1/4 cup butter
1/4 cup finely chopped onion
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon poultry seasoning
1/8 teaspoon ground black pepper
1 (10 1/2-ounce) can condensed chicken broth
1/4 cup water
1 1/2 cups diced roast pork
1 1/2 cups (10-ounce package) frozen peas and carrots, cooked and drained
2 cups prepared seasoned mashed potatoes
1/2 to 1 cup shredded cheese, optional, for garnish

Steps:

  • Heat butter in a skillet over medium-low heat; add onion and sauté until tender, about 2 minutes. Stir in flour until well blended and cooked, about 2 minutes. Add salt, poultry seasoning, and pepper.
  • Add broth and water, stirring until thickened and bubbly. Add the diced pork and vegetables and heat through.
  • Pour the pork mixture into a lightly greased 1 1/2-quart casserole dish.
  • Spoon prepared mashed potatoes evenly over the mixture.
  • Bake at 350 F for 25 to 35 minutes, topping with cheese for the last 5 minutes, if desired.

3/4 tbsp oil
320g pork tenderloin, cut into chunks
1 onion, peeled and sliced
2 sticks celery, thinly sliced
2 garlic cloves, crushed
250g flagolet beans, soaked overnight in cold water
400ml vegetable stock
1tsp dried oregano

Steps:

  • Heat the oil in a medium heavy-based casserole, brown the prok in batched then set aside. Add the onion and celery and cook for 5 minutes until softened and lightly browned, then add the garlic and cook for another minute.
  • Add the beans, stock and oregano to the pan, and return the pork. Bring to the boil then simmer for 1 hour 15 minutes or until tender.
  • For the celeriac and apple slaw: Mix the celeriac, onion and sea salt and set aside in a colader to soften for 30 minutes. Mix the Dijon mustard with white wine vinegar and soya yoghurt and season with black pepper. Combine all the ingredients, along with the fennel seeds and caraway seeds, lightly toasted in a hot frying pan, in a large bowl. Stir in the apples and serve.

Hubby and I go grocery shopping only once a week because of the stay-at-home order due to the Coronavirus. We got lucky and found a 25-pound pork shoulder roast for $0.59 per pound! Though it's only the 2 of us at home, we could not pass up such a great bargain. We cut the roast up into 2-pound chunks and individually vacuum packed them with our FoodSaver. I made this with items in my pantry and it is filling and delicious.

2 pounds pork shoulder, cut into 1-inch cubes
¾ cup water, divided
1 teaspoon salt, divided
½ cup diced onion
1 clove garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 (10.75 ounce) can cream of chicken soup
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
2 (4 ounce) cans chopped Hatch chile peppers, drained
1 cup instant white rice (such as Minute®)
½ cup frozen corn
¼ cup salsa
½ teaspoon chili powder
½ teaspoon cumin
¼ teaspoon ground black pepper
1 cup shredded sharp Cheddar cheese, divided

Steps:

  • Combine pork cubes, 1/2 cup water, and 1/2 teaspoon salt in a Dutch oven. Cover and cook over medium heat for 20 minutes, stirring every 5 minutes. Uncover, raise heat to medium-high, and cook, stirring constantly, until the water evaporates. Cook until pork starts to brown in its rendered fat, about 10 minutes. Add onion and cook for 5 to 10 minutes more. Add minced garlic and cook until fragrant, about 1 minute.
  • Add black beans, cream of chicken soup, tomatoes, Hatch chiles, instant rice, corn, salsa, 1/4 cup water, 1/2 teaspoon salt, chili powder, cumin, black pepper, and 1/2 cup Cheddar cheese. Stir to combine.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Pour pork mixture into the prepared baking dish and bake until thoroughly warmed, 20 to 25 minutes. Remove from oven and top with remaining cheese. Let sit until cheese has melted.

This is a recipe that I use to deal with leftover pork in roast, chop or pork loin form. It is very flexible in helping to use up other vegetables as well. You can even substitute the pork for leftover chicken too. A simple recipe that makes an easy meal. You can add diced mushrooms, partially cooked carrots, asparagus, peas and other vegetables that you wish to use. I've also sprinkled leftover bacon bits onto the casserole during the last five minutes of cooking. Adding a 1/2 package of onion soup mix to the soup mixture will also increase the flavour. If you want a thicker soup and are not adding the rice to the casserole dish, substitute the 5 ounces (1/2 the soup can) of milk with 8 to 10 ounces of sour cream. This alternative goes very well with egg-noodles rather than rice.

1 medium onion
2 celery ribs
2 cups pork
2 cups broccoli florets, frozen
10 ounces cream of mushroom soup
5 ounces milk
1 tablespoon Worcestershire sauce
2 cups water
1 cup long grain rice

Steps:

  • Place skillet on medium-low heat. Add a tablespoon of butter.
  • Peeled and coarsely chopped the onion into bite size pieces. Coarsely chop the celery. Add to the skillet. Stirring occasionally as it cooks.
  • While onions and celery are cooking, break up the broccoli into florets. Add more if you like lots of broccoli. Cube the pork into bite-size pieces. Place these into a casserole dish.
  • Mix the soup, milk and Worchester sauce together.
  • When the celery and onions are partially cooked and the onions have begun to caramelize slightly, add to casserole dish. Poor soup mixture into casserole dish and mix together.
  • Cook in 350 oven for 35 to 45 minutes, until bubbling and starting to brown along the edges.
  • Meanwhile mix rice and water together. Bring to a boil and cook on medium heat until all water is absorbed, about 12 to 15 minutes, stirring occasionally.
  • NOTE: You can also reduce the water by 1/2 cup and add the rice and the 1.5 cups water to the casserole dish, cover it and cook at 350 for one hour. This will allow the soup to flavour the long grain rice.
  • Serve casserole on the rice.

10 (8 inch) corn tortillas
3 cups cooked pulled pork
4 tablespoons canned black beans, rinsed
½ (8 ounce) package cream cheese, cut into cubes
2 tablespoons chopped fresh cilantro, or more to taste
1 ½ cups salsa, or more to taste
6 tablespoons leftover cooked rice
8 tablespoons shredded Mexican cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Line the bottom of a casserole dish with 6 corn tortillas, so that the bottom and sides are covered.
  • Add 1/2 of the pulled pork, 1/2 of the black beans, 1/2 of the cream cheese, 1/2 of the cilantro, 1/2 cup of salsa, 1/3 of the cooked rice, and 3 tablespoons Mexican cheese blend. Cover with 4 corn tortillas. Repeat layering of the ingredients, finishing with the remaining Mexican cheese blend.
  • Bake in the preheated oven until cheese is melted and bubbly, about 25 minutes.

1 2/3 cups hot water
1 (6 ounce) package prepared stuffing (whatever flavor you have in the pantry)
1 (10 3/4 ounce) can cream soup (whatever you have!)
1 lb cooked pork (whatever you have in the fridge) or 1 lb cooked beans (whatever you have in the fridge)
1 -3 cup mixed vegetables (again, whatever you have, already cooked preferably)
3/4 cup milk
1 1/2 cups cheese, shredded (whatever you have in the fridge)

Steps:

  • Add the hot water to the stuffing and set aside.
  • Mix everything else together in a casserole dish. Top with the stuffing.
  • Bake, uncovered, for 30 minutes at 350°F, or until casserole is bubbly and stuffing is a little crusty.

PORK 'N' BEAN CASSEROLE

I first cooked this recipe 30 years ago for a bonfire party and tripled the ingredients to serve 12 people - the cooking time does not need extending if you are doing this. I serve it with crusty french bread or jacket potatoes. Don't worry about it swimming in fat from the belly pork as the initial browning releases a lot of fat and the rest is soaked up during the slow cooking. If you use a crockpot, the juices won't thicken and you will need to do that separately. Please note that if you are doubling or tripling the recipe, you will need to brown the meat and onions in batches.

1 1/2 lbs pork belly
1 ounce butter
2 medium onions, peeled and roughly chopped
1 can pork and beans in tomato sauce
1 teaspoon mustard
1 pinch curry powder
1 tablespoon Worcestershire sauce
1/2 pint water
salt and pepper

Steps:

  • Cut the meat into bite size pieces.
  • Heat the butter and add the meat and fry for a few minutes to brown and remove to a casserole pot.
  • Put the onions into the same pan with the remaining fat and cook until transparent then put with the meat.
  • Stir the flour into the remaining fat in the pan and cook for a few minutes.
  • Add the can of beans and all the other ingredients.
  • Bring to the boil, stirring all the time.
  • Pour into the casserole with the meat and onions.
  • Cover and cook in a slow oven (Gas mark 3) for about 2 hours.

Providing all five of your 5-a-day, this flavour-packed butterbean stew pairs perfectly with lean pork shoulder steaks - perfect to enjoy after a workout

3 garlic cloves , 1 crushed, 2 sliced
2 tbsp rapeseed oil
4 tsp smoked paprika
4 lean pork shoulder steaks (525g), trimmed of any fat
2 large onions (340g), halved and sliced
325g carrots (about 6), diced
2 tbsp sherry vinegar
2 red peppers , deseeded and chopped
1 tbsp vegetable bouillon powder , made up to 500ml with boiling water
3 rosemary sprigs , leaves picked and finely chopped
200g whole cherry tomatoes
2 tbsp tomato purée
2 x 400g cans butter beans , drained
⅓ x 30g pack parsley , chopped
squeeze of lemon (optional)

Steps:

  • Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
  • Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
  • Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
  • If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.

4 tbsp fat (lard if you're budgeting, goose or duck fat if you're not)
350g assorted pork , diced (a mixture of bacon, sausage and diced pork works well)
1 large onion , halved and sliced
10 fat garlic cloves , peeled
1 carrot , thinly sliced
1 tsp fennel seeds
2 tbsp red wine vinegar
600ml stock
1 tbsp tomato purée
2 rosemary stalks, leaves picked and chopped
handful of parsley , finely chopped
400g can haricot or cannellini beans , drained
few tbsp fresh or dried breadcrumbs
drizzle of oil , whatever you have
crusty bread , to serve
green vegetables , to serve

Steps:

  • Heat oven to 140C/120C fan/gas 1. Put a large ovenproof pan (with a tight-fitting lid) on a high heat. Add your fat and diced meat, cook for a few mins to seal the edges, giving it a quick stir to cook evenly. Reduce the heat to low, add the sliced onion, whole garlic cloves, carrot and fennel seeds, and cook gently to soften the veg for a few mins.
  • Pour over the red wine vinegar, scraping any meaty bits off the bottom of the pan. Add the stock, tomato purée, and half the rosemary and parsley. Bring to the boil and simmer for 10 mins, then season, cover with a lid and put into the oven for 2 hrs, removing the lid for the final hour of cooking. Stir occasionally and add the beans with 30 mins to go.
  • Remove the pan from the oven and heat the grill. Scatter the top with the remaining herbs and breadcrumbs, drizzle a little oil over the top, and return to the oven for 5-10 mins, until the breadcrumbs are golden. Serve with crusty bread and green veg.
