MAGGIANO'S HOUSE DRESSING - MY WAY
Credit goes to Maggiano's & Oolala's recipe#166435. This is perfect for just about any side salad. I adjusted the ingredients to suit our tastes, I like the added tang from the vinegar. Posted for my own safe keeping so I don't have to rely on my bad memory for the adjusted ingredient amounts! :D

Steps:
- In medium mixing bowl, combine mustard, sugar, water, garlic, vinegar and salt. Whisk until combined.
- Whisk in oil in thin stream. Add pepper and oregano; whisk to combine. Adjust seasoning to taste.

MAGGIE'S HOUSE DRESSING
I have two versions of what we call our House Dressing that I use for salads. I have been using the first version (the original) for over 40 years, and the second version for about 5. Everyone that has eaten my salads, loves either version, and more people than I can remember asked for the recipe. It is so simple and basic, yet it tastes great. Most of my guests always ask me to use my house dressing as opposed to bottled salad dressings. I never measure, so I will have to estimate, but I would suggest you go with the smaller amounts first, then taste and adjust, if necessary. Of course, the amount will have to be adjusted according to the size of the salad.

- Right before serving:.
- Sprinkle the garlic salt over the salad.
- Drizzle the oil over the garlic salt.
- Toss.
- Taste.
- Adjust by adding more of either ingredient.
- VERSION TWO:.
- Right before serving:.
- Sprinkle the garlic salt over the salad.
- Drizzle the oil over the garlic salt.
- Drizzle the balsamic vinegar over the oil.
- Toss.
- Taste.
- Adjust by adding more of any one of the ingredients that you feel the salad needs.
- Hint: Do not do this ahead of time. The salad will become limp and it won't taste as good.

Christie's restaurant was a beloved eatery in San Antonio for over 50 years before closing in the 90's. From the San Antonio Express News. Please read the recipe several times before attempting as the article said this was a demanding recipe and take care to add the oil one tablespoon at a time. Chilling time not included in preparation time.

Steps:
- Using food processor blender, finely chop celery, green pepper, carrot and onion until almost grated; set aside.
- Combine salt, mustard, Sure Jel, lemon peel, cornstarch, meringue powder and paprika in small mixing bowl; set aside.
- Place ice in large mixer bowl; add dry spice mixture along with eggs, mixing at high speed.
- When thoroughly mixed and ice has melted, slowly add soybean oil 1 tablespoon at a time while mixing at high speed.
- Mix until thick (this will take about 40 minutes).
- Add chopped vegetables and mix about 1-2 minutes until blended.
- Chill in covered container several hours before serving.
