This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

These are both sweet and tangy, and a versatile twist on the usual chicken wings. They can be served for dinner, and can also be made ahead of time. The wings can also be served on a buffet line, kept warm in a buffet server or in a crock pot.

1/2 cup pineapple juice
1/2 cup ketchup
1/4 cup packed brown sugar
1/4 cup teriyaki marinade, and sauce
1/4 cup honey
2 garlic cloves, minced
2 lbs chicken wings, drummettes (about 24)

Steps:

  • Preheat oven to 350 degrees. Line a 13x9-inch pan with foil and lightly spray with an aerosol cooking spray.
  • In a 1-quart saucepan, heat all ingredients except chicken to boiling, stirring occasionally. Place chicken in pan; pour sauce over chicken.
  • Bake uncovered about 1 hour, turning chicken 2 or 3 times, until juice of chicken is clear when thickest part is cut to bone (180 degrees).
  • TO SERVE FOR A BUFFET: Place chicken wings in a buffet line or buffet server which has been sprayed with aerosol cooking spray. Cover; keep warm on low heat.
  • TO MAKE AHEAD: Prepare and bake the drummettes up to 24 hours before serving. Cover with foil and refrigerate, then reheat them in the oven.

The popular grilled chicken kebabs of Lebanon and Syria, called shish tawuq in Arabic are probably of Turkish origin, from the Turkish word for chicken, tavuk. As with so many grilled foods in the Arab world, this preparation is traditionally served at special grill restaurants in Lebanon. Every cook uses, it seems, a different spice blend, so I give you some options to play with. Serve these hot as a passed appetizer or at a sit-down dinner or meze party. If you are serving it as a passed appetizer, use 6 or 8-inch wooden skewers with fewer pieces of meat on them. You may have to cut the skewers down to size.

2 pounds skinless, boneless chicken breasts, trimmed of any fat and cut into cubes
1/2 cup extra-virgin olive oil
3 tablespoons fresh lemon juice
1 small onion, grated
1/2 teaspoon freshly ground cinnamon
1/2 teaspoon freshly ground cardamom seeds (from about 20 pods)
1 teaspoon dried or fresh thyme leaves
Salt and freshly ground black pepper
1 teaspoon freshly ground cumin seeds, optional
1 teaspoon Baharat, recipe follows
1/2 teaspoon paprika
1/4 cup black peppercorns
1/4 cup allspice berries
2 teaspoons ground cinnamon
1 teaspoon freshly grated nutmeg

Steps:

  • Marinate the chicken cubes in a glass or ceramic bowl or pan with the olive oil, lemon juice, onion, cinnamon, cardamom, thyme, salt, pepper, cumin, if using, Baharat, and paprika for 6 hours, covered, in the refrigerator, turning the cubes occasionally. Preheat a gas grill for 15 minutes on high or prepare a hot charcoal fire. Skewer the chicken cubes so they touch each other but do not press against each other. If possible, use a skewer rack so the chicken grills without touching the grilling grate. Grill until golden brown, 20 to 30 minutes, turning frequently. Serve hot.
  • Grind the peppercorns and allspice together and blend with the cinnamon and nutmeg. Store in a jar in your spice rack, away from sunlight. It will lose pungency as time goes by, but, properly stored, it will be good for many months.

3 limes
4 garlic cloves, minced
1 large onion, peeled and roughly chopped
3 spring onions, roughly chopped
3 scotch bonnet peppers, roughly chopped
1/2 teaspoon turmeric
3 tablespoons ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons brown sugar
1/2 teaspoon dried thyme
1 ounce fresh ginger, peeled
1 teaspoon ground black pepper
1/4 cup vegetable oil
3 tablespoons water
1 teaspoon fresh cilantro, roughly chopped
1 pinch cayenne pepper
4 boneless chicken breasts (cut in bite sized chunks)
1 large red pepper (chopped skewer sized)
1 large orange bell pepper (chopped skewer sized)
1 large green pepper (chopped skewer sized)
1 large yucca root, peeled and cooked for 10 minutes in hot, boiling water (chopped for skewer)
1 large sweet potato, peeled and cooked for 10 minutes in hot boiling water (chopped for skewer)
1 (15 1/4 ounce) can pineapple chunks (juice drained, can keep for later addition to extra reserved rub)
12 small onions, skins peeled off (small white onions)
1 mango (peeled and chopped into bite size pieces)
2 cups cooked rice
1 teaspoon cilantro (optional)
1 green onion, sliced in thin slices
1/2 cup coconut milk

Steps:

  • Slice limes in half, squeeze lime juice into food processor or Magic Bullet bowl.
  • De seed the chili, (be careful and use gloves) only using the outside flesh.
  • Add garlic and rest ingredients to food processor bowl.
  • Blend until all bits are mixed.
  • Save 1/4 of marinade to dot on meat after grilling.
  • Place meat into a dish or plastic bag, making sure the meat is completely covered.
  • Put in refrigerator for at least 2 hours, more is better. (Up to 24 hours for outstanding tastes).
  • If using wooden skewers, make sure you have soaked them in water for at least 30 minutes.
  • Prepare grill, and remove meat from marinade, (throw excess away).
  • Add 1 tablespoon of pineapple juice to extra reserved amount of jerk seasoning.
  • Thread chicken with vegetable, and fruit ingredients onto skewers in your own unique, creative way.
  • Carefully put chicken/vegetable skewers on grill, and turning frequently, cook for at least 10-15 minutes at a medium heat. (Watch them carefully).
  • Last 3-5 minutes lavishly apply (as desired) the extra Jerk Seasoning, to the kabobs.

8 bamboo skewers (12 inch)
1 tablespoon oil
1/2 cup finely chopped onion
2 tablespoons brown sugar
1/4 cup chili sauce
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon allspice
1/2 teaspoon ginger
1/4-1/2 teaspoon cayenne
4 boneless skinless chicken breast halves

Steps:

  • Heat grill.
  • Soak bamboo skewers in water for about 30 minutes.
  • Heat oil in small saucepan over medium-high heat until hot.
  • Add onion; cook and stir until tender.
  • Stir in brown sugar, chili sauce, lime juice, salt, allspice, ginger, and cayenne.
  • Remove from heat.
  • Cut chicken breast half into 1/2 inch-wide length-wise strips (not cubes!!) Add spice mixture, toss to coat.
  • Weave chicken strips onto skewers.
  • When ready to grill, oil grill rack.
  • Place kabobs on gas grill over medium heat or on charcoal grill 4-6 inches from medium coals.
  • Cook 7-10 minutes , or until chicken is no longer pink, turning once and brushing frequently with spice mixture.

1 lb chicken breast fillet
3 tablespoons Spanish olive oil (plus extra for oiling)
1 lemon, juice of
2 garlic cloves, crushed
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon hot smoked paprika (or sweet)
1/4 teaspoon ground cinnamon
1/2 teaspoon dried oregano
salt
fresh parsley, chopped (for garnish)

Steps:

  • Cut the chicken into 1-inch cubes and place in a large, shallow, nonmetallic dish. Put all the remaining ingredients, except parsley, in a bowl and whisk together. Pour the marinade over the chicken cubes and toss the meat in the marinade until well coated. Cover and let marinate in the refrigerator for 8 hours or overnight, turning the chicken 2-3 times if possible.
  • If using wooden skewers, soak the skewers in cold water for about 30 minutes to prevent burning and to keep food from sticking. If using metal skewers, lightly brush with oil. Preheat the broiler or grill pan. Remove the chicken pieces from the marinade, reserving the remaining marinade and thread an equal quantity onto each prepared skewer leaving a little space between each piece.
  • Brush the broiler rack or grill pan with a little oil. Add the kabobs and cook, turning frequently and brushing with the reserved marinade halfway through cooking, for 15 minutes or until browned on all sides, tender, and cooked through. Serve hot, sprinkled with chopped parsley to garnish.

I just tried this recipe from my new Weber's Way to Grill book -- it turned out really good! It's a great quick recipe, as it can marinate for as little as 30 minutes, but still looks impressive. I've published this recipe in the minimum, so it can be used for 1 or 2 servings and easily increased for more. Preparation time includes minimum marinating time.

1/2 large onion, coarsely chopped
1/4 cup fresh lemon juice (I use bottled)
1 tablespoon dried oregano
1 tablespoon sweet paprika
2 garlic cloves, crushed
1/2 cup extra virgin olive oil
2 chicken breasts, cut into pieces
2 -5 skewers, soaked in water for at least 30 minutes

Steps:

  • Combine onion, lemon juice, oregano, paprika and garlic and puree in a small food processor blender.
  • Add olive oil and process until well mixed.
  • Combine chicken and marinade in a resealable plastic bag or other container so that chicken is completely covered (I just put it in a bowl and toss it periodically). Let marinade for at least 30 minutes, but longer is ok, too. Remember, because the marinade has oil in it, the oil will rise to the top so you may have to keep stirring it if you want to let it sit longer.
  • Thread chicken pieces onto skewers and grill on direct medium heat for approximately 8 minutes per side, depending on preference and grill heat. I usually have my grill up to high, so the chicken only takes about 12 minutes total.

1 (15 1/4 ounce) can unsweetened pineapple chunks
1/2 cup soy sauce

2 teaspoons ground ginger
1 teaspoon dry mustard
1/4 teaspoon fresh ground pepper

  • Drain pineapple, keep 1/2 cup juice.

  • Pour over chicken.
  • Cover and chill for 1 hour.
  • Remove chicken from marinade, reserve marinade.
  • Alternate chicken, pineapple, green pepper, mushrooms, and tomatoes on skewers.
  • Grill kabobs over hot coals 20 minutes or until chicken is done.
  • Turn and baste frequently with marinade.
  • Serve over hot rice.
