SAUSAGE AND APPLE STUFFING

Chopped apples, crumbled sweet Italian sausage and dried cranberries come together in this sweet and savory stuffing.

2 tablespoons unsalted butter, melted, plus more for buttering the baking dish
One 1-pound loaf sliced white sandwich bread
1 pound sweet Italian sausage, casings removed
1/2 cup dried cranberries
2 teaspoons fresh thyme leaves, roughly chopped
1 large apple, such as Golden Delicious, peeled, cored and coarsely chopped
1 onion, chopped
2 stalks celery with leaves, chopped
Kosher salt and freshly ground black pepper
3 cups low-sodium chicken broth
1/4 cup chopped fresh flat-leaf parsley, plus more for garnish
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 325 degrees F. Butter a shallow 3-quart baking dish. Cut or tear the bread into bite-size pieces. Divide between 2 rimmed baking sheets and spread into a single layer. Bake until slightly dry and crisp, 15 to 20 minutes. Cool completely.
  • Meanwhile, cook the sausage in a large nonstick skillet over medium-high heat, breaking up the meat into small pieces with a wooden spoon until browned and cooked through, about 5 minutes Transfer the sausage to a plate using a slotted spoon. Add the cranberries, thyme, apple, onion, celery, 1/2 teaspoon salt and a few grinds of pepper to the drippings in the skillet and cook, stirring occasionally, until soft, about 5 minutes. Add the broth and parsley and bring to a boil. Remove from the heat and pour into a large bowl.
  • Add the toasted bread to the onion mixture and toss until evenly moistened. Stir in the egg and cooked sausage. Transfer to the prepared baking dish and evenly spread without packing the stuffing down too much. Bake until the top is crusty, about 40 minutes. Drizzle the melted butter over the top and continue to bake until the top is crisp and golden, about 20 minutes more. Sprinkle the top with some chopped parsley.

2 tablespoon extra-virgin olive oil
1 tablespoon vegan butter
1 large Vidalia onion (diced)
3 celery stalks (diced)
2 medium apples (cored, peeled and diced)
2 garlic cloves (minced)
1 cup chopped walnuts (toasted)
2 vegan sausages (chopped (we use Beyond Meat's Hot Italian))
2 tablespoon fresh sage (minced)
2 tablespoon fresh thyme (minced)
Sea salt and black pepper to taste
1 14 oz bag unseasoned cubed breadcrumbs
3 cups low-sodium vegetable broth

Steps:

  • Preheat oven to 375°F (190°C)
  • In a large cast-iron skillet or Dutch oven, heat the olive oil and butter on medium-high heat. When the oil is hot, add the onion and celery and stir well. Cook for five minutes, stirring frequently.
  • Add the apples and stir to combine. Cook for 10 minutes, stirring frequently.
  • Add the garlic and sausage and stir to combine. Cook for 5 minutes, stirring frequently.
  • Add the toasted walnuts, herbs, and salt and pepper and stir to combine and cook for two minutes.
  • Stir in the breadcrumbs and pour the vegetable broth evenly over the top. Stir the broth in until the bread is covered in the broth. You can add more if there are any dry crumbs, but you don't want them swimming in liquid or it will get mushy.
  • Put the pan in the oven and roast for 15 minutes, or until the top is browned and crispy.

16 oz dried bread cubes ((see instructions))
1 large sweet onion, (diced)
4 stalks celery, (diced)
2 large carrots, (small diced)
6 cloves garlic, (minced)
1 large sweet, crisp apple ((like Fuji), small diced)
1/2 cup sage leaves, (chopped fine (1/2 cup before chopping))
4 sprigs thyme, (leave removed)
2 tbsp fresh rosemary (chopped)
3/4 tsp black pepper, (more to taste)
1/2 tsp salt, (more to taste)
2/3 cup vegan butter (+ more for greasing pan and topping)
14 oz vegan sausage ((we used Lightlife))
2-3 cups vegetable broth

Steps:

  • *You need stale bread in order to properly make this recipe. In order to do this, buy a loaf of Italian bread, cut it up into small 1/2" cubes and place on a tray in a single layer to dry out (get stale). This takes about a day or two. Once your bread is ready, then you can proceed with the rest of the recipe.
  • Preheat oven to 350 degrees. Chop up all vegetables and herbs.
  • Add 2 tablespoons of the butter to a large stock pot over medium heat.
  • Add vegan sausage, 1 tablespoon of the sage and 1 sprig of thyme leaves. Cook the sausage according to the package, chopping it up while cooking until crumbly.
  • Remove the sausage to a plate.
  • In the same pot, add the remaining butter.
  • Once melted, add in onions, celery, apples, and carrots. Cook for 5 minutes, stirring occasionally.
  • Add in garlic and herbs, salt and pepper, and cook for 5 more minutes.
  • Add in the cooked vegan sausage and stir together, cook for another minute or two.
  • Add bread cubes and 1 cup of broth. Gently toss together. Turn off heat.
  • Add In more broth, 1/2 cup at a time, stirring after each, until your mixture is soft. You may not use all the broth. *You do NOT want soggy bread or it won't cook properly.
  • Place mixture in a lightly buttered 9x13 casserole dish and place a few pats of butter on top.
  • Cover with foil (or a baking sheet if you avoid foil).
  • Bake for 35 minutes. The uncover and cook for 15 more or until the bread pieces on top are golden brown.
  • Remove from oven and let set 5 minutes before serving. Best served warm.

6 tablespoons unsalted butter, plus more for greasing the pan and topping
1 pound fresh sage sausage, casings removed
1 medium onion, chopped
2 cooking apples, such as Gravenstein, Rome, or Golden Delicious, peeled, cored, and chopped
1 to 2 ribs celery with leaves, chopped
Kosher salt
3 cups chicken broth, homemade or low-sodium canned
1/4 cup chopped fresh flat-leaf parsley
1/2 cup walnut pieces, toasted (see Cook's Note)
2 large eggs, beaten

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and 1/2 teaspoon salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
  • Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. Loosely pack the dressing in the prepared pan and cook uncovered until the top forms a crust, about 40 minutes. Drizzle about 2 tablespoons of turkey pan drippings or melted butter over the top. Cook until the top is crisp and golden, about 20 minutes more.

6 medium firm apples (such as Macoun or Braeburn), peeled and cut into large cubes
1 tablespoon honey
1 tablespoon red wine vinegar
12 slices white sandwich bread, cut into 1/2-inch cubes
1 pound spicy Italian sausage, casings removed, broken into bite-size pieces
10 sage leaves, cut into thin strips
2 tablespoons fresh thyme
1 teaspoon chopped fresh rosemary
4 leeks (white and light green parts only), halved lengthwise and thinly sliced crosswise
6 stalks celery, halved lengthwise and thinly sliced crosswise
1 pound small parsnips, peeled, quartered lengthwise and thinly sliced crosswise
Kosher salt and freshly ground white pepper
1 cup low-sodium chicken stock

Steps:

  • Preheat the oven to 450 degrees F. Heat 1 tablespoon butter in a large skillet over medium-high heat until it melts and starts to brown; add the apples, reduce the heat to medium and cook, stirring, until slightly tender, about 4 minutes. Stir in the honey and vinegar, then transfer to a large bowl to cool.
  • Melt 2 tablespoons butter in the same skillet over medium-low heat. Add the bread cubes and toss to coat, then transfer to one side of a large rimmed baking sheet; add the sausage to the other side. Bake until the sausage is cooked through and the bread is toasted, 8 to 10 minutes. Add the sausage and bread to the bowl with the apples; add the sage, thyme and rosemary.
  • Heat another 1 tablespoon butter in the skillet over medium heat. Add half each of the leeks, celery and parsnips, and 2 tablespoons water; season with salt and pepper. Cook until the vegetables are translucent, about 8 minutes, then transfer to the bowl with the sausage-apple mixture. Add the remaining leeks, celery and parsnips, and 2 tablespoons water to the skillet, season with salt and pepper and cook about 8 minutes; transfer to the bowl and toss. Warm a spoonful of the stuffing in the skillet with a touch of butter and taste the seasoning; adjust as needed. (It's so important to taste your stuffing while it's hot to get a sense of the seasonings and flavors.) Add the chicken stock to the bowl and toss to moisten all of the ingredients.
  • Reduce the oven temperature to 350 degrees F. Brush a 9-by-13-inch baking dish with 1 tablespoon butter. Transfer the stuffing mixture to the dish and dot with the remaining 3 tablespoons butter. Cover with aluminum foil and bake 40 minutes, then uncover and continue baking until golden brown, about 40 more minutes.

1 Granny Smith apple, peeled and chopped coarsely
1 teaspoon freshly minced thyme leaves
1 teaspoon freshly chopped sage leaves
1/2 cup bourbon
1 1/4 pounds cubed and dried cornbread stuffing, store-bought
1/4 cup chopped fresh parsley leaves
2 cups turkey or low-sodium chicken stock
2 eggs, beaten
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • Heat olive oil over medium-high heat in 12-inch skillet.
  • Cook sausage for 5 to 7 minutes until browned. Add onions and celery and saute until softened. Add salt and pepper, to taste. Mix in apples, thyme and sage and saute for another 2 minutes. Add bourbon. Allow to simmer until bourbon is almost evaporated; 1 to 2 minutes.
  • In a large bowl, add cornbread stuffing, parsley, chicken stock, eggs and pecans. Mix well. Mix in vegetable mixture to bowl. Combine and stir well together. Add to a large casserole dish and bake for 30 minutes.

1 pound breakfast sausage or Italian sausage, casings removed
6 teaspoons poultry seasoning
2 teaspoons chopped fresh rosemary leaves, (about 4 sprigs)
2 teaspoons chopped fresh sage leaves, (about 6 leaves)
2 teaspoons chopped fresh parsley leaves, (about 4 to 6 sprigs)
2 cups dried cranberries
1 box stuffing mix (not cornbread) (recommended: Pepperidge Farm)
2 cups (1 pint) vegetable stock
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the butter in a large skillet and saute the onions, celery, leeks, apples, and sausage, breaking up the sausage as you cook. After about 10 minutes, add the poultry seasoning, fresh herbs and dried cranberries. Add the dried stuffing mix and moisten with the vegetable stock. Season stuffing mix with salt and pepper, to taste. (I like the stuffing a little wetter - if you don't, just add less stock)
  • Place into a buttered casserole dish and bake for 45 minutes.

Steps:

  • Preheat oven to 300 degrees F.
  • Put the bread cubes on a 13 by 18 by 1-inch baking sheet and bake them in the oven for 7 minutes.
  • In a large saute pan, melt the butter and add the onion, celery, apples, parsley, rosemary, salt, and pepper. Saute for 10 minutes, until the mixture is soft.
  • Combine the bread cubes and cooked vegetables in a large bowl and add the chicken stock, and almonds, if desired.
  • Place the stuffing into the main cavity of the turkey and into the neck of the bird. I cook a 12-pound turkey for 2 1/2 hours at 350 degrees F in a preheated oven. Make sure the stuffing in the cavity is secured by wrapping the legs tightly with string.

Steps:

  • Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt 2 tablespoons butter in a large skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 6 to 8 minutes. Remove with a slotted spoon and transfer to a plate.

  • Cover the dish with foil and bake 30 minutes, then uncover and bake until golden, about 30 more minutes.

This is a veganized version of a favorite stuffing recipe in my family. When I became a vegan a few years ago, my mom and I converted all of our favorite Thanksgiving recipes, and this one turned out especially great in vegan form. You could easily make in non-vegan by using real sausage instead. This makes quite a bit, so feel free to halve the recipe.

4 apples, chopped
1 cup vegetable broth
1 cup white wine
salt and pepper
