HAM SALAD RECIPE WITH BOLOGNA OPTION
Make ham salad with leftover ham (or bologna), hard-boiled eggs, pickle relish, and mayo. Basil makes this recipe especially memorable. Serve on rolls, in sandwiches, or my favorite, oven-baked sweet potato chips. This recipe is easily cut in half if you don't have a pound of ham.

Steps:
- Cube ham or bologna(remove the rind if desired), then place in a food processor and pulse approximately 10-15 times until ham is chopped but not too fine. Alternatively, use a meat grinder or chop as finely as you can with a knife.
- Chop hard-boiled eggs and celery, if using. Add to ham. Add remaining ingredients except for vinegar and stir gently to combine.
- Mix in 1 teaspoon of vinegar and taste. If ham salad needs a little more zip, add an additional teaspoon.
- Chop basil and add to spread if serving immediately. Otherwise, leaves should be left whole and added to the sandwich before serving. Cut leaves will turn an unappetizing color.

HAM AND EGG SALAD
Great egg salad with a little something extra. Delicious for regular sandwiches and also finger sandwiches, or on large sturdy crackers (like the Swedish rye crisps). This recipe would be delicious using a great Southern U.S. ham.

Steps:
- Dice the ham into small 1/2" cubes. Add all of the remaining ingredients except for the relish to a food processor and pulse until chunky. You want it to be smooth enough to spread on crackers, but not so smooth that it becomes a paste. Check every few pulses and watch closely to get the desired consistency. Transfer the spread to a mixing bowl and stir in relish. Serve with crackers and Swiss cheese.
