I was looking for something for dinner and this caught my eye and so we had to try it. This is tender and very yummy. Make and excellent dish for a church brunch or pot luck. I got this recipe from The Best of Country Cooking 2002 Taste of Home.

2 eggs
1/2 cup milk
1 teaspoon Worcestershire sauce
3/4 cup dry breadcrumbs
1 1/2 teaspoons ground mustard, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb cooked ham, ground (about 4 cups)
1 lb ground pork
1 (20 ounce) can sliced pineapple
1/2 cup packed brown sugar

Steps:

  • In a bowl, combine eggs, milk, Worcestershire sauce, bread crumbs, 1 teaspoon mustard, salt and pepper. Add ham and pork mix well.
  • Shape into eight oval patties, set aside.
  • Drain pineapple, reserving 1/2 cup of juice. Place a pineapple slice between each ham patty. (Refrigerate remaining pineapple and juice for another use.) Carefully place in an ungreased 9 in x 5 in x 3 in loaf pan.
  • Pat patties around pineapple to form a loaf. Combine brown sugar, remaining mustard and reserved juice; pour a small amount over loaf. Bake, uncovered, at 350 degrees for 1 1/4 hours or until lightly browned and meat thermometer reads 160 degrees, basting occasionally with remaining juice mixture.

It's great for company because you can mix the loaf in advance, then simply pour on the sauce before putting it in the oven...it's the sauce that makes it so good!

1 can (8 ounces) crushed pineapple, undrained

Steps:

  • In a large bowl, beat the eggs; add milk, crackers and pepper. Add the ham and pork; mix well. Shape into a 9x4-in. loaf and place in a shallow baking dish. In a small bowl, combine sauce ingredients; pour over loaf. Bake at 350° until thermometer registers 170°, about 1-1/2 hours, basting frequently.

½ cup milk
1 cup fine bread crumbs
⅛ teaspoon ground black pepper
2 Tablespoons prepared mustard
½ cup pineapple juice
½ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the meats, eggs, milk, bread crumbs, and pepper.
  • Mix well and form into a loaf. Place loaf into a loaf pan.
  • Mix mustard, pineapple juice and brown sugar. Pour over loaf in pan.
  • Bake at 350° F for about 1 hour. Baste several times during baking.

THIS HAM LOAF CAN BE MADE WITHOUT THE PINEAPPLE. BUT MAKE SURE YOU GLAZE WITH SAUCE
1 lb ground ham
1 lb ground pork
3/4 tsp each - salt & pepper
1 1/2 Tbsp brown sugar
2 eggs
4 slice fresh wheat or white bread crumbs - or 2 cups worth
1/2 c milk
1 medium onion, minced
1/4 tsp paprika
1/4 - 1/2 CUP DRAINED CRUSHED PINEAPPLE FOR THE TOP
BASTING SAUCE
1/4 c vinegar
1/2 c brown sygar
1/4 c pineapple juice
1 Tbsp dry mustard

Steps:

  • 1. In a small saucepan, whisk together glaze ingredients and bring to a boil. Simmer for about 10 minutes, then cool. It will thicken some as it cools.
  • 2. Preheat oven to 350 degree F. Grease a baking dish or small roaster. In a large bowl, mix all ham loaf ingredients until thoroughly blended.
  • 3. Pour out meat mixture into prepared baking dish and shape into a loaf as you would a meatloaf. Brush the top of loaf with glaze. Place in oven and bake for 1 hour and 10 minutes, glazing several times during baking process.
  • 4. Remove from oven. sprinkle on the pineapple if using and drizzle with glaze. Place back into oven for another 10 - 15 minutes. I broiled the last 5 minutes.
  • 5. Place onto a serving platter and slice. Serve with remaining glaze.

Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

1 egg
⅔ cup seasoned bread crumbs
½ cup milk

2 tablespoons cider vinegar

Steps:

  • Preheat oven to 350°F.
  • Cook onion in butter for 5-6 minutes or until tender. Cool completely.

1/2 cup ketchup
1 medium onion ((chopped))

3/4 cup milk
1/2 tablespoon paprika
1 1/2 cups brown sugar
1/2 cup white vinegar
1 teaspoon yellow mustard
8 ounces crushed pineapple ((with juice))

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together the ground ham, pork, eggs, mustard, ketchup, onion, graham crackers and milk. Mix well.
  • Spray a 9x13 baking pan with cooking spray.
  • Shape the ham mixture into a loaf, packing the meat firmly.
  • Sprinkle the top of the ham loaf with paprika.
  • Bake the ham loaf for 20 minutes. During this 20 minutes, make the pineapple glaze.
  • Combine the glaze ingredients together in a small saucepan over medium heat. Cook and stir until the sauce comes to a boil, then boil for 1 minute.
  • Remove from the heat and set aside until the ham loaf is ready to glaze.
  • After the initial 20 minutes of baking, brush the top of the loaf with the pineapple glaze.
  • Bake again for 70 minutes, basting the ham loaf 2 or 3 more times during baking.
  • Serve warm with any leftover pineapple glaze drizzled on top.

The look on people's faces when they try it for the first time is priceless! Since it makes so much, its a really good pot-luck dish.

2 lb ground ham
1 1/2 lb ground pork
2 eggs
1 c dried bread crumbs (or more)
1 c evaporated milk
Scant 1/4 c apple cider vinegar
1/8 tsp ground black pepper
1/8 tsp salt (but you really don't need it)
2 Tbsp dry mustard
1/2 c brown sugar, packed
FOR THE GLAZE
1 c brown sugar, packed
1/4 c apple cider vinegar
2 Tbsp dry mustard

Steps:

  • 1. Preheat oven to 350.
  • 2. In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
  • 3. Bake at 350 for about an hour.
  • 4. While the loaf is baking, mix up the ingredients for the glaze.
  • 5. After the loaf has been baking for an hour or so, pour the glaze on it and bake it for another 20-30 minutes.

1 cup milk
¾ cup crushed saltine crackers

  • Place ham in food processor and grind for approximately one minute (or use a meat grinder). Put the ground meat in a large mixing bowl.
  • Lightly beat the eggs in a small bowl. Then in the large bowl combine eggs, bread crumbs, milk, pepper and dry seasoning blend with the ground ham and mix well.
  • Shape the ham loaf mixture into a roughly 8 x 4" oval and place into a shallow baking dish or loaf pan.
  • Bake the large loaf uncovered for 25 minutes.
  • Combine glaze ingredients and spoon glaze over loaf.
  • Place loaf back into oven and bake for an additional 35 minutes, basting occasionally with the glaze.
  • Remove loaf from the oven and allow to cool a bit before putting on serving platter and slicing.
