Steps:
- Heat butter in a Dutch oven, add kielbasa and brown lightly over medium high heat.
- Remove with a slotted spoon and set aside.
- Add carrots, celery and onion and cook over medium heat until softened.
- Add remaining ingredients and kielbasa, bring to a boil, reduce heat, cover and simmer 20 minutes or until vegetables are tender.

KIELBASA AND CABBAGE - SUMMER HUNTER'S STEW
Kielbasa and Cabbage come together to form a perfect Polish summer hunter's stew. It's made from young cabbage, that is at its peak at the begging of the summer, with the addition of smoky Polish sausage and fragrant dill. It makes for a delicious European treat.

Steps:
- In a large braising pan or cast iron skillet, add one tablespoon of olive oil and chopped onion. Cook for 3-4 minutes until translucent;
- Add shredded carrot and chopped cabbage, broth, tomato paste, caraway seeds, and bay leave. Mix well, cover and cook for about 20 minutes. Make sure that all cabbage is covered. If not, add more broth or water;
- Check if after 20 minutes the cabbage is soft. If not, cook for a little longer until all cabbage is cooked through and soft. Season with salt and pepper to your liking;
- In the meantime, heat up another tablespoon of oil in the cast iron skillet, add sliced kielbasa and cook for a few minutes on each side until golden brown;
- Once your cabbage is cooked, add cooked kielbasa;
- In a separate pan add flour and cook for about 2 minutes, add the last tablespoon of oil and mix; Add about a cup of broth from cabbage pot, mix well; Add the mixture to the cabbage pot and combine; Let cook for two-3 minutes. Add dill and serve.

- In a large saucepan or nonstick skillet, brown sausage over medium heat. Add the potatoes, cabbage, onion, broth, 1/2 cup water, sugar, caraway seeds and pepper. Bring to a boil. - Place the potatoes into a large stockpot, over medium high heat. Add butter and water, and bring to a boil. Cook potatoes until tender, about 20 minutes. Reserve the cooking liquid and mash potatoes in the pan until smooth. Return the potato water to the pot and stir in salt and pepper. Simmer for 20 minutes.
- Stir in the fresh kale and sausage and simmer for another 30 minutes. Serve hot.

- In a large saucepan over medium heat, cook sausage in butter until brown. Pour broth, tomato soup and water into pan with sausage. Stir in cabbage, onion and bell pepper and season with salt and pepper. Bring to a boil, then reduce heat and simmer 45 minutes, or until flavors are well blended. KIELBASA STEW
Steps:
- Put quinoa in a fine mesh sieve and rinse well. Sort lentils to ensure there isn't any rocks.
- Add rinsed quinoa, lentils and 2 ½ cups chicken stock or water in a 3 to 4 quart sauce pan on the stove over high heat, Bring to a boil, reduce to a simmer, cover and cook for 15 to 20 minutes until done. Strain if there is excess liquid.
- Prepare kielbasa and vegetables. Open tomatoes and get chicken stock. Measure out frozen veggies and spinach.
- In a 6 quart or larger sauce pan, heat oil. Add kielbasa, onions, carrots, bell pepper, and celery. Sauté for about 5 minutes until the onions become translucent.
- Stir in chipotle or jalapeno pepper, tomatoes in sauce, chicken stock, lentils and quinoa. Reduce heat and simmer for 10 minutes.
- Rough chop the frozen (thawing) broccoli to bite size pieces.
- Stir in corn, peas, broccoli, spinach, and parsley. Simmer for another 3 - 5 minutes to heat the frozen veggies and wilt the spinach.
- Enjoy!
