions.
- Drizzle the maple syrup over the apples and onion mixture.
- Sprinkle with cinnamon and nutmeg.
- Mix all together.
- Cover the dish.
- Bake for approximately 30 - 40 minutes.
- The apples and onions will be very soft when cooked.
- Serve with pork chops or pork roast.

- Prep apples as directed, combine in slow cooker with apple juice (or cider), brown sugar and spices, cook overnight and into the next day if you can, stirring occasionally - 18 hours or so is optimal. You want the mixture to reduce down significantly. Once the apples are to more or less applesauce consistency, apply an immersion blender to puree the mixture to a velvety texture or put it through a food mill. Once the liquid no longer separates quickly after it's stirred, it's ready to jar up and process. Pour into sterilized jars, process in hot water bath for 10-15 minutes.

- Gradually add sugar and beat until it is light.

- Put the applesauce and spices into a heavy bottomed saucepan. You want a heavy pot because that will help prevent the thick apple butter from scorching on the bottom of the pan as it cooks. Stir to combine everything and bring up to a boil.
- Cook at a medium boil, stirring often, for about 30-45 minutes, until the butter is nice and thick. Be careful, the mixture will sputter in the begining, I use a splatter guard. You don't have to stir constantly, but keep an eye on it for scorching and stir often. I also like to use a silicone 'spoonula' because it makes it easy to scrape the sides and bottom of the pan.
- When it is ready, you will be able to drag a spoon across the bottom of the pan and leave a trail that will not fill in immediately. The butter will continue to thicken as it cools.
