LIME SPRITZER

Steps:
- For the simple syrup: Heat the sugar, water, lime zest, and ginger in a medium saucepan over medium-high heat to boiling. Simmer for 3 to 4 minutes, and then remove from the heat. Add the lime juice and let the flavors infuse the syrup for at least 15 minutes while it cools. Strain the syrup, if you wish, and keep in the refrigerator until ready to use.
- For the drink: Rub a lime wedge around the lip of the glasses to moisten and then dip in salt or sugar to decorate the glasses, if desired. Pour 1 or 2 tablespoons of the lime syrup into each glass and top with sparkling water. Garnish with a wedge of lime.
- Cook's Note: Sparkling wine can be used instead of water, if desired.

- Place watermelon in a blender. Cover and process until blended. Strain and discard pulp; transfer juice to a pitcher. Stir in limeade concentrate. Refrigerate for 6 hours or overnight., Just before serving, stir in carbonated water. Garnish servings with lime slices.

- Place the watermelon and ice cubes in a blender and blend until liquefied. (Once you add the lemon-lime soda, it will thin out even more, add more ice cubes if you want it slushier.) Slowly add 1/2 of the lemon-lime soda and blend until smooth. Pour into glasses, garnish with limes and serve.

- Add 5 cups of the watermelon cubes (save 1 cup for garnish) to a blender with the lime juice and puree until smooth. Pour into a large measuring cup. Add the Simple Syrup and mint leaves to the blender and puree until the mint leaves turn into green flecks.
- Add ice to 6 glasses and then fill each glass about half full with the watermelon juice. Add a splash of the mint simple syrup to each glass. Top with sparkling water.
- On each skewer, alternate the remaining watermelon cubes and mint leaves. Garnish each drink with a skewer.
- Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.
