Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

7 slices bacon
2 cloves garlic, peeled and minced
1 (8 ounce) package cream cheese, softened
¼ cup half-and-half
4 ounces blue cheese, crumbled
2 tablespoons chopped fresh chives

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
  • Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
  • Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
  • Bake covered in the preheated oven 30 minutes, or until lightly browned.

8 ounces cream cheese, room temperature
3 ounces Danish blue cheese, crumbled (3/4 cup)
2 shallots, chopped
1 clove garlic, chopped
1/3 cup heavy cream
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground pepper
Medjool dates, raisins, pepitas, and sliced or slivered almonds, for decorating
Crackers and crudités, such as red endives, radishes, and purple baby carrots, for serving

Steps:

  • Preheat oven to 325°F. Place both cheeses, shallots, garlic, cream, Worcestershire, 1/2 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor; blend until smooth, scraping down bowl as needed.
  • Transfer to an 8-inch gratin dish or other shallow baking dish. Bake until heated through and lightly browned in places, 20 to 25 minutes (if heated through but not browned, broil 30 to 60 seconds).
  • Decorate with edible insects (use dates and raisins for bodies, and pepitas and almonds for appendages), and serve warm, with crackers and crudités.

7 bacon strips, chopped
2 garlic cloves, minced
1 package (8 ounces) cream cheese, softened
1/4 cup half-and-half cream
1 cup (4 ounces) crumbled blue cheese
2 tablespoons minced chives
3 tablespoons coarsely chopped smoked almonds
Bagel chips

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1/2 teaspoon drippings., Saute garlic in reserved drippings for 1 minute; transfer to a small bowl. Add cream cheese and cream; beat until smooth. Stir in the blue cheese, chives and bacon., Transfer to a 1-qt. baking dish; cover and bake at 350° for 25 minutes. Uncover and bake 5-10 minutes longer or until lightly browned. Sprinkle with almonds; serve with chips.

1/4 cup half-and-half

Steps:

  • Cook bacon in heavy large skillet over medium-high heat until almost crisp, about 7 minutes;drain excess fat from skillet.
  • Add garlic and cook until bacon is crisp, about 3 minutes.
  • Preheat oven to 350 degrees.
  • Using electric mixer, beat cream cheese until smooth; add half and half and beat until combined.
  • Stir in bacon mixture, blue cheese and chives.
  • Transfer to 2-cup ovenproof baking dish; cover with foil.
  • (Can be prepared 1 day ahead. Bring to room temperature before continuing.).
  • Bake until heated through, about 30 minutes.

7 bacon, slices chopped

Steps:

  • Preheat oven to 350 degrees.
  • Bake walnuts in single layer in an shallow pan for 6-8 minutes or until toasted and fragrant., stirring after 3 minutes.
  • Cook bacon in skillet over medium high heat, stirring often, 10 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 1 tbsp drippings in skillet. Add minced garlic to hot drippings and saute for 1 minute.
  • Beat cream cheese at medium speed with an electric mixer until smooth. Add half-and-half, beating until combined. Stir in bacon, garlic, blue cheese, and chives. Spoon mixture into 1 quart baking dish.
  • Bake at 350 degrees for 20 minutes or until golden and bubbly. Sprinkle with walnuts.

8 strips Wright Brand Naturally Hickory Smoked Bacon
8 ounces cream cheese (1 package, softened)
1 cup shredded cheddar cheese
1 cup shredded Parmesan cheese
⅓ cup mayonnaise
3 green onions (thinly sliced)
1 teaspoon garlic powder
½ teaspoon onion powder
assorted crackers for dipping

Steps:

  • Preheat oven to 350 degrees. Spray an 8 x 8 inch baking pan with non-stick cooking spray.
  • Cook 8 strips of bacon to desired crispiness (get the instructions HERE for our favorite way to cook bacon). Crumble 6 strips of bacon and set aside the other two strips for later.
  • In a medium bowl, mix together crumbled bacon, cream cheese, cheddar cheese, Parmesan cheese, mayonnaise, 2 of the green onions, garlic powder, and onion powder.
  • Spread mixture in prepared 8 x 8 inch pan and cook for 10 minutes, then stir. Crumble the two remaining bacon strips and top the bacon cheese mixture with the bacon crumbles and remaining green onion. Cook for 5 more minutes, then remove from oven and serve with your favorite assorted crackers.

assorted fresh vegetable (trimmed and sliced)
baguette (sliced)

Steps:

  • Preheat oven to 350.
  • In nonstick skillet, cook bacon over medium-high heat about 8 minutes or until nearly crisp.
  • Drain bacon and wipe skillet dry.
  • Return bacon to pan, add garlic, and cook over medium heat until bacon is crisp (about 3 minutes).
  • Make sure garlic doesn't burn.
  • Drain on paper towels.
  • Using paddle attachment of electric mixer, beat cream cheese in bowl until smooth.
  • Add cream. Beat well to mix.
  • Fold in bacon, garlic, blue cheese, and chives.
  • Transfer to a 2-cup baking dish.
  • Top evenly with almonds.
  • Bake about 30 minutes or until heated through.
  • Serve with crackers, baguette slices, or vegetables.

Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.

This recipe is delicious! AND great as it is. Might be a little salty for some people, but if you're looking at a recipe for blue cheese and bacon, you shouldn't kid yourself, haha. BONUS: I took a small portion of my dip and stuffed it in some mushroom caps, baking for 10-15 minutes, AWESOME!
