1/4 cup fresh lime juice
1/4 cup tequila
4 cloves garlic, peeled and smashed
2 tablespoons roughly chopped cilantro leaves
2 tablespoons vegetable oil
2 teaspoons Worcestershire sauce
1 teaspoon dried crushed Mexican oregano
1 teaspoon red pepper flakes
1 teaspoon ground cumin
1 teaspoon ground coriander
2 pounds flank steak, fat trimmed
2 teaspoons salt
1 teaspoon ground black pepper
6 large flour tortillas
1 red bell pepper, stemmed, seeded, and thinly sliced
1 green bell pepper, stemmed, seeded, and thinly sliced
1 yellow bell pepper, stemmed, seeded, and thinly sliced
1 large white onion, thinly sliced
1 tablespoon minced garlic
Lime wedges, accompaniment
Cold Mexican beer, or tequila shots

Steps:

  • In a bowl, whisk together the lime juice, tequila, garlic, cilantro, 1 tablespoon of the oil, the Worcestershire sauce, oregano, pepper flakes, cumin and coriander. Pour into a large zip-lock bag, add the steak, and seal. Place in a baking dish and refrigerate for at least 12 and up to 24 hours, turning occasionally.
  • Remove the meat from the bag and pat dry. Season on both sides with 1 teaspoon of the salt and 1/2 teaspoon of the pepper.
  • Preheat the grill to high, and preheat the oven to 325 degrees F.
  • Wrap the tortillas in foil and place in the oven for 15 minutes to warm and soften. Remove from the oven and keep warm in the aluminum foil.
  • Cook the steak over the grill to preferred temperature, 3 to 4 minutes per side for medium rare. Remove from the heat and let rest for 10 minutes before slicing.
  • Meanwhile, in a large skillet, heat the remaining oil over medium-high heat. Add the peppers and onions, and cook, stirring, until soft and slightly caramelized, 12 to 15 minutes. Add the garlic, remaining teaspoon salt, and 1/2 teaspoon pepper and cook, stirring, until the garlic is fragrant and soft, 1 to 2 minutes. Remove from the heat.
  • Thinly slice the steak against the grain. Divide among the warmed tortillas and top with the vegetables. Squeeze with lime juice and serve immediately with cold beer or tequila shots.

Steps:

  • Whisk olive oil, lime juice, cilantro, onion, garlic, cumin, salt, and black pepper in a bowl, and pour into a resealable plastic bag. Add steak strips, coat with the marinade, squeeze out excess air, and seal bag. Marinate in the refrigerator for 4 hours to overnight.
  • Heat a large skillet over medium heat; cook and stir beef in hot skillet until all liquid is absorbed, 15 to 20 minutes.
  • Serve cooked beef with tortillas, salsa and Mexican cheese blend.

We have this easy and delicious Mexican dish often served with beans and rice. The better cut of meat you use, the more tender it is.

1 lb beef steak, thinly sliced into strips
1 medium onion (I prefer the taste of red onions)
1 large green bell pepper
1 large tomatoes, diced
2 teaspoons cooking oil
1 teaspoon chili powder
2 teaspoons ground cumin
2 teaspoons Worcestershire sauce
2 tablespoons water
warmed tortilla
sour cream
guacamole
salsa

Steps:

  • Partially freeze meat for easier slicing.
  • Heat oil in a large skillet or wok.
  • Add steak strips to the oil.
  • Stir-fry until meat loses its pink color.
  • Remove meat from pan.
  • Add additional oil to the pan if needed.
  • Cook onions and bell pepper until crisp tender.
  • Return meat to pan.
  • Add the water, chili powder, cumin, and Worcestershire sauce.
  • Cook and stir until the water is gone.
  • Stir in the tomatoes.
  • Heat through.
  • Place some of the meat in a warm tortilla leaving the bottom half free.
  • Top with sour cream, guacamole, and salsa.
  • Fold sides and bottom in leaving the top open.

3 lbs skirt steaks
1/2 cup fresh lime juice
1/3 cup corn oil
1 tablespoon oil
1/2 cup tequila
1 teaspoon ground cumin
1 teaspoon dried oregano, crumbled
1/2 teaspoon fresh ground pepper
3 large garlic cloves, finely chopped
6 small onions, peeled, cut in half
18 flour tortillas
3 cups refried beans

Steps:

  • Trim the excess fat from the meat and cut it crosswise into long strips about 1/2 inch wide. Place the strips in a shallow, nonreactive dish. In a bowl stir together the lime juice, 1/3 cup oil, tequila, cumin, oregano, pepper and garlic. Pour over meat, coating each piece well.
  • Cover with plastic wrap and refrigerate for 24 hours, turning the meat over a few times. In a heavy frying pan or a griddle over medium heat, warm the 1 tablespoon oil. Cook the onion, stirring, until well browned, 6 to 8 minutes. Transfer to a plate and keep warm.
  • Place the same pan or griddle over high heat. Drain the meat well, reserving the marinade. Add the meat to the pan or griddle and cook, turning once and basting with the leftover marinade, until done to your liking, about 2 minutes on each side for medium-rare. Transfer to the plate holding the onions and keep warm.
  • Heat the tortillas, turning once, on the same pan or griddle, about 10 seconds on each side. Alternatively, wrap in plastic wrap and place in microwave oven for about 30 seconds. Just before serving gently heat the refried beans in heavy saucepan. Cover and keep warm. Arrange the meat, onions and tortillas on a warmed platter. Place the refried beans, guacamole, salsa, sour cream and cilantro in separate dishes on the side. Diners can prepare their own fajita according to their liking.

2 lbs skirt steaks
3 garlic cloves, peeled and mashed
1/3 cup vegetable oil, plus
2 tablespoons vegetable oil
4 tablespoons tequila
1 teaspoon salt
4 tablespoons fresh lime juice (from real limes)
1 large white onion, sliced into thin crescents (half rings)
3 green bell peppers or 3 assorted color bell peppers, cut into strips
1 teaspoon ground cumin

Steps:

  • Cut the steak into pieces that will fit on your grill, or into your grill pan or skillet.
  • Place the pieces of meat into a non-reactive bowl.
  • Mix the garlic, lime juice, cumin, tequila, salt, and 1/3 cup vegetable oil.
  • Pour over the meat and marinade for 2 hours.
  • Remove the meat from the marinade and grill over hot coals or in a grill pan or skillet over med-high heat.
  • Do not allow meat to dry by overcooking.
  • Heat the remaining 2 tbsp vegetable oil and sautee peppers and onions over med-high heat until they are crisp/tender.
  • Cut the grilled meat into strips and serve with pepper and onion mixture.
  • Serve with warm flour or corn tortillas.
  • Can also serve with optional sides: sour cream, avocados, guacamole, salsa, cheese, lettuce, etc.

Steps:

  • Cover the brisket with just enough barbeque sauce to coat in a large skillet.
  • Cook, covered, over low heat just until heated through.
  • Spread a thin layer of cooked beans over a warm tortilla.
  • Top with brisket, guacamole, onion and salsa; roll to enclose filling.
  • Repeat process with remaining tortillas.

Fajitas are such a great food - they just scream summertime. This is great because you don't need a grill, and you can make it indoors, even if it's not summertime. I got this recipe from the Juan-Carlos Cruz Calorie Countdown Cookbook, and I wanted to save it before I have to return the book to the library! The original recipe says it serves 4. I don't know about you, but I think that would be, like, a kid serving size. Note: Prep time does not include marinating time.

3/4 lb boneless skinless chicken breast, cut into thin strips
1/4 cup tequila
1/4 cup fresh lime juice
1 tablespoon Worcestershire sauce
1/2 teaspoon red pepper flakes (or to taste)
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 garlic cloves, minced
2 teaspoons canola oil
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1/2 medium red onion, sliced into strips
4 (6 inch) corn tortillas
1/4 cup fresh cilantro, chopped (optional)

Steps:

  • Place the chicken breasts in a heavy-duty resealable bag.Mix together the tequila, lime juice, Worcestershire sauce, red pepper flakes, chili powder, salt, pepper, and garlic in a bowl. Pour into the bag with the chicken, and place into the refrigerator for 45 minutes or longer (I would probably do it several hours).
  • Heat a large nonstick skillet over medium-high heat, and add the canola oil. Saute the bell peppers and onion until crisp tender, 3 to 5 minutes. Remove from the pan and keep warm.
  • Remove the chicken strips from the marinade and discard the marinade.
  • Cook the chicken in the same pan in which you cooked the vegetables for about 6 minutes, or until there is no pink left.
  • Return the onions and bell peppers to the pan and heat through for about one minute. Season with salt and pepper to taste.
  • Warm the tortillas and place on plates. Divide the chicken mixture evenly among the tortillas, sprinkle with cilantro, and serve.
  • Variations:
  • Tequila Steak Fajitas: Substitute 3/4 pound flank steak for the chicken breasts.
  • Tequila Shrimp Fajitas: Substitute 3/4 pound shrimp for the chicken. Cook the shrimp for 2 minutes, or just until pink.

Steps:

  • In a bowl, combine steak, chili powder, coriander and oregano.
  • In another bowl, combine mango, tomato, 1/4 cup of the red onion, 1 tablespoon of the lime juice, cilantro and 1/4 teaspoon of the salt.
  • Set the salsa aside.
  • Heat oil in a large nonstick pan set over medium high heat.
  • Add steak, remaining onion, remaining salt, green pepper, cayenne and worcestershire sauce and cook, stirring frequently, for 6 to 7 minutes, or until vegetables are softened and meat is cooked to desired degree of doneness.
  • Remove from heat and stir in remaining lime juice.
  • Heat the tortillas according to package directions.
  • Working with one at a time, place a tortilla on the work surface and spoon 1/4 of the meat mixture in a strip down the center.
  • Spoon 1/4 of the salsa over the meat, then roll up the tortilla by folding the bottom flap up over the filling and then rolling the sides in to form a tube shape with an opening at one end.

1/3 cup chopped onion
2 tablespoons white wine vinegar
1 tablespoon lime juice
1 garlic clove, minced

1 beef flank steak (1/2 pound)
1/2 each medium sweet red and green pepper, sliced
