Grandma's Creamy Peanut Butter Fudge image

This old-fashioned style of peanut butter fudge is not that easy to find out there. The ones I tend to run across always seem to be the soft, creamy version, which is not what I'm into. If it's going to feel like peanut butter in my mouth, then what's the point? No, I want something that feels dense and firm in my fingers but will almost instantly liquefy in when it hits my tongue.

1 pound powdered sugar
1 ¼ cups unsalted butter
1 ½ cups creamy peanut butter
½ teaspoon kosher salt
1 ½ teaspoons vanilla extract

Steps:

  • Sift sugar through a fine-mesh strainer into a large bowl.
  • Heat butter and peanut butter in a saucepan over medium heat. Whisk to combine and cook until bubbles appear on the edges, 3 to 5 minutes. Stir in salt and vanilla extract. Pour over powdered sugar in the bowl. Mix together using a spatula until smooth.
  • Spread mixture into an 8x8-inch baking pan lined with plastic wrap. Wrap fully and refrigerate until firm enough to cut but not too hard, 1 to 3 hours.
  • Unwrap fudge and cut into small cubes. Let warm up on the counter before cutting if needed.

Different from the other recipes because it uses Mrs. Butterworth's Syrup instead of plain Karo. I found this recipe in a cookbook I bought from a Montana Amish (Yes we have Amish in Montana!) Kitchen/Diner called The Dinnerbell Bakery and Banquets Cook Book. Seriously sinful this spread usually doesn't make it to the bread or pancakes. And of course it makes a HUGE batch, after all it IS an Amish recipe. This is probably where they get the saying "Taste makes Waist".

It is common within Mennonite communities and is sometimes known as "church spread", since it is brought and served at their church gatherings. It is great on bread, bananas, ice cream, graham crackers, ect. Kids, of all ages, will love this!!! ;)

2 cups goat milk
1 cup unsweetened, salted peanut butter
¾ cup butter
1 tablespoon vanilla extract

Steps:

  • Grease a 9-inch square pan.
  • Beat sugar into goat milk in a large, heavy pot; bring to a rapid boil, stirring continually to prevent burning, and cook, stirring constantly, until dark and thick, 30 to 45 minutes. An instant-read thermometer inserted into the center of the mixture should read at least 245 degrees F (118 degrees C).
  • Stir peanut butter, butter, and vanilla extract into the milk mixture immediately upon reaching temperature. Continue to stir until the peanut butter and butter melt completely, the color is uniform, and the mixture appears smooth and glossy; spread into the prepared pan. Cool fudge to room temperature before cutting.
