4 cups cooked tarbais or white beans, recipe below
4 cups braising liquids (lamb, chicken, duck or rabbit)
8 1-oz pieces braised lamb
8 oz duck or rabbit confit, medium to large pieces removed from bones
2 4-oz pork sausages in casing, seared and sliced into 4 pieces each
4 slices pancetta, 1/3- to 1/4-inch thick
8 Tablespoons duck fat
8 Tablespoons breadcrumbs
1/2 cup duck or pancetta fat
1 large white onion
3 garlic cloves, sliced in half
5 sprigs thyme
3 sprigs rosemary
2 bay leaves
Pinch chili flakes
1/2 cup tomato paste
1/2 cup red wine
3/4 quart tarbais or white beans, soaked overnight
Kosher salt, to taste

Steps:

  • Preheat convection oven to 350 degrees F. Place an earthenware dish into the oven to warm.
  • In a large saute pan combine white beans, liquids, lamb, duck and sausages. Place the slices of pancetta in another pan and sear until crisp on one side. Bring the meat and bean mixture to a simmer and pour into the hot earthenware dish. Once the pancetta is crisp on one side, place unseared side on top of the bean mixture, leaving crisp side facing upward. Place back into the oven. Cook until cassoulet is hot and the bean mixture is simmering. The liquid should be reduced but the bean mixture should still be very loose and moist. Remove earthenware dish from the oven. Drizzle duck fat on top and finish with breadcrumbs.
  • Beans for Cassoulet:
  • In a large sauce pot warm fat over medium high heat. Add onions, garlic, thyme, rosemary, bay and chili flakes. Cook until onions are soft, then add tomato paste and cook until tomato has caramelized on bottom of pan, 5 to 10 minutes. Deglaze with red wine and cook until reduce to au sec (nearly dry). Add beans, stir to coat with tomato, add water to cover. Bring to a simmer over medium-high heat, then reduce temperature to keep beans cooking at a gentle simmer. Add water as needed. Cook until the beans are tender and starch texture becomes creamy, up to 2 hours depending on the beans. Pour into a shallow pan and salt appropriately. Place into refrigerator and cool.

An easy veggie cassoulet. I hate to use 2 pots, so if you have a cast iron casserole that goes stove top to oven, use that (although it is nice to have a big surface area for the bread topping). Update Jan 2011 - I forgot to give proper credit for this recipe, I believe it came from the original Moosewood cookbook, adapted from there. Having made this a few times now and as one reviewer mentioned below, you could take or leave potatoes in this. It's more filling with them, but they don't add a whole lot. When including them be sure to cut in a fairly small dice because they've got to cook through in about 45 mins. If the pieces are too large they won't be done. I've really come to love this recipe though, find a nice blend of herbes de provence, it really makes it. Bon Apetit!

2 tablespoons olive oil
1 medium onion, diced
1 large carrot, diced
1 stalk celery, diced
1 large red potatoes, diced
6 garlic cloves, minced
1 tablespoon herbes de provence (there are a few great recipes on the Zaar)
1/2 teaspoon sea salt
1/2 teaspoon pepper
1 bay leaf
2 (15 ounce) cans cannellini beans, drained (aka white beans, Great Northern)
1 (14 1/2 ounce) can diced tomatoes
2 cups vegetable broth
2 tablespoons olive oil
3 slices whole wheat bread
2 sprigs parsley
4 garlic cloves, peeled

Steps:

  • Preheat oven to 325°F In a large skillet, sauté onion, carrot and potato in olive oil over medium-high heat 5 minutes. Add garlic, herbes de Provence, salt and pepper and sauté another minute.
  • Combine vegetables with bay leaf, beans, tomatoes and vegetable broth in a large, lightly oiled casserole dish. Bake uncovered 20 minutes.
  • To make the bread crumb topping - combine olive oil, bread, parsley and garlic in a food processor; puree on high until finely crumbled.
  • Remove cassoulet from oven and take out bay leaf. Raise oven temperature to 400°F (205°C). Sprinkle half the bread crumbs on top; bake another 15 minutes.
  • Remove cassoulet from oven; stir bread crumb topping into beans. Top with remaining bread crumbs. Bake another 15 minutes or until topping is lightly browned. Serve immediately.

8 ounces vegetable broth
1 medium onion (diced)
4 garlic cloves (minced)
2 carrots (peeled and chopped)
2 celery stalks (chopped)
2 tablespoons fresh thyme (divided)
2 tablespoons fresh parsley (divided)
1 medium tomato (diced)
2 tablespoons tomato paste
15- ounce can white beans such as cannellini (undrained (use low-sodium or no salt if possible))
Thyme sprigs for garnish

Steps:

  • Pour a shallow layer of vegetable broth into a soup pot and heat. Sauté onion and garlic over high heat until onions start to become translucent, about 2 minutes.
  • Add carrots, celery, and remaining broth and bring to a boil. Once boiling, reduce to medium, cover, and keep cooking until carrots are softer but still firm, about 5 minutes.
  • Add half of the thyme and parsley, followed by the tomato and tomato paste, stirring to combine.
  • Continue to cook until carrots are fork tender and soft, but not mushy or not falling apart, about 4 more minutes.
  • Stir in beans (with liquid) until well combined and add the remaining thyme and parsley. Reduce heat to low and cook for another minute or two, just to warm the beans up a bit.
  • Stir and taste, adding salt and black pepper if desired. Ladle into bowls and garnish with a thyme sprig.

350g dried haricot beans
a bundle of thyme, bay leaf and parsley stalks
3 medium onions , 1 quartered, 2 chopped
450g carrots , 2 quartered, rest in chunks
11 tbsp extra-virgin olive oil
2 celery sticks, chopped
4 garlic cloves , chopped
400g can chopped tomatoes
1 tsp light muscovado sugar
4 tsp chopped fresh tarragon
1 medium butternut squash , peeled, seeded and cut into chunks
1 medium celeriac , peeled and cut into chunks
1 tbsp Dijon mustard
4 tbsp chopped fresh parsley
85g fresh white bread crumbs

Steps:

  • Bring the beans to boil in a saucepan of cold water, simmer for 5 minutes, take off heat and cover tightly. Leave for 2 hours.
  • Drain the beans, return to pan, cover with fresh cold water and add the herb bundle and vegetable quarters. Bring to boil and simmer for 1 hour until tender.
  • Preheat oven to 200C/Gas 6/fan oven 180C. Heat 3 tablespoons of the oil in a casserole and fry the chopped onion and celery until soft. Add the garlic and cook for 3-4 minutes. Stir in the tomatoes, sugar and half the tarragon. Season.
  • Drain beans, retaining 1.2 litres/2 pints of liquid. Discard veg and herbs. Stir 600ml/1 pint of the liquid into the tomato mixture and simmer, half-covered, for 30 minutes. Toss the squash, carrot and celeriac chunks in 5 tablespoons of oil. Season and roast in a tray for 30 minutes.
  • Remove vegetables and reduce heat to 180C/Gas 4/fan oven 160C. Stir beans, vegetables, mustard and half the parsley into the casserole. Add liquid if needed to make the mixture nicely moist. Check seasoning. Turn into a wide baking dish. (You can prepare to this stage the day before. Cool, cover and refrigerate. Next day, if the beans have absorbed too much liquid, moisten with bean liquid or stock.)
  • Mix the breadcrumbs with the remaining parsley and tarragon. Scatter over and drizzle with remaining oil. Bake for 50 minutes. (Add an extra 10 minutes if making ahead.) Serve from the dish.

1 large onion (280g) (sliced)
1 1/2 tbsp olive oil
2 Romano peppers (long sweet peppers) (sliced widthways, pith and seeds removed)
1/4 tsp dried red chilli flakes
1/2 tsp smoked paprika
1 level tbsp chopped fresh rosemary
2 fat cloves of garlic (minced)
50 ml vegan red wine (optional)
2 400g tins of chopped tomatoes
80 ml water
1 400g tin of butter beans (drained and rinsed in cold water)
A small bunch of fresh thyme
1 large dried bay leaf
6 vegan sausages (I used Cauldron's vegan sausages)
1/2 tsp sea salt
1/4 tsp cracked black pepper (+ more for serving)
A tbsp flat leaf parsley

Steps:

  • Heat the oil in a large saute pan or casserole dish. Add the onion plus 1/4 tsp of sea salt and cook over a low heat for about 20 minutes stirring regularly until they are soft and golden.
  • Turn up the heat to medium then add the chilli flakes, smoked paprika and rosemary and cook for a minute, then add the garlic, cook for another minute.Pour the wine, if using, into the pan and stir well until the wine has reduced fully then pour in the tins of tomatoes. Add some water to the empty tins, give them a little swirl then pour it into the pan as well.
  • Now add the peppers, beans, thyme, bay leaf salt and pepper. Stir well then cover with a lid, turn down the heat a little and leave to simmer for about 10 minutes.
  • While the sauce is simmering cook the sausages in a little olive oil, you can grill or fry them it's up to you I fry them.Once they are cooked remove from the pan and pat dry with some kitchen paper. Cut the sausages in half.
  • Remove the lid from the pan then add the sausages to the tomato and bean sauce. Check the seasoning. Turn up the heat to medium then leave the sauce to reduce for about 10 minutes. Add the parsley just before you serve it.
  • Serve immediately with mashed potatoes or creamy polenta.

¾ cup olive oil
2½ cups yellow onion, (thinly sliced)
2 tablespoons roasted garlic, (roughly chopped)
2½ cups carrots, (peeled and cut into 1/4 to 1/2-inch rounds)
5 cups packed kale (preferably Lacinato), (washed and dried, tough stems removed, roughly chopped)
1½ cup oil marinated artichoke hearts, (drained, roughly chopped)
2 tablespoons fresh oregano, (finely chopped)
1 tablespoon dried thyme
1¼ cup canned tomatoes, (peeled, chopped)
½ cup cream sherry
2¼ cups vegetable stock
3¾ cups cooked Cannellini beans
1 cup panko breadcrumbs
salt and freshly ground black pepper

Steps:

  • Use about 2 tablespoons of the olive oil to coat the bottom of a large (about 3½ quart), heavy-bottomed pot (A Dutch Oven is perfect). Place the pot over medium-high heat and add the onions. Stirring every few minutes or so, cook the onions until they are very tender and are beginning to become brown, about 15 minutes. Add the roasted garlic and stir to blend.
  • Add the carrots and cook until they begin to brown, about 5 minutes. Then add the kale and cook until it's completely wilted, about 5 minutes.
  • Stir in the artichokes, oregano and thyme, and cook for a couple of minutes, until it's very aromatic.
  • Deglaze the pot with the tomatoes, sherry and stock. Use a flat-bottomed wooden spatula to scrape any stuck bits of food from the bottom of the pot, back into the mixture.
  • Preheat the oven to 300°F.
  • Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes. Then uncover the pot, turn the heat to medium and cook to reduce the liquid by about half. This should take about 20 minutes.
  • Fold in the beans and season generously to taste with salt and pepper. (Here's How to Season to Taste.)
  • Pour the mixture into a 9 x 13 x 2½ inch baking dish, or two 9 inch pie dishes.
  • Sprinkle the bread crumbs evenly on top and then drizzle with the remaining olive oil.
  • Bake uncovered in the preheated 300°F oven for 1½ hours. Then cover loosely with foil, and bake for another 30 minutes. (If the top isn't as golden as you'd like, you can place it under the broiler for about 30 seconds.)
  • Let it rest for at least 15 minutes before serving.

3 medium leeks (white and pale green parts only)
4 medium carrots, halved lengthwise and cut into 1-inch-wide pieces
3 celery ribs, cut into 1-inch-wide pieces
4 garlic cloves, chopped
1/4 cup olive oil
4 thyme sprigs
2 parsley sprigs
1 Turkish or 1/2 California bay leaf
1/8 teaspoon ground cloves
3 (19-ounce) cans cannellini or Great Northern beans, rinsed and drained
1 quart water
For garlic crumbs
4 cups coarse fresh bread crumbs from a baguette
1/3 cup olive oil
1 tablespoon chopped garlic
1/4 cup chopped parsley

Steps:

  • Make cassoulet:
  • Halve leeks lengthwise and cut crosswise into 1/2-inch pieces, then wash well and pat dry.
  • Cook leeks, carrots, celery, and garlic in oil with herb sprigs, bay leaf, cloves, and 1/2 teaspoon each of salt and pepper in a large heavy pot over medium heat, stirring occasionally, until softened and golden, about 15 minutes. Stir in beans, then water, and simmer, partially covered, stirring occasionally, until carrots are tender but not falling apart, about 30 minutes.
  • Make garlic crumbs while cassoulet simmers:
  • Preheat oven to 350°F with rack in middle.
  • Toss bread crumbs with oil, garlic, and 1/4 teaspoon each of salt and pepper in a bowl until well coated. Spread in a baking pan and toast in oven, stirring once halfway through, until crisp and golden, 12 to 15 minutes.
  • Cool crumbs in pan, then return to bowl and stir in parsley.
  • Finish cassoulet:
  • Discard herb sprigs and bay leaf. Mash some of beans in pot with a potato masher or back of a spoon to thicken broth. Season with salt and pepper. Just before serving, sprinkle with garlic crumbs.
