White Chocolate Fruit and Nut Clusters are an easy dessert perfect for parties or as gifts. Dried fruits, nuts, and chocolate candy ready in 30 minutes.

12 ounces white chocolate melting discs
1/2 cup almonds
1/2 cup dried apricots (, coarsely chopped)
1/2 cup dried cranberries
1/2 cup dried blueberries
1/2 cup golden raisins
1/2 cup raisins
2 ounces semi sweet chocolate chips

Steps:

  • Line a baking sheet with waxed paper.
  • Add the white chocolate discs to a large glass bowl and microwave in 30 second increments until smooth, stirring in between each 30 seconds.
  • Add the almonds and fruits into the chocolate and stir.
  • Place spoonfuls of the chocolate mixture onto the baking sheet in mounds.
  • Refrigerate until set, 15 to 20 minutes.
  • Melt the semi sweet chocolate chips in a small glass bowl in the microwave in 30 second increments until smooth, stirring in between each 30 seconds.
  • Drizzle the chocolate over the clusters and refrigerate again to set.

Simple and no-cook sweet bites. These are adictive, and can be modified to suit your tastes. I make these usually just at Christmas. They were such a big hit that my family jokingly refers to them as "Christmas Crack"! Have fun with this recipe.

Number Of Ingredients 3

2 cups white chocolate, buttons
4 cups Golden Grahams cereal
1 cup salted cashew pieces

Steps:

  • Place cereal and nuts in a large bowl.
  • Melt white chocolate in double boiler or microwave low and slow.
  • Pour melted chocolate over dry ingredients and toss to coat. (Optional add-ins 1/2 -1 cup chopped Kraft caramels, Broken pretzel sticks or halved dried cranberries, etc.).
  • Line a cookie sheet with parchment.
  • Pour mixture onto parchment and spread into a single layer.
  • Put in refridgerator to harden then break into bite sized pieces.
  • Enjoy!

4 cups rice square cereal
2 cups pretzel sticks, coarsely broken
1 cup cashews, coarsely chopped
1 package (8 oz.) vanilla-flavored candy coating
1/2 cup semi-sweet chocolate chips, melted

Steps:

  • Grease rectangular pan, 13x9x2-inch. Mix cereal, pretzels and cashews in large bowl; set aside.
  • Melt candy coating in 2-quart saucepan over low heat, stirring constantly. Pour candy coating into bowl with cereal mixture. Press cereal mixture in pan; cool slightly.
  • Drizzle with melted chocolate; let stand until chocolate is firm. Break into clusters. Store in airtight container.

  • Arrange 35 clusters of cashews each with 1-2 inches between them. Use about 11-12 cashew halves per cluster. Set a couple extra cashew aside if you have any. You can crush them up to sprinkle on top of the clusters in step 4.
  • Place the caramels in a medium microwave-safe bowl. Pour cream on top and microwave for 3 minutes total, stopping and stirring every 20 seconds. It’s a lot of stirring, but it’s imperative to prevent the caramels from scorching. If the caramel seems too thick after 3 minutes, stir in 1-2 more Tablespoons of cream. Spoon 2 teaspoons of caramel onto the center of each cluster. Set aside as you melt the chocolate.
  • Melt the chocolate in the microwave or use a double boiler. If using the microwave, place chocolate in a medium microwave-safe bowl and microwave for 1-2 minutes, stopping and stirring every 20 seconds until completely melted and smooth. Spoon melted chocolate on top of each cluster, then top each with any crushed cashews (from step 2) and a sprinkle of sea salt.
