Vegetable Lasagna image

Spinach is the star of this vegetable lasagna recipe. The veggie-based recipe makes one large lasagna (9 by 13 inches) or two smaller ones (8 by 8). For the perfect make-ahead meal, prepare two vegetable lasagnas; bake one now, and freeze the other for later.

4 cups (32 ounces) whole-milk ricotta cheese
2 large eggs
Salt and fresh ground pepper
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed to remove excess moisture
6 cups store-bought or homemade Easy Chunky Tomato Sauce
12 no-boil lasagna noodles (8 ounces)
1 pound fontina cheese (4 cups), shredded

Steps:

  • Preheat oven to 400 degrees. In a medium bowl, whisk together ricotta cheese, eggs, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add spinach, and stir well to combine.
  • Spread a small bit of tomato sauce in the bottom of a 9-by-13-inch glass baking dish or dishes. Arrange a layer of lasagna noodles on top. Spread 1/3 of the ricotta mixture over the noodles, followed by 1/3 of the remaining sauce; sprinkle with 1/3 of the grated cheese. Repeat to make two more layers, ending with cheese. If freezing, cover tightly with plastic wrap. Before baking, defrost in the refrigerator overnight.
  • Cover with aluminum foil. Bake 30 minutes. Remove foil; continue baking until top is golden brown, about 15 minutes more. Let cool slightly before serving.

VEGAN VEGGIE LASAGNA

This veggie lasaga is packed with veggies. I started with a tofu mixture from How It All Vegan, and then went from there. (I expect that the nutrition info is off on the cholesterol. Regular lasagne noodles are vegan, and would have no cholesterol..the Zaar nutritional content is showing cholesterol. However, if you use the no-bake lasagne noodles, those are not vegan, so if that is important to you, then keep that in mind.)

8 ounces lasagna noodles, cooked and drained
1/2 cup tomato sauce
14 ounces extra firm tofu
1/4 cup soymilk
1 teaspoon dried oregano
2 teaspoons dried basil
1 teaspoon salt
2 tablespoons lemon juice
2 garlic cloves, minced
1 small onion, minced
2 cups spinach, chopped
1/4 cup olive oil
1 medium sweet red pepper, julienned
8 ounces fresh mushrooms, sliced
2 small zucchini, cut into 1/4 inch slices
2 medium carrots, sliced very thin (or shredded)
1 1/2 cups of your favorite tomato sauce
1/2 cup water

Steps:

  • Preheat over to 350 degrees.
  • In a blender or food processor, combine the tofu, soy milk, oregano, basil, salt, lemon juice, garlic, and onion. Blend until the mixture has the consistency of ricotta cheese.
  • Stir in the chopped spinach and set aside.
  • In a large saucepan, saute the red pepper, mushrooms, zucchini, carrots in the oil until crisp-tender. (Feel free to add any other veggies that you like. I just use the ones listed as a starting point.).
  • Stir in the tomato sauce and water.
  • Bring to boil, then cover, reduce heat and simmer for 30 minutes, stirring occasionally. (If you find that the veggie mix is too thin, uncover for last 5 minutes.).
  • Cover bottom of lasagna pan with 1/2 cup tomato sauce.
  • Layer with lasagne noodles, trimming to fit, if needed.
  • Cover with a layer of 1/2 the tofu mixture, then layer of noodles, then layer of 1/2 the veggie mixture, then layer of noodles, then remaining tofu mixture, another layer of noodles, and then top with the remaining veggie mixture.
  • Bake, uncovered for 30-35 minutes. Remove from oven and let stand 5-10 minutes before cutting and serving.

1 (16 ounce) package lasagna noodles
1 pound fresh mushrooms, sliced
¾ cup chopped green bell pepper
¾ cup chopped onion
3 cloves garlic, minced
2 tablespoons vegetable oil
2 (26 ounce) jars pasta sauce
1 teaspoon dried basil
1 (15 ounce) container part-skim ricotta cheese
4 cups shredded mozzarella cheese
2 eggs
½ cup grated Parmesan cheese

Steps:

  • Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente. Rinse with cold water, and drain.
  • In a large saucepan, cook and stir mushrooms, green peppers, onion, and garlic in oil. Stir in pasta sauce and basil; bring to a boil. Reduce heat, and simmer 15 minutes.
  • Mix together ricotta, 2 cups mozzarella cheese, and eggs.
  • Preheat oven to 350 degrees F (175 degrees C). Spread 1 cup tomato sauce into the bottom of a greased 9x13 inch baking dish. Layer 1/2 each, lasagna noodles, ricotta mix, sauce, and Parmesan cheese. Repeat layering, and top with remaining 2 cups mozzarella cheese.
  • Bake, uncovered, for 40 minutes. Let stand 15 minutes before serving.

1 medium sweet red pepper, julienned
1 medium carrot, shredded
1 small onion, chopped

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add red pepper, carrot and onion; cook and stir until crisp-tender. Add tomatoes, mushrooms, yellow squash, zucchini and garlic; cook and stir until squashes are crisp-tender., Stir in tomato paste, broth, brown sugar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, 30 minutes, stirring occasionally. Meanwhile, cook noodles according to package directions; drain., Preheat oven to 350°. In a small bowl, mix egg and ricotta cheese. Spread 1 cup vegetable mixture into a greased 8-in. square baking dish. Layer with two noodles (trim to fit pan), half of the ricotta mixture, about 1-1/2 cups vegetable mixture and two additional noodles. Top with remaining ricotta mixture, noodles and vegetable mixture., Sprinkle with cheeses and Italian seasoning. Bake, uncovered, 30-35 minutes or until bubbly and cheese is melted. Let stand 5 minutes before serving.

1 tbsp chopped fresh thyme
1/2 tbsp dried basil
1/2 tbsp dried oregano

4 cups prepared pasta sauce
1 lb whole-wheat lasagna
Freshly ground black pepper
2 small zucchini, diced
2 small summer squash, diced
3/4 cup bottled roasted red pepper, diced
1/4 cup grated Parmesan

Steps:

  • Heat oven to 375°F. Mix goat cheese, olives, thyme, basil, oregano, and garlic in a bowl; season with salt and pepper. Spread 1 cup pasta sauce on the bottom of an 8" x 11" baking dish. Add one layer of lasagna and season with black pepper. Add a layer of zucchini, squash, and red pepper. Dollop spoonfuls of goat cheese mixture over vegetables and spread to cover. Repeat layers, finishing with pasta and sauce. Sprinkle Parmesan on top, cover with foil and bake 40 minutes. Uncover and bake 5 minutes or until top browns. Let stand 10 minutes; serve.

14 lasagna noodles, see notes
2 tablespoons extra-virgin olive oil
1 cup (140 grams) chopped onion
1 tablespoon minced garlic, 3 to 4 cloves
1/8 teaspoon crushed red pepper flakes, or more to taste
2 medium zucchini, cut into 1/2-inch pieces
2 medium yellow squash, cut into 1/2-inch pieces
One (12-ounce) jar roasted red peppers, drained and cut into 1/2-inch pieces, 1 heaping cup
1 (28-ounce) can crushed tomatoes
Generous handful fresh basil leaves, chopped
One (15-ounce) container ricotta cheese or cottage cheese
2 large eggs
2 ounces (60 grams) parmesan cheese, grated, about 2/3 cup
8 ounces (230 grams) low-moisture mozzarella cheese, shredded, about 2 cups
Salt and fresh ground black pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil, then cook lasagna noodles according to package directions. To prevent the noodles from sticking after they are drained, add two teaspoons of olive oil to the pasta water. Drain, then lay flat on a sheet of aluminum foil.
  • Heat the oven to 350° Fahrenheit. Lightly oil a 13-inch by 9-inch baking dish or spray with non-stick cooking spray.
  • Heat the olive oil in a wide skillet with sides over medium heat.
  • Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  • Add the garlic, red pepper flakes, zucchini, yellow squash, and a pinch of salt. Cook, stirring occasionally, until the veggies are softened but still have some crunch, another 5 to 8 minutes.
  • Stir in the roasted red peppers and crushed tomatoes. Bring to a low simmer and cook until the liquid has thickened and reduced by half, 5 to 8 minutes. Add the basil and season to taste with additional salt and pepper.
  • While the sauce cooks, stir the ricotta cheese, eggs, and a 1/2 teaspoon of salt in a medium bowl until blended.
  • Toss the parmesan cheese with the mozzarella. Set aside.
  • Spoon enough vegetable mixture into the baking dish to lightly cover the bottom (about 1 cup). Arrange four noodles lengthwise and side-by-side to cover the bottom. If the noodles are short on one end, you may need to cut an extra noodle and place it into the dish to cover where the other noodles have not.
  • Spread half of the ricotta cheese mixture over the noodles, then sprinkle a third of the parmesan and mozzarella cheeses on top of the ricotta. Finally, scatter a third of the vegetable sauce on top.
  • Add another layer of four noodles and spread the remaining ricotta cheese over them. Scatter half of the parmesan and mozzarella cheeses over the ricotta. Spread half of the remaining vegetable sauce on top.
  • Finish with a third layer of noodles and the remaining vegetable sauce. Finally, finish with the remaining cheese sprinkled all over the top.
  • Cover the lasagna with aluminum foil and bake for 20 minutes; uncover, then bake for 15 minutes until the cheese is crusty around the edges.
  • To make the cheese golden brown on top, slide the pan under the broiler and set to high heat for 1 to 2 minutes. Let rest 10 to 15 minutes before serving.

1/4 cup chopped fresh basil
1/4 pound pecorino cheese (or Parmesan), grated (about 1 cup)
1 pound shredded mozzarella cheese (about 4 cups)

Steps:

  • Preheat the oven and prep the pan: Preheat the oven to 350°F. Spread the one cup of reserved tomato sauce over the bottom of a large (preferably 10- x 15-inch) casserole dish. (If your casserole dish is smaller, you may need to add another layer as you go through this step.)
  • Cover with foil and bake: Pull out a sheet of aluminum foil large enough to cover the casserole dish. Spread a little olive oil over the inside of the piece of foil (the side that will have contact with the lasagna). Place the foil over the casserole dish and crimp the edges. Bake at 350°F for 25 minutes, then remove the foil and bake uncovered for an additional 25 minutes. Take the lasagna out of the oven when done and let it rest 10 minutes before cutting to serve. Once made, the lasagna will last a week in the fridge.

  • Recipe kindly shared by the Tesco Community Cookery School with Jamie Oliver. The recipe has been written to be flexible and scalable up to 50 portions.
  • Preheat the oven to 180°C/350°F/gas 4.
  • Put a fifth of your veggie Bolognese sauce into the bottom of a deep ovenproof dish (35cm x 25cm), smoothing it out into the corners.
  • Dollop a fifth of your white sauce over the veggie Bolognese and swirl it in, then cover with an even layer of pasta sheets.
  • Repeat the layering until all the lasagne sheets and sauces are used up.
  • Grate over the cheese.
  • Tear off a sheet of tin foil large enough to cover the baking dish without touching the cheese, and grease the underside. Cover the lasagne with the foil, crimping the edges under the rim to seal.
  • Bake for 45 minutes, or until the pasta is hot through and soft.
  • Remove the foil and return to the oven for a further 15 minutes, or until bubbling and golden.

1 small sweet potato (peeled and 1/4-to 1/2-inch diced (about 1 1/2 cups))
2 red bell peppers (chopped)
1 small red onion (diced)
1 medium zucchini (chopped)

3/4 teaspoon kosher salt (divided)
2 (24-ounce jars) good quality tomato pasta sauce (I use Roasted Garlic)
2 teaspoons balsamic vinegar
1 (10-ounce) package frozen spinach (drained and squeezed dry)
1 (15-ounce) container part-skim ricotta cheese
2 cups freshly grated melty Italian cheese (such as Mozzarella, Fontina, or Provolone (I did a blend of all three. DELISH!))
½ cup freshly finely grated Parmesan cheese (divided)
1 large egg
9 oven-ready (no boil) whole wheat lasagna noodles ((I like Delallo), about 5.5 ounces)
Fresh basil (for serving)

Steps:

  • Preheat the oven to 400 degrees F. Coat a 9x13-inch baking dish with nonstick spray.
  • In a large saucepan or Dutch oven, heat the olive oil over medium heat. Add the sweet potato, bell peppers, red onion, zucchini, dried basil, and ¼ teaspoon kosher salt. Cook until the vegetables are tender and begin to brown, about 10 minutes.
  • Add the tomato sauce and balsamic to the vegetables. Stir to combine then bring the mixture to a gentle simmer. Let simmer, stirring occasionally, for 10 minutes.
  • In a large bowl add the ricotta, 1/4 cup Parmesan, egg, and remaining 1/2 teaspoon salt. Mix well, until the mixture is evenly combined.
  • Stir in the spinach, using a fork to break it up and distribute it as evenly with the ricotta mixture as possible.
  • Spread a thin layer of the vegetable tomato sauce on the bottom of the prepared baking dish in an even layer. Arrange 3 lasagna noodles on top, breaking the ends if needed so that they fit. Leave some space around the noodles, as they will expand as they cook.
  • Top the noodles with 1/3 of the remaining sauce, half of the ricotta mixture, the next 1/3 portion of the sauce, and 1/2 cup of the mozzarella.
  • Top with 3 more noodles, the remaining ricotta mixture, and 1/2 cup mozzarella (no tomato sauce in this layer).
  • Top the cheese with the 3 final noodles. Spread the remaining sauce over the top.
  • Sprinkle with the remaining 1 cup mozzarella cheese and remaining ¼ cup Parmesan.
  • Cover the lasagna with foil (be careful not to let the foil touch the top of the cheese or it will stick-I like to stick a few toothpicks in the top of the lasagna so that they are poking up and keep the foil off of the cheese). Bake it covered for 25 minutes.
  • Remove from the oven, uncover, and rotate the pan by 180. Continue cooking uncovered for 15 to 20 more minutes, until it is hot and bubbly and the cheese is beginning to have brown spots.

Steps:

  • Heat oven to 375°F.
  • Melt butter in medium saucepan on low heat. Stir in flour and pepper; cook and stir 2 min. or until bubbly. Gradually stir in broth; bring to boil on medium heat, stirring constantly. Simmer on low heat 3 to 5 min. or until thickened, stirring constantly. Stir in 3/4 cup Parmesan.
  • Heat dressing in large skillet on medium-high heat. Add carrots; cook and stir 4 min. Stir in peas and garlic; cook 1 min. or until carrots are crisp-tender, stirring occasionally. Set aside. Mix ricotta and remaining Parmesan until blended.

1 onion, peeled and cut into chunks
2 medium carrots, cut into chunks
8 ounces fresh mushrooms
1 cup walnuts
1 small zucchini, cut into chunks

1 teaspoon Italian seasoning
1-2 teaspoons kosher salt + black pepper to taste
one 24-ounce jar of your favorite tomato sauce
one 8-ounce container mascarpone
2 cloves garlic, grated
1 teaspoon salt
2 cups shredded Parmesan cheese
2 1/2 cups shredded mozzarella cheese
1 box uncooked lasagna noodles (about 12 noodles for a 9×13 pan)

Steps:

  • Place the mushrooms, walnuts, and zucchini in a food processor. Pulse a few times until the mixture is very finely chopped. Transfer to a bowl. Repeat this process with garlic, onion, and carrots.
  • Heat butter or olive oil over medium high heat. Add your chopped veggies along with the spices. Sauté for 7-10 minutes until very soft and fragrant. Add tomato sauce and salt; stir to combine. Taste and adjust! Your seasoning amounts will depend on your brand of sauce.
  • Preheat the oven to 400 degrees. Mix mascarpone cheese with grated garlic and salt.
  • Start with spreading a layer of sauce in the bottom of a 9×13 pan. Then, layer in the following order for each layer: a few noodles, 1 cup sauce, a few dollops of mascarpone, 1/2 cup Parmesan, 1/2 cup mozzarella, and repeat (I usually get 4 layers out of this amount). End with noodles, sauce, cheese, and dollops of extra sauce on top to make it pretty.
  • Cover with foil and bake for 40-45 minutes. Remove foil and broil for 5 minutes to get the cheese browned on top. Let stand for 10 minutes or so, then cut and serve!

2 yellow or red peppers, seeds removed, cut into roughly 2cm/¾in chunks
1 courgette, about 300g/10½oz, quartered lengthways and cut into roughly 2cm/¾in chunks
1 large sweet potato, peeled and cut into roughly 2cm/¾in chunks
3 tbsp extra virgin olive oil
1 large onion, finely chopped
½ tsp dried chilli flakes
2 garlic cloves, crushed
2 x 400g tins chopped tomatoes
2 tsp Italian seasoning or dried oregano
1 vegetable stock cube
200ml/7fl oz cold water
100g/3½oz young spinach leaves (optional)
9 -10 dried lasagne sheets
salt and freshly ground black pepper
75g/2½oz plain flour
75g/2½oz butter, cubed
750ml/1¼ pint milk, semi-skimmed or full-fat
125g/4½oz mature cheddar, coarsely grated
75g/2½oz grated mozzarella, or extra cheddar

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Put the peppers, courgette and sweet potato into a large baking tray. Drizzle with 2 tablespoons of the oil, season with salt and pepper and toss together.
  • Roast for 30 minutes, or until softened and lightly browned.
  • While the vegetables are roasting, heat the remaining oil in a large saucepan and gently fry the onion for 5 minutes, stirring regularly.
  • Add the chilli and garlic and cook for a few seconds more. Stir in the tomatoes, Italian seasoning (or dried oregano) and crumbled stock cube. Pour over the water and bring to a gentle simmer. Cook for 10 minutes, stirring regularly. Set aside.
  • For the cheese sauce, put the flour, butter and milk in a large saucepan and place over a medium heat. Whisk constantly with a large metal whisk until the sauce is thickened and smooth. (Use a silicone covered whisk if cooking in a non-stick pan.) Stir in roughly two-thirds of the cheeses and season to taste.
  • Take the vegetables out of the oven and add to the pan with the tomato sauce. Stir in the spinach and cook together for 3 minutes. Season with salt and lots of ground black pepper.
  • Spoon a third of the vegetable mixture over the base of a 2½ -3 litre/4½-5¼ pint ovenproof lasagne dish and cover with a single layer of lasagne. Top with another third of the vegetable mixture (don't worry if it doesn't cover evenly) and a second layer of lasagne.
  • Pour over just under half of the cheese sauce and very gently top with the remaining vegetable mixture. Finish with a final layer of lasagne and the rest of the cheese sauce. Sprinkle the reserved cheese over the top.
  • Bake for 35-40 minutes, or until the pasta has softened and the topping is golden brown and bubbling. Stand for 5 minutes before cutting to allow the filling to settle.

1 small onion, diced
2 - 3 cloves garlic, minced
2 carrots (2 cups), diced
1 zucchini (2 cups), diced
1 yellow squash (2 cups), diced
8 oz. mushrooms, chopped
1/2 teaspoon Italian seasoning (or thyme, basil or marjoram), optional
1 package (10 - 12 oz.) frozen spinach, thawed and drained
1 jar (25 - 28 oz.) pasta sauce, about 3 cups
9 lasagna noodles (approx.), regular or no-boil
2 cups vegan ricotta (Cashew Ricotta Cheese or Tofu Ricotta)
salt & pepper, to taste
almond parmesan, for garnish
fresh basil leaves, julienned, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • Noodles: Cook noodles according to package directions, set aside. If using no boil lasagna noodles like I did there is no need to cook first.
  • Saute Veggies: In a large skillet, heat oil over medium heat, add onion and garlic, saute for about 5 minutes. Add carrots, zucchini, squash, mushrooms, herbs/seasonings and good pinch of salt and pepper, continue to saute for another 5 - 7 minutes. We don't need to saute the zucchini, yellow squash and mushrooms too much, we want their juices to fully release while baking. Remove from heat.
  • Spinach Ricotta: Mix together the cashew ricotta and spinach, mix well.
  • Assemble & Layer: Using a large rectangular baking dish (9 x 12) place about 1/3 cup of sauce on the bottom of the dish spreading to coat, add a layer of pasta, top with 1/2 ricotta cheese and 1/2 vegetables. Add another layer of pasta, 1/2 of the remaining sauce, then the rest of the ricotta, then vegetables. Add one more layer of pasta and top with the remaining sauce. Cover with lid, small silpat or foil.
  • Bake: Cover and bake on the center rack for 40 minutes. Let rest covered for 5 minutes, remove cover and let cool 10 minutes. If not using no-boil noodles, you can remove the cover half way through for a baked look.
  • To Serve: Add a sprinkle of Almond Parmesan and a bit of freshly chopped basil overtop.
  • Serves 9
  • Leftovers can be stored in the refrigerator for up to 5 - 6 days, in a covered container.

1 onion, chopped
2 cloves of garlic, minced
1 large carrot, cut into small pieces
2 stalks of celery, cut into small pieces
3/4 cup red lentils
3 tablespoons tomato paste
1/3 cup dry red wine ((use a vegan brand))
2 cans diced tomatoes ((14.5 oz each))
2 cups vegetable broth
1 teaspoon soy sauce
1/2 teaspoon dried oregano
1 teaspoon dried basil
1/2 cup fresh basil, roughly chopped or torn
salt
black pepper
9 lasagna noodles
3/4 cup vegan sour cream
1 cup vegan cheese shreds

Steps:

  • Cut the celery and the carrots into small pieces.
  • In a large sauce pan, heat the olive oil over medium heat. Sauté the onion for about 2 minutes. Then add the garlic and cook it for another minute.
  • Rinse the red lentils in a colander with cold water. Add the carrots and celery and cook for a further 3 minutes.
  • Stir in the red lentils and the tomato paste.
  • After another minute, deglaze with red wine and allow to evaporate (this will take about 1 minute).
  • Add the diced tomatoes and vegetable broth and simmer for about 15-20 minutes until the sauce is thick and the lentils are fairly soft and good to eat (they shouldn't be too soft).
  • Preheat your oven to 350 °F. Add a cup of the lentil bolognese sauce at the bottom of your casserole dish.
  • Then add a layer of lasagna sheets, then again Bolognese sauce.
  • Top it with some vegan sour cream.
  • Continue with two more layers of sauce and lasagna sheets. Put the rest of the bolognese sauce on top.
  • Sprinkle the lasagna with vegan cheese.
  • Bake the lasagna for 30-35 minutes, depending on your oven.
  • Enjoy the lasagna with a green side salad.

1 cup water
2 tablespoons fresh squeezed lemon juice
2 teaspoon apple cider vinegar
3/4 teaspoon fine sea salt
1/2 teaspoon Dijon mustard
2 tablespoon extra-virgin olive oil
1 medium yellow onion, chopped
3 carrots, chopped about a cup
8 ounces Baby Bella mushrooms, cleaned and chopped up
6 ounces of baby spinach
2 cloves of garlic, minced
Salt and Pepper to taste.
2.5 cups bought or homemade Marinara Sauce
Oven ready lasagna noodles or flat sheet noodles
Fresh parsley for garnish.

Steps:

  • Warm up the oven to 425 degrees Fahrenheit Start with the cashew cream:
  • In a blender, combine the soaked cashews, lemon juice, water, vinegar, salt, and mustard. Blend until smooth and creamy. Be sure to capture any on the side of the blender. If needed, you can add more water but not more than a 1/4 cup. Set aside.
  • Mushroom Veggie Mixture:
  • To a saute pan, add the oil and warm it. To that, add in the mushrooms, carrots, onions until tender. This should take about 10 minutes.
  • Add the spinach and stir gently as it wilts. Then add the garlic and cook for about 30 seconds to draw out the flavor. Quickly salt and pepper and pull from the heat. Set aside.
  • Layering:
  • 3/4 cup of marinara goes into the 9 x 9-inch glass baking pan, spreading carefully to ensure the bottom is fully coated.
  • Place three noodles into the pan, snapping off the needed noodles to get a good fit.
  • In goes 1 cup of the cashew cream, followed by half of the mushroom veggie mix.
  • End the layer with 3/4 cup of marinara.
  • 3 more noodles, 1 cup of cashew cream (keep remaining cashew cream for later), and the mushroom veggies' last half.
  • Top with the final three noodles, 3/4 cup of the marinara smoothing it out across the top.
  • Take parchment paper, spray the side that will be faced down onto the baking dish with a bit of spray oil to help prevent it from sticking.
  • Cover the baking dish with the prepared parchment paper followed by a sheet of aluminum foil.
  • Place the baking dish onto a baking sheet to catch any juices that may overflow, and into the oven, it goes.
  • Bake for 25-30 minutes in the oven at 425 degrees Fahrenheit. You want the corners to be browning and the sauce to bubble warm.
  • Remove from the oven and let it rest 15-20 minutes to set up. Add the cashew cream to the top of the cooling lasagna. The creams should spread nicely with the heat from the lasagna, but if not, add water to it to thin it out the consistency before.
  • Cut and serve!

1 cup fresh basil leaves

2 pounds cherry tomatoes

Steps:

  • Preheat the oven to 350 degrees F.

1 pound shredded low-moisture whole-milk mozzarella (4 cups)

Steps:

  • For the sauce: Put the olive oil and garlic in a medium pot over low heat. Cook the garlic, stirring occasionally at first and more often as it colors, until golden brown, about 7 minutes. Raise the heat to medium-low, add the onions and a large pinch of salt and cook, stirring occasionally, until the onions are softened, about 5 minutes. Add the carrots, and cook, stirring occasionally, until softened, about 5 minutes. Add the tomato paste and red pepper flakes, and cook, stirring constantly, for 2 minutes. Add the tomatoes, bay leaves, basil sprig, thyme and 1 teaspoon salt, raise the heat to medium and bring the sauce to a lively simmer. Continue to cook, stirring frequently, until quite thick (if you draw a spoon through the sauce, you'll see the bottom of the pot for a few seconds before the sauce fills back in), about 30 minutes. As the sauce thickens, turn the heat down a bit so the bottom doesn't scorch. Stir in the chopped basil. Let cool to room temperature before assembling the lasagna. (Makes 1 quart.)
  • To assemble: Preheat the oven to 350 degrees F. Squeeze the spinach in your hands to remove as much liquid as possible. Put it in a large bowl, and stir in the ricotta, 1/2 cup of the Parmesan, the egg, 1 teaspoon salt and the nutmeg.
  • Spread 3/4 cup of the tomato sauce on the bottom of a 9-by-13-inch baking dish. Lay 3 lasagna noodles across the sauce (they won't touch). Spread 3/4 cup tomato sauce on top. Dollop 1/3 of the ricotta mixture (about 1 cup) across the sauce, and use the back of a spoon to spread it (it will smush into the tomato sauce, which is fine). Scatter 1 cup of the mozzarella on top.
  • Repeat the layering 2 more times. Top with the last 3 noodles, spread the last 3/4 cup tomato sauce over them and scatter the remaining 1 cup mozzarella and 1/4 cup Parmesan over the top. Spray a large piece of foil with cooking spray, and cover the baking dish.
  • Bake until the noodles are soft and the cheese has melted, about 40 minutes. Remove the foil, and continue to bake until the cheese is bubbling and the lasagna is slightly browned around the edges, about 15 minutes more. Let rest 10 minutes before serving.
