1 cup chicken broth
1 cup orange juice
1/2 cup honey
1 tablespoon lemon juice
1 tablespoon cider vinegar
1 tablespoon reduced-sodium soy sauce
1 teaspoon grated orange zest
1 teaspoon ground ginger
1/2 teaspoon salt
4 bone-in chicken breast halves (10 ounces each)
1 tablespoon cornstarch
2 tablespoons water
4 cups hot cooked rice
Chopped green onions, orange slices and parsley sprigs, optional

Steps:

  • In a saucepan, combine the first nine ingredients. Bring to a boil. Remove from the heat; cool. Pour 1-1/3 cups marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 4-8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain chicken, discarding marinade. Grill, covered, over medium heat for 12-15 minutes on each side or until juices run clear. Meanwhile, combine cornstarch and water in a small saucepan until smooth; stir in reserved marinade. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove and discard skin from chicken. Serve chicken over rice; drizzle with sauce. Garnish with green onions, orange slices and parsley if desired.

1 tbsp honey
1 tbsp wholegrain mustard
2 garlic cloves, crushed
zest and juice 1 lemon
4 chicken thighs, skin on
300g new potatoes, unpeeled, smaller left whole, bigger halved
1 tbsp olive oil
100g spinach
100g frozen peas

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a small bowl, mix together the honey, mustard, garlic and the lemon zest and juice. Pour the marinade over the chicken thighs and season.
  • Put the chicken, skin-side up, on a large baking tray, then dot the new potatoes in between them. Drizzle the oil over the potatoes and sprinkle with sea salt. Roast in the oven for 35 mins until the chicken skin caramelises and is charred in places.
  • Add the spinach and peas to the roasting tray. Return to the oven for 2-3 mins until the spinach has begun to wilt and the peas are hot and covered in the mustardy sauce.

If you like General Tzo's Chicken, you will probably like this flavorful dish. It is both sweet and spicy and is very easy to make. It can be served with rice, or you can leave the chicken breasts whole, glazed with the spicy honey-orange sauce. It is very easy to adjust the ingredients to fit your family's taste. This recipe was adapted from a recipe that was given to me by a friend.

1/2 cup honey
4 tablespoons frozen orange juice concentrate (thawed)
2 teaspoons grated orange zest
3 -4 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes, adjust to taste
4 boneless skinless chicken breasts
1/4 cup flour
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon vegetable oil
2 -3 green onion stems, chopped
3 tablespoons fresh parsley, chopped

Steps:

  • In small bowl, combine honey with juice concentrate, orange zest, garlic, and the red pepper flakes. Set aside.
  • Pound chicken to approximately 1/4 " thickness. Cut into bite size pieces.
  • In a plastic bag mix together the flour, garlic powder, salt and pepper. Toss chicken pieces to lightly coat with flour mixture.
  • In a large non-stick skillet, heat butter and oil over medium-high heat. Add chicken and stirfry until just cooked through.
  • Pour honey mixture over chicken and cook, stirring to coat all chicken pieces with spicy honey-orange glaze. Sprinkle with parsley and green onion.
  • Tip: As stated above, you can leave the chicken breasts whole. Pour the glaze over chicken that has been cooked through, turning chicken to coat as sauce begins to thicken, about 2 minutes. Serve chicken breasts with honey-orange glaze spooned over the top. Garnish with parsley and green onions.

This is a moist and flavorful light lunch or dinner recipe. The flavors pop in your mouth with the first bite! It's my adaptation of a recipe I got from Cooking Light May 2010. Hubby requests if frequently, that's how good it is! We sometimes serve Parmesan Orzo on the side.

2 (6 ounce) boneless skinless chicken breasts
1 (5 ounce) package pre-washed baby spring greens mixed salad greens
1 tablespoon fresh lemon juice (to taste)
1 tablespoon white wine vinegar (to taste)
2 tablespoons minced shallots
1/4 teaspoon kosher salt, divided
1/4 teaspoon fresh ground black pepper, divided
1 dash sugar
1/2 cup dry breadcrumbs (plain or seasoned)
1/2 cup panko breadcrumbs
2 tablespoons grated parmesan cheese
1/8 teaspoon garlic powder
1/4 teaspoon grill-mates for chicken
1/4 cup flour
1 egg
1 tablespoon water
3 tablespoons olive oil, divided
2 lemon wedges
1 tomatoes, cut into wedges
1 Asian pear, peeled and cut into wedges

Steps:

  • Combine the lemon juice, white wine vinegar, shallots, 1/8 tsp salt, 1/8 tsp pepper and sugar in mixing cup. Let stand 15-30 minutes while preparing chicken.
  • Place each chicken breast in between 2 sheets of heavy duty plastic wrap, and pound until 1/4 inch-1/2 inch thickness, which ever thickness you prefer, using the smooth side of a meat mallet. Set aside.
  • Combine bread crumbs, Panko, parmesan cheese, garlic powder, and Grill-Mates in a shallow bowl. Beat egg and water in another shallow bowl. Place flour in another shallow bowl and set up a work station in this order. Flour, egg, and bread crumb mixture.
  • Sprinkle chicken with remaining salt and pepper. First dredge each chicken breast first into the flour, then into the egg, and lastly into the bread crumb mixture. Make sure each breast is coated well. Place chicken on a wire rack and let stand 5-10 minutes.
  • Heat 2 TBSP olive oil in a large non stick skillet over medium-high heat. Add chicken and cook 3 minutes, turn and cook 2 minute more, or until browned on both sides.
  • Place chicken on a clean wire rack, put in to a 200* preheated oven for 5-10 minutes to rest.
  • While chicken is resting in the oven, add the remaining 1 TBLS olive oil to the shallot- vinegar mixture. Whisk until blended.
  • Place salad greens in a large serving bowl, pour dressing mixture over top and toss gently with tongs, until salad is completely coated with dressing.
  • Divide salad mixture between 2 plates, top with chicken breasts, and garnish with lemon, tomato, and pear wedges.
  • Enjoy!
  • Note: This may sound a bit labor intensive, it's really not, and it's definitely worth it in the end result. Please try this as is at least once, I'm sure you wont be disappointed!

3 tablespoons soy sauce
2 tablespoons honey
¼ cup orange juice

½ teaspoon dried oregano

Steps:

  • To Make Marinade: Combine the soy sauce, honey, orange juice, garlic, oregano, pepper and paprika. Mix all together and pour over chicken pieces. Refrigerate for 2 to 4 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove chicken from refrigerator. Place chicken and marinade in a 9x13 inch baking dish and bake, uncovered, in preheated oven for 1 1/2 hours. Baste once.

1 pound chicken strip tenders, cut into 1-inch pieces
1 tablespoon olive or vegetable oil, divided
1 teaspoon Morton® Coarse Kosher Salt, divided
½ teaspoon thyme, divided
2 garlic clove (blank)s garlic cloves, minced
1 (11 ounce) can mandarin oranges, drained
2 tablespoons reserved mandarin orange juice
1 cup prepared honey-mustard dressing
10 ounces baby spring greens
1 Granny Smith or Fuji apple, cored and thinly sliced

Steps:

  • Brush chicken with 1-1/2 teaspoons olive or vegetable oil; season with 1/2 teaspoon Morton® Kosher Salt and 1/4 teaspoon thyme. Cover and refrigerate for 30 minutes.
  • In medium skillet, heat remaining 1-1/2 teaspoons oil; saute chicken pieces until chicken is cooked through and juices run clear. (*Internal temperature chicken breast pieces 170 degrees F).
  • In small bowl, combine garlic, reserved orange juice, remaining 1/2 teaspoon Morton® Kosher Salt and remaining 1/4 teaspoon thyme with honey-mustard dressing. Drizzle cooked chicken with 2 tablespoons dressing mixture; set aside.

3/8 cup brown sugar
2 tablespoons low sodium soy sauce

2 lbs boneless skinless chicken breasts (cut into bite-sized pieces)
2 egg whites (you can use 1 whole egg but the batter won't be as light)
1 tablespoon water
3/4 cup cornstarch
3/8 cup flour
3/4 teaspoon salt
3/4 teaspoon ground black pepper
vegetable oil
1 tablespoon vegetable oil
3 -4 garlic cloves, minced
1 teaspoon freshly minced ginger
1/4 cup chopped green onion
1/4 teaspoon red pepper flakes (or more if you like it hot)
1 cup frozen peas

Steps:

  • Orange Sauce:.
  • In small bowl, combine orange juice, brown sugar, soy sauce, rice wine, cornstarch and orange zest. Set aside.
  • Chicken:.
  • In a small bowl, whisk together the egg whites and water. Stir in chicken pieces.
  • In a pie plate, stir together cornstarch, flour, salt and pepper with a fork or clean whisk.
  • Taking a few pieces of chicken at a time, dip chicken into the flour mixture.
  • In a large skillet, add vegetable oil to cover pan to a 1/2-inch depth. Heat skillet over medium to medium-high heat. Brown chicken, a few pieces at a time. Remove chicken and allow to drain on paper-towel lined plate or rack. Continue until all chicken is browned. (Note: You may need to adjust heat up or down to maintain oil temperature as you cook.) Set aside.
  • Stir-fry:.
  • In a separate skillet or wok, heat 1-2 tablespoons oil over medium-high heat. Add garlic and ginger and stir until fragrant (just a few seconds). Stir in green onions, red pepper flakes, and peas.
  • Add orange sauce and stir until thickened.
  • Stir in chicken and simmer until evenly coated and heated through.
  • Serve over steamed rice.

3 cups crushed corn flakes
1/2 cup honey
2/3 cup orange marmalade

  • Pre-heat oven to 350 degrees.

  • Dredge chicken in crushed cornflakes until well coated.
  • Place chicken on a sprayed baking sheet or in a glass baking dish.
