FRITTATA WITH BACON, CORN, AND GRUYèRE RECIPE



Frittata With Bacon, Corn, and Gruyère Recipe image

You can throw almost anything into a frittata, but filling it with the sweetest summer corn and smoky bacon makes this a simple yet tasty dinner you'll want to eat all season.

8 large eggs
1/4 cup (60ml) whole milk or half and half
5 ounces (140g) cubed Gruyère cheese, divided (see note)
Kosher salt and freshly ground black pepper
1 teaspoon (5ml) olive oil
4 slices thick-cut bacon (about 5 ounces; 140g), diced
1 1/2 cups (225g) fresh corn kernels, cut from about 3 ears of corn (or use frozen and defrosted corn)
5 scallions, roughly chopped
1 jalapeño pepper, seeded and diced (plus a couple of slices for decoration, if desired)

Steps:

  • Adjust oven rack to 4 inches below broiler and preheat broiler to high. In a large bowl, whisk together eggs and milk or half and half until fully combined. Stir in half of cheese and season with salt and pepper. Set aside.
  • Heat oil in a 10-inch oven-safe nonstick or well-seasoned cast iron or carbon steel skillet over medium-high heat until shimmering. Add bacon and cook until light brown but not crisp, about 4 minutes. Transfer to a paper towel-lined plate and remove all but 1 tablespoon bacon fat from pan.
  • Add corn, scallions, and jalapeño to skillet and cook, stirring occasionally, until just tender, about 4 minutes. Season to taste with salt and pepper.
  • Pour eggs into skillet and cook, stirring and scraping pan all over, until very loose curds form throughout, about 2 minutes. Continue to cook until eggs on bottom and edges are set, about 2 minutes. Top with remaining cheese, bacon, and a few jalapeño slices for decoration, if using.
  • Place under broiler and broil until top is just set and a pale golden brown, a few minutes. Serve immediately.

Frittata With Potatoes, Pancetta and Gruyere image

Inspired by a variety of recipes. Like most frittatas, this is refrigerator velcro, and I had a bunch of stuff I wanted to use up. Make sure your potatoes aren't too big; you want the volume of onion-and-potato to be about the same as the volume of egg.

1 tablespoon olive oil
1 cup diced pancetta
1 onion, diced
2 small red potatoes, in 1/2-inch dice
1 garlic clove, minced
4 large eggs
2 tablespoons half-and-half
3/4 cup grated gruyere cheese
1/4 teaspoon dried thyme
salt
ground black pepper
1/2 cup grated parmesan cheese
sour cream, for garnish
minced chives, for garnish

Steps:

  • Heat oil in 12" non-stick skillet until shimmering. Add pancetta and cook over medium heat until browned on edges, 6-8 minutes. Remove to a bowl with a slotted spoon and set aside.
  • Add onion and potato to fat in skillet and cook until tender, 8-10 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Beat eggs and half-and-half. Stir in Gruyere, thyme, salt and pepper.
  • Return pancetta to skillet, along with eggs. Stir well. Occasionally pull eggs away from edge of pan and tilt to allow any liquid egg to run under.
  • When eggs are about half-set, sprinkle with Parmesan and place into a preheated 400F oven. Eggs are done when puffed and golden, about 10 minutes. Garnish with sour cream and chives.

  • Preheat the broiler and position a rack 6 inches from the heat. In a 12-inch nonstick ovenproof skillet, cook the bacon over moderately high heat, stirring occasionally, until softened, 3 to 5 minutes. Add the shallots and cook, stirring occasionally, until softened, about 3 minutes. Add the brussels sprouts, season with salt and pepper and cook, tossing occasionally, until crisp-tender and lightly browned, about 5 minutes.
  • Meanwhile, in a large bowl, beat the eggs with the milk, 1 teaspoon of salt and 1/4 teaspoon of pepper. Stir in the shredded cheese and snipped chives. Pour the egg mixture into the skillet and cook over moderate heat, stirring gently, until the eggs start to set and the bottom is lightly browned, about 5 minutes. Transfer the skillet to the oven and broil the frittata for about 3 minutes, until the center is just set. Run a rubber spatula around the edge of the frittata and slide it onto a serving plate, then cut it into 6 pieces and serve.
