4 veal cutlets (4 ounces each)
1/2 teaspoon canola oil
1 pound sliced fresh mushrooms
1 small onion, chopped
1 garlic clove, minced
1/2 cup white wine or reduced-sodium chicken broth
4 teaspoons all-purpose flour
1/4 cup water
2 tablespoons minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large nonstick skillet coated with cooking spray, cook veal in oil over medium heat until no longer pink, 2-3 minutes on each side. Remove and keep warm. , Add mushrooms, onion and garlic to the skillet; cook over medium-high heat until tender, 5-8 minutes. Add wine, stirring to loosen browned bits from pan. , Combine flour and water until smooth; stir into mushroom mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in parsley, salt and pepper. Serve over veal.

Veal Cutlets, thinly sliced
salt and fresh black pepper as desired
flour for dredging
extra virgin olive oil divided
Medium Onion cut into a 1/4-inch dice
cloves fresh garlic, sliced
baby portobello mushrooms
roasted peppers, drained
dry white wine
chicken broth
butter

Steps:

  • Place the cutlets between two pieces of plastic wrap and pound the cutlets to 1/4-inch thick. Transfer to a plate and season each cutlet with salt and pepper. Dredge each cutlet in the flour and shake off the excess. Put a large saute pan over a medium-high flame and heat 2 tablespoons of the oil until shimmering. Cook the cutlets in batches searing them for about 1 minute on each side, do not overcook. Transfer to a plate. In the same pan add the remaining oil. Add the onions and saute until soft, about 5 minutes. Add the garlic and mushrooms and peppers, wine and broth. Cook until soft, about 4-5 minutes. Add in the butter and return the cutlets to the pan. Cook for 2-3 minutes and serve immediately with crusty bread.

1 teaspoon minced garlic
2 cups chopped tomatoes (canned are fine; drain them first)
Salt and pepper
1 cup mixed good olives
8 to 12 thin slices veal, preferably from the leg, pounded slightly until less than 1/4-inch thick
Flour for dredging
1 lemon, thinly sliced
Chopped fresh parsley leaves for garnish

Steps:

  • Heat oven to 200 degrees. Put 2 tablespoons olive oil in a medium saucepan over medium heat; add garlic and, when it sizzles, tomatoes and salt and pepper. Cook, stirring occasionally, until tomatoes break down, about 10 minutes, then add olives, and turn heat to low.
  • Put about 3 tablespoons olive oil in a large skillet, preferably nonstick, over medium-high heat. Sprinkle veal with salt and pepper, then dredge it in flour. Sauté as many slices as will comfortably fit in skillet, just until brown on both sides, 5 minutes or less. Remove to a plate, and keep warm in oven while sautéing remaining slices.
  • Taste sauce, and adjust seasoning; spoon it over veal slices, and arrange lemon on top. Sprinkle with parsley, and serve.

4 Tablespoons Oil, Divided
2 Tablespoons Unsalted Butter
8 Thin Slices Veal Scallopini (About 1 1/2 Pounds), Pounded To Equal Thickness
All-Purpose Flour Seasoned With Salt And Pepper
1/2 Cup Sweet Marsala Wine
1 Cup Chicken Broth
1/2 Cup Heavy Cream
1/2 Teaspoon Fresh Thyme
Salt & Pepper

Steps:

  • Season the flour with salt and pepper.
  • Place the seasoned flour in a plastic bag and add the veal scallops.
  • Shake until they are well coated, then set aside.
  • In a large skillet, heat half the oil and butter until bubbly.
  • Add the mushrooms and cook until golden brown, about 15 minutes.
  • Remove mushrooms to a separate dish.
  • Add remaining oil to the skillet and once hot, fry the cutlets in the skillet one minute per side.
  • Remove cutlets to the dish with the mushrooms.
  • Add the Marsala wine, and deglaze, scraping up any browned bits from the bottom of the pan.
  • Add the chicken broth and cream, fresh thyme, then cook over high heat until the sauce has reduced by half and has thickened.
  • Taste and add salt and pepper as needed.
  • Return the mushroom and veal to the pan to reheat.
  • Serve the veal with a good sized spoonful of the mushroom marsala sauce.

3 veal cutlet fillets
1/2 cup all-purpose flour
1/2 cup bread crumbs

1 tablespoon extra-virgin olive oil
2 shallots, peeled and finely chopped
3 portobello mushrooms, sliced

2 beefsteak tomatoes, diced

Steps:

  • In a medium bowl, whisk together 3 eggs, 2 tablespoons of milk, 2 tablespoons of chicken stock, and freshly ground black pepper to taste. Dip each veal cutlet in the egg mixture, and then dredge lightly in flour, then in breadcrumbs.
  • Heat extra-virgin olive oil in a medium sized saute pan. Add chopped shallots to the hot oil and fry each veal cutlet on both sides, about 5 minutes per side, or until golden brown.
  • Serve with Red Bliss potatoes and Lentil puree.
  • Heat olive oil in a medium sized pan and add chopped shallots. Add the mushrooms to the pan and saute until they soften.
  • Add sliced potatoes to a medium sized pot of boiling water, simmer until the potatoes are tender. Once the potatoes are tender, drain and add to the pan with mushrooms. Saute everything together until everything is tender.
  • Simmer lentils in approximately 3 cups of water until soft. Drain the water from the pot and add the diced tomatoes and the chopped red onion, then salt, to taste. Cook over low to medium heat for roughly 40 minutes, or until thick. Spoon the lentil puree over the prepared veal cutlets.

8 veal cutlets (about 1 1/2 lb total weight)
1 cup all-purpose flour
1 tablespoon paprika
1 tablespoon dried tarragon
salt & freshly ground black pepper, to taste
1 tablespoon unsalted butter (plus more, if needed)
1 tablespoon olive oil
1 lb wild mushroom, brushed clean and chopped (such as chanterelles, porcini, morels, shiitakes, or a combination)
1/4 cup sherry wine (can also use marsala)
1/2 cup chicken stock (or veal stock)
2 tablespoons tomato paste
2 tablespoons heavy cream (or sour cream)

Steps:

  • Place the veal cutlets between 2 pieces of parchment paper or plastic wrap. Using a meat mallet or rolling pin, flatten the cutlets to an even thickness of about 1/4 inch. In a shallow bowl or deep plate, mix together the flour, paprika, tarragon, 2 tsp salt, and 1 tsp pepper. Dredge the veal on both sides in the seasoned flour, shake off the excess, and set aside.
  • In a large frying pan, melt the 1 Tb butter with the olive oil over medium-high heat. When the butter is foaming, add the veal, in batches to avoid crowding, and saute, turning once or twice, until lightly browned on both sides, 5-6 minutes. Transfer the cutlets to a platter and tent loosely with aluminum foil to keep them warm.
  • Add more butter if needed and add the mushrooms to the pan. Saute, stirring often, until softened and lightly browned, 4-5 minutes. Stir in the sherry, stock, and tomato paste. Raise the heat to high and cook, stirring often, until the sauce thickens, 3-5 minutes. Remove from the heat and stir in the cream.
  • Transfer the veal to individual plates and top with the mushroom sauce. Serve at once.

Veal Milanese (or as the Italians call it 'Cotleta Alla Milanese') is a simple Italian dish of breaded veal cutlets, that are coated with flour, egg and breadcrumbs, then fried until golden brown. They can be served with just lemon wedges, or with your favorite topping, or with pasta.

Steps:

  • Prepare your dishes for breading - beat your eggs in a shallow bowl, add flour and bread crumbs to two separate plates.

  • Bread all your cutlets - start with flour (shake off the excess), then the egg, and then the breadcrumbs, then set aside.

  • Heat a large non-stick pan over high heat with olive oil, until the oil shimmers. Cook veal cutlets, 3-4 at a time, turning once, until browned and just cooked through, about 1 minute per side. Transfer scallopini to a separate plate and keep warm.
  • In the same skillet, add the butter and heat until starts to simmer. Add the mushrooms and garlic and saute for 2-3 minutes, until tender. Stir in 2 tablespoons of flour and keep stirring until well incorporated. Add the chicken broth, lemon juice, capers and white wine and bring to simmer, stirring and scraping any brown bits from the bottom. Continue cooking until the sauce has thickened a little. A couple of minutes will suffice. Don't make it too thick. Taste for salt and adjust, if needed.
