1/2 cup sugar
1 1-inch piece ginger, peeled and thinly sliced
1 vanilla bean, split lengthwise and seeds scraped out
1 lemon
5 large navel or blood oranges
2 mangoes, peeled and diced
2 firm bananas, peeled and diced
5 kiwis, peeled and diced
12 kumquats, very thinly sliced crosswise, seeds removed
1 cup pomegranate seeds (from 1 pomegranate)

Steps:

  • Combine the sugar, 2 cups water, the ginger and vanilla seeds and pod in a saucepan. Use a vegetable peeler to remove wide strips of zest from the lemon and 1 orange, add to the saucepan and bring to a boil over medium-high heat. Reduce the heat and simmer 5 minutes. Refrigerate until cold.
  • Meanwhile, peel the remaining oranges with a paring knife, cutting along the natural curve of the fruit. Hold an orange over a large bowl and cut along both sides of each membrane to free the segments, letting them fall into the bowl. Squeeze each empty membrane to release the juices. Repeat with the remaining oranges. Add the mangoes, bananas, kiwis, kumquats and pomegranate seeds and gently toss. Pour the syrup over the fruit and chill overnight.
  • Before serving, remove the citrus zest, ginger and vanilla pod. Spoon the fruit and syrup into bowls.
  • To remove pomegranate seeds, cut the fruit into quarters, then break apart in a bowl of water. Skim off the pith that floats to the top and drain the seeds.

1 (20 ounce) can pineapple chunks
1/2 cup sugar
2 tablespoons cornstarch
1/3 cup orange juice
1 tablespoon lemon juice
1 (11 ounce) can mandarin oranges (drained)
3 -4 unpeeled apples, chopped (use green and red)
2 -3 bananas (sliced)

Steps:

  • Drain pineapple, reserving 3/4 cup juice.
  • In a saucepan, combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly; cook and stir 1 minute longer. Remove from the heat; set aside.
  • In a bowl, combine pineapple chunks, oranges, apples and bananas. Pour warm sauce over the fruit; stir gently to coat.
  • Cover and refrigerate.

Winter Salad Recipes: Pear Salad with Balsamic & Walnuts image

This quick & easy pear salad is one of our favorite winter salad recipes!

4 cups mixed salad greens
2 ripe pears (sliced)
1 fennel bulb (sliced paper thin*)
Lemon wedge
2 tablespoons dried cranberries
1 tablespoon chopped pecans
1 tablespoon chopped walnuts
1 tablespoon chopped hazelnuts (or more pecans or walnuts)
⅓ cup shaved pecorino
Balsamic vinaigrette ((store bought, or a 50/50 mix of olive oil & balsamic vinegar))
Sea salt and freshly ground black pepper

Steps:

  • Assemble the salad with the mixed greens and top with the pears and fennel. Squeeze a little lemon over the pears and fennel and toss.
  • Top with the cranberries, pecans, walnuts, hazelnuts, and pecorino. Drizzle with balsamic vinaigrette. Season to taste with salt and pepper.

2 carrots, peeled and cut into matchsticks
handful walnuts, out of their shells, roughly chopped
4 tbsp walnut oil
1 tbsp sherry or red wine vinegar
½ tsp Dijon mustard
salt and freshly ground black pepper

Steps:

  • Place the sliced cabbage, carrots and walnuts into a large bowl.
  • In a small bowl, whisk together the walnut oil, sherry or red wine vinegar and mustard. Season, to taste, with salt and freshly ground black pepper, then drizzle over the salad and toss well to coat.
  • To serve, pile onto a serving plate.

4-6 large eggs
5 Tbsp. unseasoned rice vinegar
1 Tbsp. honey
1 Tbsp. tamari or soy sauce
1/2 tsp. kosher salt
1/4 cup extra-virgin olive oil, plus more for drizzling
1 bunch curly kale, stems removed, torn into bite-size pieces
1 lb. brussels sprouts, trimmed, thinly sliced
1 cup store-bought or homemade hummus
1 cup Seedy Power Sprinkle
Flaky sea salt

Steps:

  • Bring a medium pot of water to a boil over high heat. Gently lower eggs into water and cook 7 minutes. Transfer to a large bowl of ice water and let sit until cool enough to handle. Peel and slice in half lengthwise.
  • Meanwhile, whisk vinegar, honey, tamari, kosher salt, and 1/4 cup oil in a large bowl until smooth. Add kale and brussels sprouts. Toss and massage with your hands until kale is darker in color and vegetables are coated in dressing.
  • Swoosh about 1/4 cup hummus onto side of each bowl. Top with salad and egg halves; season eggs with sea salt. Drizzle oil over and top with seedy sprinkle.
  • Do Ahead: Unpeeled eggs can be cooked 2 days ahead. Transfer to an airtight container and chill. Kale and brussels sprouts salad can be made 8 hours ahead. Cover and chill.

1 1/4 tsp. kosher salt, divided
1/2 lb. marinated artichoke hearts from a 12-oz. jar (about 1 1/2 cups), drained
4 oz. mini pepperoni rounds
2 (15.5-oz.) cans chickpeas, drained, rinsed, dried
1/2 head of iceberg lettuce, cut into 1" pieces (about 8 cups)
1/2 head of radicchio, cut into 1" pieces (about 3 cups)
4 stalks celery, thinly sliced
2 navel oranges, peel and pith removed, cut into 1/2" pieces
1/2 lb. provolone cheese, cut into 1/2" pieces
1 cup pitted black olives, thinly sliced

Steps:

  • Preheat oven to 450°F. Whisk orange juice, vinegar, garlic, oregano, mustard, 1/4 cup oil, and 3/4 tsp. salt in a large bowl.
  • Toss artichokes, pepperoni, chickpeas, and 2 Tbsp. oil on a rimmed baking sheet; season with remaining 1/2 tsp. salt. Roast, tossing halfway through, until chickpeas are deep golden brown and pepperoni is crisp, 18-20 minutes.
  • Add iceberg lettuce, radicchio, celery, oranges, cheese, and olives to bowl with dressing and toss to combine. Add chickpea mixture to salad and toss again to combine. Drizzle with more oil.

1 x 170g ready-to-bake garlic bread
2heads of chicory
2 celery sticks, cut into thin diagonal slices
1bunch of radishes , trimmed and quartered
50g shelled walnut or pecans, toasted and roughly chopped
2 red-skinned eating apples , cored and cut into slim wedges
175g stilton (or any leftover cheese)
4-5 tbsp ready-made honey and mustard dressing, to serve

Steps:

  • Preheat the oven and cook the garlic bread according to packet instructions.
  • While the bread is in the oven separate the chicory into leaves and toss in a large bowl with the celery, radishes, nuts and apples. Crumble the stilton in large chunks over the top.
  • To finish the salad, cut half the garlic bread into the marked slices. Cut the remainder into chunks and toss into the salad with as much dressing as you like. Serve with the remaining garlic bread on the side.

4 medium carrots, diced
3 onions, quartered (I used a mix of red and brown)
2 tablespoons olive oil
1 tablespoon honey
1/4 teaspoon cinnamon, ground
1 cayenne pepper, ground
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
150 g walnuts, coarsely chopped
150 g dried cranberries
200 g spelt berries (or use a mix of different grains and rice)
175 g feta cheese, cubed
1/2 bunch fresh parsley, chopped (optional)
2 tablespoons balsamic vinegar
3 tablespoons olive oil
1 garlic clove, minced
1 teaspoon Dijon mustard
salt and pepper

Steps:

  • On a paper-lined baking sheet combine carrots, onions, olive oil, honey and spices.
  • Bake in the preheated oven at 190°C/375°F for 25 minutes until soft and caramelised.
  • Add the walnuts and cranberries and bake for another 5 minutes.
  • Meanwhile combine spelt berries (or grain mix), 500 ml water and a pinch of salt in a large pot. Bring to a boil, then reduce the heat and cook covered for 25 minutes or until tender. Drain if necessary and set aside.
  • In a large serving bowl combine the baked vegetables, spelt berries, parsley (is using) and feta cheese.
  • For the dressing combine all of the ingredients and then pour it over the salad. Mix well and enjoy either warm or cold.
