I put the dry ingredients into baggies and store several baggies in the cupboard. All I have to do in the morning is add the wet ingredients and bake while I am doing my animal chores and I have an amazingly filling breakfast.

1 tablespoon raisins
1 tablespoon flour
1/3 cup non-fat powdered milk
1/4 cup applesauce
1/4 teaspoon cinnamon
1/4 teaspoon baking powder
1 tablespoon Splenda granular

Steps:

  • Preheat oven to 350°F.
  • Spray cookie sheet with baking spray.
  • Mix all ingredients together.
  • Spoon 1 large mound on the baking sheet.
  • Bake 15-20 minutes.

With just a handful of ingredients and a half-hour of time, you can make these hearty, whole-grain cookies that feature the irresistible trio of peanut butter, banana, and chocolate. Mashed bananas are the base of the dough, providing richness and sweetness without any added sugar (except for that in the chocolate chips) and no need for eggs. And if you make sure your chocolate chips are dairy-free, these cookies are vegan, too. Store in an airtight container at room temperature for two to three days. The cookies are best when warm, so reheat for a few seconds in a microwave.

Steps:

  • Preheat oven to 350°F. Line a sheet pan with parchment paper.
  • In a medium bowl, mash bananas with a fork. Stir in oats, peanut butter powder, and salt, if desired. Fold in chocolate chips. Scoop dough by rounded tablespoonfuls onto prepared pan to form 16 cookies; flatten cookies slightly. Bake at 350°F for 20 minutes. Serve warm.

2 teaspoons canola oil
1/2 cup dark brown sugar
1 teaspoon vanilla extract
1/8 teaspoon table salt
1 large egg white
3/4 cup all-purpose flour

Steps:

  • Preheat oven to 375*.
  • In medium bowl, cream butter, oil and brown sugar together.
  • Add vanilla, salt and egg white.
  • Mix thoroughly.

300g plain chocolate (about 55% cocoa solids)
100g bar milk chocolate
100g light muscovado sugar
85g butter , at room temperature
100g peanut butter , crunchy is best
1 medium egg
½ tsp vanilla extract
100g self-raising flour
100g large salted roasted peanuts

Steps:

  • Preheat the oven to 180C/gas 4/fan 160C.Gather together and weigh all the ingredients.
  • Chop 200g/7oz of the plain chocolate into rough, irregular chunks. Chop the milk chocolate in the same way, but keep separate.
  • Break the remaining plain chocolate into a large heatproof mixing bowl. Melt in the microwave on medium for about 11⁄2 minutes (or over a pan of simmering water).
  • Stir the chocolate until melted, then tip in the sugar, butter, peanut butter, egg and vanilla and beat with a wooden spoon until well mixed. Stir in the flour, all the milk chocolate chunks, the nuts (no need to chop) and half the plain chocolate chunks. The mixture will feel quite soft, and drop easily from the spoon if you shake it.
  • Drop big spoonfuls in 12 piles on to 2 or 3 baking sheets, leaving room for them to spread (you may need to bake in batches). Stick the remaining chunks into the cookies (2-3 pieces in each).
  • Bake for 10-12 minutes until they are tinged very slightly darker around the edges. The smell will let you know they are ready. They will be soft in the middle, but will crisp up as they cool. (Cook for longer and you'll have crisper cookies.) Let them cool and firm up for a few minutes on the baking sheet (they'll break if you move them while still hot), then lift off with a wide spatula on to a cooling rack. They will keep crisp in an airtight tin for 3-4 days.
