14 oz extra firm tofu
2 tablespoons low sodium soy sauce
2 ½ tablespoons nutritional yeast
1 teaspoon garlic powder
½ teaspoon kosher salt
2 tablespoons grapeseed oil, or other neutral oil
½ teaspoon hot sauce
¼ cup unsweetened soy milk
¾ teaspoon apple cider vinegar
½ cup all purpose flour
1 tablespoon cornstarch
½ cup unsweetened soy milk
1 ½ teaspoons apple cider vinegar
¾ cup panko breadcrumbs
1 ½ tablespoons nutritional yeast
1 ½ teaspoons garlic powder
1 ½ teaspoons paprika
1 ½ teaspoons onion powder
¾ teaspoon kosher salt
¾ teaspoon black pepper
⅛ teaspoon cayenne
1 tablespoon olive oil, if baking tofu
4 cups canola oil, if deep-frying tofu
nonstick cooking spray, if baking tofu
¼ cup honey mustard
¼ cup barbecue sauce

Steps:

  • Drain the tofu, then wrap in a clean dish towel and place a heavy object, such as a cast iron pan, on top. Press the tofu for 20-30 minutes, until the towel is soaked through.
  • Place the pressed tofu back in its container and wrap with reusable wrap. Freeze for at least 6 hours, up to overnight.
  • Remove the tofu from the freezer and place in a microwave-safe bowl over a clean dish towel. Defrost in the microwave until completely thawed and the dish towel is soaked through, 10-15 minutes.
  • Wrap the tofu in a clean dish towel and press again for another 20-30 minutes, until the dish towel is soaked through and the tofu is half its original thickness.
  • While the tofu is pressing, make the marinade: In a medium bowl, whisk together the soy sauce, nutritional yeast, garlic powder, salt, grapeseed oil, hot sauce, soy milk, and apple cider vinegar.
  • Tear the tofu into bite-size pieces that resemble chicken tenders or nuggets. Add the tofu to the marinade and stir to coat. Marinate for at least 30 minutes at room temperature, or up to 1 hour, stirring halfway through.
  • While the tofu is marinating, set up the breading station: In a shallow bowl, mix together the flour and cornstarch. In a separate shallow bowl, mix together the soy milk and apple cider vinegar. In a third shallow bowl, mix together the bread crumbs, nutritional yeast, garlic powder, paprika, onion powder, salt, pepper, cayenne, and olive oil (only if baking the tofu).
  • If deep-frying the tofu, heat the canola oil in a medium pot over medium heat until it reaches 375°F (190°C).
  • Alternatively, if baking the tofu, preheat the oven to 400°F (200°C).
  • When the tofu is done marinating, coat the pieces first the flour mixture, then in the soy milk mixture, then again in the flour mixture, again in the soy milk mixture, and finally in the bread crumb mixture.
  • If deep-frying the tofu, add the tofu to the hot oil in batches and cook for 90-120 seconds, until golden brown and crispy. Remove from pan with a slotted spoon and transfer to a plate lined with paper towels to drain.
  • If baking the tofu, line a baking sheet with a nonstick mat or parchment paper and grease with nonstick spray. Add the tofu to the baking sheet and spray the tops with nonstick spray, then bake for 20-25 minutes, flipping halfway through, until golden brown.
  • Serve with honey mustard or barbecue sauce for dipping.

Steps:

  • Serve the tofu as desired.

4 cloves garlic, minced, divided
2 teaspoons fresh ginger, grated
1 tablespoon honey
1 teaspoon sriracha
¼ cup lime juice
¼ cup reduced sodium soy sauce
1 block extra firm tofu
2 tablespoons sesame oil
1 cup sliced white onion
1 cup sliced carrot
1 cup sliced red bell pepper
½ cup edamame, frozen, thawed
3 cups soba noodle, cooked
1 tablespoon sesame seed
green onion, chopped, to serve

Steps:

  • In a medium bowl, mix together 2 cloves of garlic, the ginger, honey, Sriracha, lime juice, and soy sauce. Set aside.
  • Wrap the tofu in a dish towel, then place a plate on top. Let drain for 10-15 minutes, then remove the plate, unwrap the tofu, and slice into cubes.
  • In a wok or large frying pan, heat the sesame oil over medium heat. Add the tofu and pan fry for 5-7 minutes, stirring occasionally.
  • Add the remaining 2 cloves of minced garlic and the onion and stir until softened, about 1 minute.
  • Add the carrot, bell pepper, and edamame and cook, stirring occasionally, until tender, 2-3 minutes.
  • Add the soba noodles, reserved sauce, and sesame seeds. Cook for 1-2 minutes, stirring occasionally, until warmed through. Remove the pan from the heat.
  • Garnish with green onions, if desired.

A tasty mix of tofu, chicken and vegetables in a light sauce. Healthy - low on fat and sodium but NOT on flavor!

3/4 lb boneless skinless chicken breast half, cubed
14 ounces firm tofu
8 medium cremini mushrooms, sliced
1 large carrot, coarsely grated
1/2 medium yellow onion
3/4 inch fresh gingerroot, v coarsely grated
2 -3 garlic cloves
1/2 cup sugar snap pea
5 sprigs cilantro
1/2 teaspoon fish sauce
2 -3 tablespoons light soy sauce
1 tablespoon olive oil
1/3 cup water
1 dash pepper
1 dash hot chili pepper, to taste
1 cup rice

Steps:

  • Start the rice first in a medium non-stick pot, and get it going while you are chopping ingredients. It will take about 20-25 minutes to cook the rice. Alternatively, you can just use a rice cooker.
  • Additionally, you will need 2 other sauce pans, one shallow one to cook tofu, and another deep one to cook the main ingredients.
  • Heat medium sauce pan on medium heat, and add soy sauce when the pan is hot. Add tofu, cover and cook for 5-7 minutes. Stir tofu and cook (covered) for another 5-7 minutes.
  • A few minutes after starting the tofu cooking, heat another deep sauce pan. It is important that the tofu and main ingredients finish around the same time so that the tofu does not dry out. If the tofu does finish early, just turn off the heat and let it sit until you are ready to add it to the main ingredients in the second sauce pan.
  • Bring the second pan to med-high heat, add the olive oil, and then add the garlic, ginger, and onion. Stir fry for a 4-5 minutes or until the onion becomes a little soft (according to your tastes). Add the mushrooms, sugar snap peas, and carrots. Add the fish sauce and water. Stir fry for another 3-5 minutes. Reduce the heat to a medium setting, and add the chicken.
  • Cook for another 5-7 minutes, depending on the size of the chicken cubes, You want to make sure the chicken is cooked through, but not too dry. Add the tofu from the first pan and stir fry for one additional minute.
  • Serve the rice and the chicken tofu dish together. I usually put the rice in first, add some chicken-tofu, and then a few sprigs of cilantro, and mix it up. That's it.

3 tablespoons light soy sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
1 tablespoon sesame seeds

1 1/2 teaspoons garlic, minced
1/2 teaspoon red pepper flakes (optional) or 1/2 teaspoon Tabasco sauce (optional)
1 lb boneless chicken, cut in thin strips
14 ounces firm tofu, cubed (optional)
1 cup snow peas or 1 cup sugar snap pea, cut into 1-inch pieces
12 ounces spaghetti
1/2 cup green onion, chopped

Steps:

  • In a small bowl, whisk together first nine ingredients and set aside.
  • In large skillet over medium-high heat saute chicken in a small amount of olive oil until meat is cooked through or tofu is lightly browned. Remove from skillet and set aside.
  • Add snow peas or sugar snap peas to skillet. Add soy sauce mixture and bring to a boil, stirring frequently. Reduce heat and simmer until sauce thickens, approximately 3 minutes.
  • Mix in cooked spaghetti and green onions. Top with chicken/tofu and serve immediately.
  • Variation: Add other vegetables according to the length of time needed to cook until crisp-tender. Add first: thinly sliced carrots. Next: sliced, peeled broccoli stems, onions, bell pepper strips, asparagus, chopped Swiss chard stems, cabbage. Next: broccoli florets, along with soy sauce mixture. Next: sliced mushrooms and summer squash. Last: fresh greens like spinach. You can use any combination of the vegetables listed above.

1 (14 ounce) can bean sprouts

1 head broccoli, chopped

  • Cut up all your vegetables. I like to cut them into strips, but you can cut them anyway you like.
  • Put 2 tbs of oil into your wok or pan and let it heat.
  • Par-cook the broccoli then remove from pan.
  • Put remaining oil into wok or skillet and let it heat.
  • Cook chicken.
  • Add tofu.
  • Add 1/2 of stir fry sauce.
  • Stir until chicken is cooked through.
  • Add all vegetables and the remaining stir fry sauce.
  • Stir until all vegetables are cooked.
  • Serve over rice.

3 tbsp low-sodium soy sauce
1½ tbsp honey
1 tbsp white wine vinegar
300g tofu, cut into chunks
2 tbsp sunflower oil
2 garlic cloves, sliced
2cm piece ginger, sliced
2 carrots, sliced into thin batons
300g broccoli, cut into small florets
1 red pepper, sliced into strips
1 tsp cornflour
1 spring onion, sliced
2 tsp sesame seeds
small bunch of coriander, chopped

Steps:

  • Stir together the soy sauce, honey and vinegar in a bowl, then set aside.
  • Pat the tofu chunks dry, then season well. Heat half the oil in a wok or large frying pan over a high heat. Fry the tofu for 5 mins until golden, stirring occasionally. Add the garlic and ginger and fry for 1 min more. Tip the tofu mixture into a bowl, pour over half the soy dressing and set aside.
  • Add the remaining oil to the wok. Add the vegetables and cook for 5 mins until beginning to turn golden, then add a good splash of water and cook for 3-5 mins more until tender.
  • Stir the cornflour and 1 tbsp water into the remaining soy dressing, then tip into the wok, allow to bubble for 30 seconds, stirring to coat everything in the sauce. Sprinkle over the spring onion, sesame seeds and coriander. Serve with rice.
