HAM AND SWISS LAYERED SALAD
Layered salads rank among the classics in the potluck hall of fame. In this one, the combination of ham, cheese, egg and bacon is like a deconstructed sandwich, making it hearty enough for a main course. -Stacy Huggins, Valley Center, California

SARASOTA'S HAM AND SWISS CHEESE SALAD
This is sort of a "NO-measurements" salad. Ham, cheese, olives, onion and lettuce. I like more olives where others may like more cheese or ham. This just reminds me of a ham and cheese sandwich I had back in MI many years ago. Thick slices, crisp lettuce and a creamy mustard sauce, Recipe #413903.

Steps:
- Salad -- Just rough chop the lettuce, add the ham, swiss cheese, whole olives and Durkee onions (more or less depending on what you like. I save some for the top as well as a garnish. Now if you can't find the Durkee fried onions, just use a regular white onion. I just like the crunch the Durkee onions gives the salad. I like to lightly season with salt and pepper and then drizzle your favorite dressing over the top and toss well. I like to serve it with Recipe #413903. The creamy mustard dressing goes perfect with this. You can also use a ranch dressing or your favorite vinaigrette.
- It is a simple classic recipe, but I absolutely love it. And feel free to add more or less ingredients as needed. ENJOY!
SWISS CHEESE SALAD
This is from "The Swiss Cookbook". I had to make some changes to this because it was more like celery-cheese salad than what we normally think of as potato salad. If you want the original Swiss recipe, use 2 cups each of cheese, potatoes and celery. (See what I mean? The potatoes were just LOST.) Also, the sugar wasn't in there, but it needed a very little bit very badly.

Steps:
- You do not have to peel Yukon Golds for this recipe. Cook them; rinse with cold water to stop cooking process. Let dry at room temp until they have cooled off. I think it was about 30 minutes with 1/2 inch cubes.
- Combine the cheese, potatoes and celery.
- Blend the mayonnaise with mustard, worcestershire sauce an sugar. Add to the cheese mixture and blend well.
- Line a flat dish with salad greens. Pile the cheese salad on it in a mound. Sprinkle with the nuts. I skipped the salad greens, but this would make for pretty contrast.

Steps:
- Preheat oven to 350.
- In a small mixing bowl, combine mayo, sour cream, seeds & pepper; stir in kraut; set aside.
- On a foil-lined baking sheet, place six slices bread--first brush each with melted butter (save some for the other half of the sammie); top with a slice of cheese, then 1/6th of the kraut mixture, then a slice of ham and two slices of cheese--do this on all six slices of bread.
- Brush remaining six slices of bread with melted butter; place on cheese--with butter side up, to make six sandwiches.
- Bake for 10 minutes (cheese is melted, bread is lightly browned)--turn once during that time.
- Remove from oven; slice diagonally, serve with pickles.
- SEPTEMBER HARVEST: Remember Johnny Appleseed by placing a few thin slices of apple between the ham and cheese.
- NEBRASKA REUBEN: Salute Omaha's claim to fame and use thinly sliced corned beef instead of the ham.
- CRUNCHY BITES: Add a few sunflower kernels to the sauerkraut mixture and honor those hardy souls in North Dakota who raise huge fields of sunflowers!
- BOOST YOUR PROTEIN: Stir about a 1/4-cup of cooked edible soybeans (edamame) into the sauerkraut mixture and thank a South Dakota farmer!
SWISS CHEESE SALAD
I love salads that can be made ahead of time. This particular salad looks nicer when the lettuce is shredded (taco style). You might also want to "eyeball" how much dressing to add. I typically don't use it all at once, and have enough dressing left over to make one more salad at a later date. It is from Taste of Home magazine.

HAM AND SWISS CREPES WITH CHOPPED SALAD
Steps:
- For the crepe batter, combine the flour and a pinch of salt in a bowl and make a well in the center. Add the eggs, milk, and brandy to the well and whisk to combine. Stir in the melted butter. Cover the batter and set aside for 20 minutes.
- While the batter is resting, halve the red and yellow cherry tomatoes and add them to a salad bowl. Add the basil, parsley, balsamic vinegar, EVOO, salt, and pepper. Toss to coat. Add the cucumbers, watercress, and onions.
- Preheat a 10-inch nonstick skillet over medium-low heat with a drizzle of vegetable oil. Cover the bottom of the skillet with just enough batter to coat, lifting and shaking the skillet to help the batter along. Let the crepe cook and lightly brown on one side, just about 1 minute. Turn the crepe with a rubber spatula, lifting up the edges, then use a toothpick or your finger to flip it over. Once it is flipped, scatter some of the cheese and ham on top. Season with a little salt and pepper, then fold the crepe over and continue to cook until the cheese starts to melt. Transfer the crepe to a plate and cover with foil to keep warm. Repeat this 7 more times to serve 2 crepes per person.
- Divide the 8 crepes among 4 serving plates; serve some salad next to the crepes.
