Delicious air fryer oyster mushroom is an addictive snack that is super moist on the inside and extra crispy outside. Low carb and low calorie, this is a perfect appetizer for weight watchers.

200 gm. mushroom (about 10-12 mushroom use Oyster, shiitake or Portobello)
¾ cup buttermilk (or vegan buttermilk (recipe shared in the notes))
1 tsp. cayenne or paprika (or red chilli powder)
1 tsp. salt
1 tsp. Italian seasoning (or dried parsley, oregano, basil, thyme)
1 tsp. garlic powder
1 tsp. onion powder
2 tbsp. all-purpose flour (or corn starch)
2 tbsp. rice flour
1 tsp. oil

Steps:

  • Clean mushroom and dry them well. Now prepare a slurry of buttermilk or vegan buttermilk with rice flour and ½ tsp. salt. Marinate mushroom in the slurry for about 30 minutes.
  • Now take all the spices and add to all-purpose flour and keep it ready.
  • Pre-heat Airfryer at 180 C or 360 F for 5 minutes.
  • After marination, take out each marinated mushroom and immerse it in the seasoned flour mix till well coated. Lightly brush with oil. Do this to all the mushroom and keep aside.
  • Brush the air fryer basket and arrange the mushroom in one row. Air fry for 15 minutes at 180 C or 360 F. Turn once in the middle. Now turn up the temperature to 200 C or 390 F and Air fry for 4 minutes for a golden colour.
  • Take it out and serve out. Your crispy Air fryer mushrooms are ready to serve. Have with dipping sauce, mayo or even ketchup. It's super delicious.
  • Serve them hot.

How to make crispy air-fried oyster mushrooms - these crispy oyster mushrooms are easy to prepare and perfect for serving up as a vegan chicken substitute! Plus, I've included an oven-roasted and air-fried version, adaptable to tons of seasonings, no matter the dish.

12 oz oyster mushrooms
7 oz oat milk (or milk of choice (3/4 cup))
1 lemon (3 Tbsp)
2 oz breadcrumbs (use GF if necessary, 1 cup)
1.5 Tbsp cornstarch (or potato starch)
1/2 tsp salt
1 tsp spice mix

Steps:

  • Combine the cornstarch with your spices of choice and the salt and mix. At the same time, prepare the vegan buttermilk by combining the milk and lemon juice (it's best to let this sit for 5-10 minutes).
  • Place the cornstarch bowl next to the buttermilk bowl, next to the breadcrumb bowl, next to your baking tray or air fryer basket to create a simple "dredging station."
  • Prepare and clean the oyster mushrooms (read FAQs for tips) and allow them to dry if needed.
  • Cover the mushrooms with the cornstarch mixture before dipping each mushroom into the vegan buttermilk and then the breadcrumbs, making sure to coat it well. Repeat until all the mushrooms are fully coated.
  • For this recipe, I've tested air-frying and roasting the oyster mushrooms, so you can do either.Drizzle or spray some oil (spray is best if you have one) over the mushrooms, then arrange them in a single layer within your Air Fryer basket or an oven tray (to roast). It's best to lightly grease the pan/air fryer tray to make sure none stick.
  • Air-fryer: cook the mushrooms, untouched, for 12 minutes at 400ºF/200ºC.Oven: roast the mushrooms for 20 minutes at 400ºF/200ºC.Once cooked, you should have golden brown and super crispy oyster mushrooms ready to enjoy!
  • Fridge: store any leftover crispy oyster mushrooms in an airtight container in the fridge for 3-4 days, lined with a paper towel. They will soften over time - however, you can re-crisp them up somewhat when reheating.You may also be able to freeze the leftover fried oyster mushrooms for later and reheat with an air fryer/oven - though I haven't tried, so I can't guarantee results.Reheat: while technically you can microwave these, the results will be soft. For that reason, I recommend broiling them

I have fried mushrooms. I have air-fried various mushrooms. These are hands down the crispiest and most flavorful fried mushrooms I have ever had. Serve with ranch dressing if desired.

4 ounces oyster mushrooms, trimmed
1 cup buttermilk
1 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground mustard
non-stick cooking spray
2 tablespoons vegetable oil

Steps:

  • Preheat an air fryer to 390 degrees F (200 degrees C).
  • Place oyster mushrooms in a bowl and pour buttermilk on top. Toss to coat mushrooms with buttermilk and marinate for 15 minutes.
  • Meanwhile, add flour, salt, pepper, garlic powder, onion powder, paprika, and ground mustard to a large resealable zip-top bag. Seal and shake until evenly combined.
  • One at a time, take a mushroom out of the buttermilk mixture and drop in the seasoned flour. Toss to coat and transfer to a plate. Once all mushrooms are coated, repeat the breading step until all mushrooms are breaded twice and set them on another plate.
  • Spray the basket of the air fryer with nonstick cooking spray. Spread out breaded mushrooms in the basket of the air fryer in one layer, making sure not to overcrowd (you will need to do this in batches).
  • Air-fry mushrooms for 4 minutes. Liberally brush mushrooms with vegetable oil and air-fry for 4 minutes more. Using tongs, flip the mushrooms over and cook 2 minutes more. Repeat with remaining mushrooms
