BREAD MACHINE HONEY-OAT-WHEAT BREAD
Although dense, this bread is very flavorful and has a nice old-fashioned, homemade taste. This recipe yields a 2 1/2 pound loaf.

Steps:
- Place the yeast, sugar, and water in the pan of a bread machine. Allow yeast to dissolve and foam, about 10 minutes. Meanwhile, mix the all-purpose flour, whole wheat flour, rolled oats, powdered milk, and salt in a bowl; set aside. Add the honey, vegetable oil, and butter to the yeast mixture, and pour the flour mixture on top.
- Select the Dough cycle; press start. Allow the bread machine to complete the cycle, about 1 1/2 hours, then transfer the dough to a 9x5-inch loaf pan sprayed with cooking spray. Allow the bread to rise for 1 hour in a warm place.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake in the preheated oven until the top is golden brown, about 35 minutes.

HONEY WHEAT OATMEAL BREAD - ALL WHOLE GRAIN VERSION
This is now our daily bread -- my daughter makes it several times a week in our bread machine. This has replaced the earlier version that I have posted because we've tried to eliminate white flour from our diets wherever possible. The vital wheat gluten is what makes it possible for the bread to rise nicely. Gluten is the protein part of the wheat kernel, and you can buy a powdered form of it at most health food or whole food stores -- that's what you need for this recipe to work. Without the gluten, it'll be a brick. So, get the gluten unless you want to build a bread wall. Cooking time is for the white bread cycle on our machine. Your time may vary.

- Put ingredients into bread pan in the order suggested by the manufacturer of the bread machine.
- If you're going to use a timer, it is vital to keep the yeast away from both the liquids AND the salt.
- I make this on the white bread cycle and it comes out great, but you may wish to use the whole wheat cycle.
- I never noticed any difference except that the whole wheat cycle took a lot longer.
- Your machine may yield different results, tho.
- If you like crusty bread, just let the finished bread set on a rack to cool.
- If you want a softer crust, slip the hot bread into a plastic bag so that the crust will get steamed and be nice& soft- and good for sandwiches.

Really really good bread right out of you bread machine.Crunchy!!! I have been using the bread machine and baking it in the oven with great success. Try 1/2 white and 1/2 whole wheat flour for and even better flavour.

Steps:
- Add the water,butter,honey in the bread machine.
- Add dry milk, salt and flour.
- Add yeast in a groove on top of the flour.
- You can make the bread on the White bread cycle or on the Dough cycle.
- When the Beep comes on; add Oatmeal.
- If you chose the dough cycle remove and shape into one loaf or 2 smaller ones.
- Sprinkle a bit of oatmeal on top.
- Preheat oven 375*.
- Let rise app 40 minutes.
- Lower heat to 350* and bake at app 30 minutes.
- Optional; use 1/2 whole wheat flour.
- SUCCESS HINTS: For added texture, add the oats after the first knead or at the beep on the fruit and nut cycle.
- For additional crunch, sprinkle a few oats on top of the loaf after the final rise.
- When you are baking it in the machine and you see it rising to the top while it is baking, use a needle to make a few tiny holes to punch it slowly down and it avoids having it ruin the top of the bread.
- Instant oatmeal doesn't work, but quick-cooking oats do.
BEST WHOLE GRAIN GLUTEN-FREE BREAD FOR A BREAD MACHINE
We really enjoy this bread - all of us eat it when only my husband has to be gluten free. You can also use the Dough setting and scoop out dough onto baking sheets to make buns. To smooth top of loaf or buns, wet fingers and smooth the dough before it rises.

- In a medium bowl, cover steel-cut oats with the boiling water. Let stand until room temperature. Stir in bulghur wheat and honey; set aside.
- Place the warm water in a small bowl. Sprinkle yeast over water. Let stand until foamy, about 5 minutes.
- In the bowl of an electric mixer fitted with the dough hook, combine the reserved oat mixture with the yeast mixture, whole-wheat flour, and salt. Add the all-purpose flour until the dough is tacky, but not sticky. Continue kneading about 5 minutes more.
- Place dough in a buttered bowl, and cover with buttered plastic wrap directly on the surface. Let rise in a warm place until doubled in bulk, about 90 minutes, or refrigerate overnight.
- Turn out dough onto a clean work surface; form into a loaf about 9 inches long. Lightly mist with water; sprinkle with rolled oats. Place in a well-buttered 9-by-5-by-2 1/2-inch loaf pan; let stand until doubled in bulk, about 1 hour.
- Preheat oven to 375 degrees. Using a serrated knife, slash top of loaf lengthwise down center. Place immediately in oven. Bake until nicely browned and cooked through, about 1 hour. Remove from pan; let cool on a wire rack.
OAT WHEAT BREAD FOR BREAD MAKER
If you like the flavor of oats, you will enjoy this. Oat flour is just oatmeal ground into flour. As a result the bread can be a little more chewy than others. You can't use a lot of oat flour in a bread if you are using yeast. Generally no more than 1/3 of the wheat flour can be substituted with oat flour.
