Wilted Spinach Salad with Hot Bacon Dressing image

Warm crispy bacon is the star of this simple spinach salad. We upped the ante with tender mushrooms, fresh red onion and hard-boiled eggs for a hearty salad your whole family can enjoy.

One 5-ounce package baby spinach
4 large eggs
8 slices bacon, cut crosswise into 1/4-inch-thick pieces
One 3.5-ounce package cremini mushrooms, sliced
1 garlic clove, minced
Kosher salt and freshly ground black pepper
3 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
1/2 small red onion, thinly sliced

Steps:

  • Place the spinach in a large bowl and leave at room temperature. Bring a medium pot of water to a boil over medium-high heat. Use a slotted spoon to gently lower the eggs into the water. Boil until both the whites and yolks are set (hard-boiled), about 10 minutes. Transfer to a small bowl filled with ice water and cool completely. Once cool, peel the eggs and cut each into quarters.
  • Meanwhile, put the bacon in a large skillet and set over medium heat. Cook, stirring occasionally, until golden brown and crisp, 6 to 8 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate to drain. Remove half of the bacon fat to a small bowl and reserve.
  • Return the skillet and remaining bacon fat to medium heat. Add the mushrooms, garlic, 1/4 teaspoon of salt and a few grinds of black pepper to the same skillet. Cook, stirring occasionally, until tender, 3 to 4 minutes. Pour in the reserved bacon fat, vinegar, mustard and honey and whisk until smooth and emulsified. Taste and season with more salt and pepper.
  • Pour the hot bacon dressing over the spinach and toss until evenly coated and slightly wilted. Transfer to a platter and top with the eggs, red onion and reserved bacon.

1 tablespoon bottled minced garlic

Steps:

  • In a bowl, mix the olive oil, vinegar, lemon juice, garlic, salt, and pepper.

10 ounces spinach leaves, washed and partly dried
1 tablespoon unsalted butter
1 tablespoon olive oil
2 -4 cloves garlic, minced
3 tablespoons minced fresh ginger
1/3 cup orange juice
1/2 teaspoon coarse salt

Steps:

  • In a large nonstick skillet, pile the spinach and turn the heat to high.
  • Using tongs, gently and continuously toss the spinach over the heat until it's all wilted (they'll turn a darker green), 2 to 3 min.
  • Don't overcook; they should collapse but still have some body.
  • Transfer them to a colander and let any excess liquid drip away.
  • Wipe the skillet clean if necessary.
  • In the same skillet, heat the butter and oil over medium-low heat.
  • When the butter is melted, add the garlic and ginger and sauté until softened and fragrant, about 2 min.
  • Add the orange juice, turn the heat to high, and reduce the liquid to a glazy consistency, no more than 1 min.
  • ;you'll have 1-1/2 to 2 Tbs.

1 large orange, peeled
8 cups baby spinach leaves
1/2 cup vidalia onion (Maui or Walla Walla onions are good substitutions)
1/4 cup pecan pieces, toasted
1/4 cup red wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons fresh tarragon leaves, minced finely
1 tablespoon fresh orange juice
fresh ground black pepper, to taste

Steps:

  • Lightly toast the pecan pieces in a clean cast iron skillet and set aside to cool.
  • Grate zest from orange and set aside.
  • Slice the oranges thinly into small crescents (or dice), reserving any juice that accumulates to be used for the salad dressing.
  • Prepare salad dressing by combining all the ingredients in a non-reactive bowl. Whisk well.
  • Wash spinach leaves well and dry using salad spinner. Slice or dice the onions.
  • In a wok or saute pan, place the spinach and onions in a steamer basket. Add 1/4 cup water, cover pan, bring to boil them reduce heat to low and and steam only until spinach leaves {{JUST}} wilt but maintain their bright green color. This should only take about 5 minutes or so. Check spinach periodically to make sure it is not cooking too long.
  • Arrange the steamed vegetables on individual salad plates. Top with the cut up oranges, and sprinkle top of salad with the toasted pecan pieces.
  • Serve salad dressing on side.

1 pound baby spinach leaves
1/4 cup olive oil, divided
1/4 pound prosciutto, cut in strips
1 garlic clove, minced
1 portobello mushroom cap, sliced
1/2 red onion, cut in rings
3 tablespoons balsamic vinegar
1 tablespoon honey
3 ounces Gorgonzola
Salt and pepper

Steps:

  • Trim, wash and dry the spinach thoroughly and place in a salad bowl.
  • Coat a saute pan with 2 tablespoons olive oil and put over medium heat. Fry the prosciutto and garlic for a minute to flavor the oil, and then add the mushrooms and onions. Saute the mushrooms and onions until they are slightly brown and tender, about 3 minutes.
  • Scrape the mixture on top of the spinach, return the pan to the stove. Add balsamic vinegar and scrape up the bits at the bottom of the pan. Add remaining oil and honey. Swirl pan around for a minute to warm the vinaigrette.
  • Pour the vinaigrette over the salad, top with Gorgonzola. Season with salt and pepper, toss, and serve immediately.

1 pound triple washed spinach, stems removed

Steps:

  • Heat a skillet over medium heat. Add oil and garlic. Saute garlic in oil 2 or 3 minutes. Add spinach to the pan in stages. Fill the pan with leaves and turn leaves in warm oil until they wilt. Add more spinach to the skillet and repeat the process until all of the spinach is incorporated. Season the wilted spinach with salt and pepper and nutmeg, then serve.

  • This dish takes only 5 minutes to prepare, so begin preheating the skillet 7-8 minutes before you are ready to sit down and eat.
  • Heat a medium sized skillet over medium heat. With the flat side of your knife, make a garlic paste with smashed garlic and salt. Melt butter into pan. Add garlic paste to the pan and the spinach in bunches, adding more spinach to the pan as it wilts down. When all of the spinach is wilted, add wine and turn to coat. Let wine cook down a minute or 2. Season spinach with salt and pepper and serve.

1 teaspoon Dijon mustard
1 1/4 teaspoons grated orange zest (from 1 orange)
2 medium oranges, peel and pith removed, quartered through the ends and sliced crosswise into 1/4 inch thick pieces

1 cup sliced almonds, processed into fine crumbs in the food processor
1/2 cup panko breadcrumbs (Japanese-style bread crumbs)
4 boneless skinless chicken cutlets (5 to 6 ounces)
1/2 cup vegetable oil
5 ounces Baby Spinach (about 6 cups)
1 small shallot, minced (about 2 tablespoons)
1 orange, cut into 4 wedges for garnish (optional)

Steps:

  • Lightly beat the eggs, mustard, 1 teaspoon orange zest, ½ teaspoon salt, and ¼ teaspoon pepper together in a shallow dish. Mix the almonds and panko in a separate shallow dish. Working with one piece of chicken at a time, dip the chicken into the egg mixture using tongs, turning to coat well and allowing excess to drip off. Drop the chicken into the nut mixture and press the nuts into the chicken with your fingers. Transfer the breaded chicken to a wire rack set over a baking sheet and repeat with the remaining chicken. Adjust an oven rack to the middle position and heat the oven to 200 degrees.
  • Heat 6 tablespoons oil in a heavy-bottomed, 12-inch nonstick skillet over medium-high heat until just smoking. Place the chicken in the skillet gently and cook until golden brown and crisp on the first side, about 2½ minutes. Using tongs, flip the chicken; reduce the heat to medium and continue to cook until the meat feels firm when pressed gently, the second side is deep golden brown and crisp, and the chicken is no longer pink in the center, about 2 minutes longer. Transfer the chicken to a paper towel-lined plate and place the plate in the oven. Discard the oil in the skillet and, using tongs and paper towels, wipe the skillet clean.
  • Place the spinach in a large bowl. Heat 1 tablespoon oil in the cleaned skillet over high heat until just smoking. Add the orange slices and cook until lightly browned around the edges, 1½ to 2 minutes. Remove the pan from the heat and add remaining 1 tablespoon oil, shallot, remaining ¼ teaspoon zest, ¼ teaspoon salt, and 1/8 teaspoon pepper and allow residual heat to soften the shallot, 30 seconds. Pour the warm dressing with the oranges over the spinach and toss gently to wilt. Remove the chicken from the oven and serve it immediately with the salad and orange wedges.

I saw this recipe made on an Italian cooking show, it was all in Italian, but the recipe was so easy to follow I didn't need to know the language. You can use either fresh spinach, or frozen, but if you do, make sure the excess moisture has been squeezed out. I served it with roasted chicken.
