This spicy fried shrimp recipe starts with a chili paste buttermilk marinade, then a dredging in a Rice Krispies breading for extra crunch!

1 lb large shrimp
1/2 cup buttermilk
1/4 cup milk
1/4 cup chili paste ((Sambal Oelek sauce))
1 1/2 cups Rice Krispies cereal (crushed)
1/2 cup all purpose flour
1 tbsp black pepper
1/2 tsp salt
oil for frying ((See Note 1))

Steps:

  • Preheat oil to 375°F.
  • Line a tray with paper towels and set aside. In a bowl, whisk together buttermilk, milk and hot sauce.
  • In a sealable bag add the flour, Rice Krispies, kosher salt and black pepper and mix well. (See Note 2)
  • Peel and devein shrimp leaving the tails on. Butterfly cut the shrimp or leave whole. Pat dry then dredge in the dry mixture first, then wet mixture and then the dry mixture again. Set aside.
  • Heat oil in large skillet, cast iron pan or Dutch oven. Make sure the oil is at 375°F, you want to fry the shrimp (See Note 3). Deep-fry in batches, but do not overload the fryer, it will drop the temp of the oil. Fry 30 seconds per side and golden brown.
  • Remove from oil and drain on the paper towel lined baking tray. Salt and serve warm with lemon slices.

2 tablespoons extra virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
1/2 teaspoon crushed red pepper flakes
24 jumbo shrimp, peeled and deveined, tails in tact, ask for easy peels at your fish counter
2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper
1 lemon, zested and juiced
2 tablespoons chopped parsley leaves, a handful

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.

1/4 cup low-sodium soy sauce
1/4 cup sake

1 cup large-diced onion
1 cup cubed cabbage

Steps:

  • Combine first 6 ingredients in a bowl. Heat a large nonstick skillet over medium-high heat. Add soy sauce mixture; cook until lightly thickened, about 1 minute. Add vegetables and red pepper flakes. Cook, stirring constantly, until vegetables are soft, about 1 minute. Add shrimp and 1/4 cup water. Cook, stirring often, until shrimp are just cooked through, 2 to 3 minutes more. Divide among 4 bowls; serve immediately.

1 pound medium shrimp, peeled and deveined
1 teaspoon salt
1/2 teaspoon turmeric
1/4 teaspoon cayenne
1/2 teaspoon black pepper
1/2 teaspoon grated garlic
1/2 teaspoon grated ginger
1/2 teaspoon garam masala
1 teaspoon green or red chile, minced
2 tablespoons chopped cilantro
2 tablespoons chopped mint
2 tablespoons lemon juice
3 tablespoons chickpea flour (besan flour)
3 tablespoons rice flour
Vegetable oil for frying
1/4 cup roughly chopped mint
2 cups roughly chopped cilantro
1 small garlic clove, minced
1 tablespoon grated ginger
2 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chopped green or red chile
2 tablespoons lime juice

Steps:

  • Put shrimp in a large bowl and sprinkle with salt. Add turmeric, cayenne, black pepper, garlic, ginger, garam masala, chile, cilantro, mint and lemon juice. Toss to coat well and leave to marinate for at least 15 minutes. (May marinate up to several hours in advance, refrigerated.)
  • Make the chutney: Put mint, cilantro, garlic, ginger, sugar, salt, cumin and chile in the bowl of a food processor or blender. Purée until smooth, using a little ice water as necessary to help blend the mixture. Add lime juice and transfer to a small serving bowl.
  • Just before frying, sprinkle rice flour and chickpea flour over reserved shrimp and toss to coat. Then sprinkle with 1 or 2 tablespoons water and toss. Shrimp should now have a batter-like coating.
  • Heat an inch of oil in a wok until nearly smoking, about 375 degrees. Fry a few shrimp at a time until golden and crisp, a minute or so per side. Drain on paper towels and keep warm until all shrimp are fried. Serve with green chutney.

1 1/2 lbs large shrimp, peeled and deveined
1 1/4 cups buttermilk baking mix
1/2 cup dark beer, more if necessary
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes (optional)
1 egg
1/4 cup tartar sauce
toasted coconut, to garnish

Steps:

  • Heat 1-1/2 inches oil in a heavy deep skillet over medium-high heat to 350ºF.
  • Lightly coat shrimp with 1/4 cup baking mix and crushed red pepper.
  • Combine 1 cup baking mix and remaining ingredients, except tartar sauce, in a bowl.
  • Beat with a hand beater until batter is smooth and thin. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until of desired consistency.).
  • Dip shrimp into batter, letting excess drip into bowl.
  • Place shrimp in hot oil and fry about 2 minutes on each side, until golden brown.
  • Sprinkle with coconut and serve hot with tartar sauce.
