This is a recipe from my friend - her Mom makes the best bannock ever using this recipe.

3 cups all-purpose flour
2 tablespoons baking powder
¼ cup vegetable oil
1 ½ cups water
1 pinch salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, mix together the flour, baking powder, salt, water and oil. Knead on a lightly floured surface for about 10 minutes. Let it rest for a minute, then spread out onto a cookie sheet to 1 inch thickness. Poke holes in the dough using a fork.
  • Bake for 15 to 20 minutes in the preheated oven, until the bottom is golden when you lift up the bread to take a peek.

We Metis love our bannock and this is my favourite recipe for it. It's great with soup, or just on it's own with jam or honey.

3 cups all-purpose flour (or whole wheat flour)
2 tablespoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup margarine (or butter or shortening)
3/4-1 cup milk (or water)

Steps:

  • Mix flour, baking powder, sugar, and salt.
  • Work in the margarine using hands until you make a nice crumble. If you have Olivina margarine in your area, I find this makes for the best bannock.
  • Gradually mix in enough milk to make soft but not sticky. Knead.
  • Shape into a ball, place on a greased baking sheet, then flatten into a circle about 1 inch thick.
  • Bake at 425°F (220°C) for 25 minutes or until lightly browned.

Serve this Scottish classic with plenty of butter. If you have any leftover, toast it for breakfast or use for a bread & butter pudding

7g sachet fast-action yeast
1 tsp caster sugar
500g strong white flour
140g unsalted butter , or half butter, half lard, melted and cooled
450g sultanas
50g light brown sugar
milk for glazing

Steps:

  • In a large bowl, mix the yeast and caster sugar with 250ml warm water. Let it stand for 10 mins until the mixture becomes frothy. Tip in the flour and 125g of butter and mix to form a smooth, soft dough. Knead for 5 mins, then put the mixture back in the bowl. Cover with oiled cling film and allow the mix to rise, in a warm place, until doubled in size.
  • Knock back the dough by kneading it lightly for 1 min, then add the sultanas and brown sugar, kneading them in well. Grease a deep 23cm round cake tin with the rest of the butter. Shape the dough into a round and place in the tin. Allow the dough to rise for 30 mins or until it has doubled in size.
  • Heat oven to 180C/160C fan/gas 4. Brush the Bannock with a little milk to glaze, then bake for 45-50 mins until risen and browned. The bread should sound hollow when removed from the tin and the base is tapped. If the bread colours too quickly, but is not quite cooked, you can cover it with foil and check after 5 mins more. Cool in the tin for 10 mins, then remove from the tin and finish cooling on a wire rack.

2 cups flour
2 tablespoons baking powder
2 tablespoons sugar (or less, if you prefer your bannock less sweet)
2 pinches salt
water, at room temperature

Steps:

  • Mix flour, baking powder, sugar and salt together.
  • Mix with enough water so that the mixture becomes a dough.
  • Form into 4-6 large, thick patties.
  • Fry on lightly oiled frying pan, turning when the bottom is golden.
  • (You may also bake in the oven.) Good served warm.
  • If desired, spread with honey, jam, butter, or peanut butter.
  • Traditionally bannock would have been made with whatever ingredients were on hand.
  • For example, adding blueberries if they're in season.
  • This freezes well. Freeze, already baked, in a labeled ziploc bag with the air squeezed out as much as possible. To serve, bring to room temperature by removing from the bag and letting rest on the counter for a few hours. SPeed up the process, by baking or microwaving until the desired temperature is reached.

2 cups flour ((260 grams))
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon olive oil or vegetable oil
3/4 cup water ((175 grams))
vegetable oil for frying

Steps:

  • In a large bowl whisk together the flour, salt and baking powder.
  • Then add the olive oil and whisk together with a fork, gradually add water and stir until the dough almost holds together. Move to a lightly floured flat surface and gently knead about 10 times just until the dough comes together (the dough will be sticky, do not overknead).
  • Divide into 5 balls and flatten with the palm of your hand. Fry in hot oil (350F/175C)on medium heat (enough to cover the bottom of a medium frying pan), until golden brown on both sides (and cooked on the inside). Drain on a paper towel lined plate and eat warm or at room temperature. Enjoy!

1 teaspoon salt
2 tablespoons baking powder
¼ cup butter, melted
1 ½ cups water

Steps:

  • Measure flour, salt, and baking powder into a large bowl. Stir to mix. Pour melted butter and water over flour mixture. Stir with fork to make a ball.
  • Turn dough out on a lightly floured surface, and knead gently about 10 times. Pat into a flat circle 3/4 to 1 inch thick.
  • Cook in a greased frying pan over medium heat, allowing about 15 minutes for each side. Use two lifters for easy turning. May also be baked on a greased baking sheet at 350 degrees F (175 degrees C) for 25 to 30 minutes.

1 ½ c unbleached all-purpose flour
1 ½ c white whole wheat flour* ((or more all-purpose*))
½ c powdered milk
2 Tbsp baking powder
1 tsp salt
2 Tbsp shortening, (lard, or butter)
1 - 1 ½ c water
Cooking oil ((for greasing the pan))

Steps:

  • In a medium bowl, mix the flours, powdered milk, baking powder, and salt.
  • Add the shortening and cut the fat into the dry ingredients until the mixture resembles coarse breadcrumbs. (If you will be taking this mix traveling with you, you can make this dry mix ahead of time and store it in a sealed plastic bag or container until you are ready to make your bread.)

This slightly sweet, fruit loaf is excellent as partner to cheese or with a strong cup of tea.

1 x 7g sachet fast-action yeast
1 tsp caster sugar
500g/1lb 2oz strong white flour
125g/4½oz unsalted butter, melted
250g/9oz dried mixed fruit
50g/2oz light muscovado sugar
beaten egg, for glazing

Steps:

  • Mix together the yeast, caster sugar and 250ml/9fl oz lukewarm water in a large bowl. Leave to stand for 10 minutes until the mixture is frothy.
  • Add the flour and butter and mix thoroughly. Tip onto a lightly floured surface and knead for about five minutes to form a smooth elastic dough.
  • Place the dough into a clean, lightly oiled bowl and cover with a damp tea towel. Leave to prove in a warm place for about one hour or until doubled in size.
  • When the dough has risen, remove the tea towel and punch the dough down. Tip onto a lightly floured surface and knead in the fruit and muscovado sugar until well combined.
  • Shape the dough into a round shape and place on a lightly greased baking sheet. Cover again with a damp tea towel and leave to rise in a warm place again for 30 minutes or until it has doubled in size.
  • Preheat the oven to 180C/350F/Gas 4.
  • Brush the bannock with a little beaten egg to glaze. Bake for 45-50 minutes until risen and a rich brown colour. If the bread is getting too dark, cover lightly with parchment paper or foil. When the bread is ready it should sound hollow when the underneath is tapped gently.
  • Leave to cool slightly before slicing and serving warm with plenty of butter.

Bannock is a yeast free bread that can either be fried or baked. It is used by many indigenous groups in North America and it's delicious.

3 cups flour ( or half and half whole wheat and white flour)
1 teaspoon salt
1 tablespoon baking powder
1/2 cup oil (or olive oil)
1 cup water ( or milk)

Steps:

  • Preheat oven to 375ºF.
  • Mix all dry ingredients into a big bowl. Add water or milk and add the oil of your choice. Mix all ingredients together until the batter becomes like bread dough, not sticky.
  • Put flour onto table surface then roll the dough with your fists for about 2 minutes, like making a bread dough. Pound the dough into a round ball then slowly expand the dough by making it nice and round about half inch thick and should be round like a pie plate. Make holes with a fork by poking it all around the dough from top to bottom.
  • Then with your cookie sheet ready put the bannock onto cookie sheet and bake it at 375ºF until it becomes golden brown. Spread lard on the bannock when it comes out of the oven to keep it moist and delicious.

For Greg's Bella Coola Bannock:
2 cups (500 mL) all-purpose flour
1 Tbsp (15 mL) baking powder
1 Tbsp (15 mL) white sugar
1/8 tsp salt
2 Tbsp (30 mL) unsalted butter
1 egg
1/4 to 1/2 cup (60 to 125 mL) whole milk
Oil, for frying
For serving: Maple syrup, flaky sea salt
For Doreen Crowe's Bannock:
2 cups (500 mL) all-purpose flour, plus extra for rolling
2 1/2 tsp (12 mL) baking powder
1/2 tsp (2 mL) salt
3/4 to 1 cup (185 to 250 mL) water, to start
Oil, for frying

Steps:

  • For Greg's Bella Coola Bannock:
  • Combine the flour, baking powder, sugar, and salt. Using a pastry cutter or knife, cut in the butter until the pieces are pea-sized. Mix in the egg, then pour in about 1/4 cup (60 mL) of milk. Mix together just until a dough forms, adding more milk if needed. Divide the dough into 10 to 12 biscuit-sized pieces. In a large frying pan, pour in about 1/4 inch (6 mm) of oil and heat over medium-high. When the oil is hot, fry the bannock-being careful not to crowd them-until golden brown. Serve immediately with maple syrup and flaky sea salt.
  • For Doreen Crowe's Bannock:
  • In a large bowl, mix the flour, baking powder, salt, and water together to form a dough. If the dough is a bit dry, add more water 1 Tbsp (15 mL) at a time. Turn the dough out onto a floured surface and roll out into a 9×12-inch (23×30-cm) rectangle about 1/4-inch (6-mm) thick. Cut into approximately 3×3-inch (8×8-cm) squares. Heat about 1/4 inch (6 mm) of oil in a large frying pan over medium-high heat, and fry the bannock-being careful not to crowd them-until golden brown, about 2 minutes on each side. Serve warm.
