1 1/2 cups hard wheat berries
3/4 cup chopped walnuts
2 stalks celery, finely chopped
1/2 cup tart dried cherries, chopped
1 scallion, white and green parts, chopped
1/2 cup finely chopped parsley leaves
3 tablespoons olive oil
2 tablespoons lemon juice
Salt and freshly ground black pepper

Steps:

  • In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool. Toast the walnuts in a medium dry skillet over medium-high heat until fragrant, 2 to 3 minutes.
  • In a large bowl, combine the wheat berries, walnuts, celery, dried cherries, scallions, parsley, olive oil and lemon juice. Season, to taste, with salt and pepper.

2 celery ribs, finely chopped
1 medium tart apple, diced
4 green onions, sliced

DRESSING:
3 tablespoons walnut oil
2 tablespoons cider vinegar
1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
2 teaspoons minced fresh thyme or 3/4 teaspoon dried thyme
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
3/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook wheat berries according to package directions; drain and cool. Meanwhile, combine the next 5 ingredients; add wheat berries. Whisk together dressing ingredients. Pour over salad; toss to coat. Serve at room temperature or chilled.

½ pound sugar snap peas or snow peas, trimmed
1 cup wheat berries, hard winter or soft wheat berries
1 cup frozen peas
4 green onions, thinly sliced
4 radishes, halved and thinly sliced
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon salt
1 teaspoon white sugar
2 tablespoons extra-virgin olive oil
⅓ cup chopped fresh dill

Steps:

  • Remove strings from sugar snap peas. Cut each snap pea or snow pea pod diagonally into thirds.
  • Bring a large pot of water to a boil over high heat. Add wheat berries, reduce heat to medium, and cook, uncovered, stirring occasionally, until tender but still chewy, about 1 hour. Stir in sugar snaps and frozen peas and cook 1 minute. Drain wheat berry mixture in a large colander and rinse under cold water. Drain well. Transfer wheat berry mixture to a large bowl and let cool, about 30 minutes. Stir in green onions and radishes.
  • Whisk together lemon juice, mustard, salt, and sugar until sugar is dissolved. Whisk in oil. Pour dressing over salad and toss well. Add dill and toss to combine.

1 cup hard winter wheatberries
Kosher salt
1 cup finely diced red onion (1 onion)
6 tablespoons good olive oil, divided
2 tablespoons balsamic vinegar
3 scallions, minced, white and green parts
1/2 red bell pepper, small diced
1 carrot, small diced
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain.
  • Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes. Turn off the heat and add the remaining 4 tablespoons (1/4 cup) of olive oil and the balsamic vinegar.
  • In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 teaspoon salt, and the pepper. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce. Season, to taste, and serve at room temperature.

Another favorite wheat salad. Reminds me of a Greek salad. Everyone loves this. Have been asked MANY times for the recipe. Adapted from a recipe in "The Best of Gourmet 1994". Sometimes I'll add more dressing if it absorbs it all. Might be yummy with some marinated artichokes too. I like to use the basil and sun-dried tomato variety of Feta.

1 cup wheat berries
1/2 cup feta cheese, crumbled
1/2 cup red onion, minced
1/2 cup cucumber, peeled, seeded, diced
1/4 cup bottled roasted red pepper, chopped
1/4 cup pepperoncini pepper, chopped
1/4 cup mixed fresh herbs (parsley, mint, thyme & basil)
1 -2 tablespoon kalamata olive, pitted, chopped
1 garlic clove, minced
5 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar

Steps:

  • Pick over the wheat berries and remove any foreign bits. Rinse and add the wheat berries to boiling salted water. Reduce to a simmer and cook for 1 hour or until tender. Drain and cool.
  • Stir together the wheat berries, feta, onion, cucumber, roasted pepper, pepperocini, herbs, olives and garlic.
  • In a separate bowl, mix together the olive oil, lemon juice and vinegar.
  • Mix everything together and garnish with fresh herbs.

1 (15 ounce) can garbanzo beans, rinsed and drained (chickpeas)
1 cup slivered fresh snow pea
1/2 cup dried apricot, sliced
1/2 cup dried cranberries
1/4 cup chopped green onion
3 tablespoons toasted walnut oil
1 tablespoon lemon juice

Steps:

  • In a medium bowl combine wheat berries, 3 cups water, and 1/8 teaspoon salt; cover and refrigerate overnight. Transfer to medium saucepan; bring to boiling. Reduce heat; simmer, covered, 45 to 60 minutes or until tender. Drain; cool 1 hour.
  • In large bowl, combine drained wheat berries, garbanzo beans, snow peas, apricots, cranberries and green onions.
  • In bowl, whisk together oil, lemon juice, and 1/2 teaspoon each salt and pepper. Pour over wheat berry mixture; stir to coat. Serve at once or cover and refrigerate up to 24 hours.
