I love pasta but it is not always the healthiest thing to have for dinner. To make this one a little less guilty, I use turkey and add a carrot to the sauce. So tasty!

1 pound ziti pasta
1 onion, chopped
1 pound lean ground turkey
2 (26 ounce) jars spaghetti sauce
1 carrot, chopped
6 ounces provolone cheese, sliced
1 ½ cups reduced-fat sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees (175 degrees C). Lightly butter a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add ziti pasta and cook until al dente, about 8 minutes. Drain.
  • Heat a large skillet over medium heat; cook and stir onion and ground turkey until onion is translucent and turkey is no longer pink, about 7 minutes. Add spaghetti sauce and carrot; simmer until heated through, about 15 minutes. Layer ingredients into prepared baking dish as follows: half the ziti, Provolone cheese, sour cream, half the sauce mixture, remaining ziti, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese.
  • Bake in preheated oven until cheeses are melted, about 30 minutes.

A lower-calorie version of baked ziti that is delicious. You can certainly opt to use the full calorie cheese and ground beef instead of turkey, but really there is no need since it tastes just as good as the original!

1 lb ziti pasta
1 onion, chopped
1 -2 garlic clove, minced
1 lb ground turkey (use 93% lean, NOT the "extra lean" kind)
2 jars of your fav spaghetti sauce
6 ounces of sliced low-fat provolone cheese
1 1/2 cups low-fat sour cream or 1 1/2 cups light sour cream
6 ounces shredded mozzarella cheese

Steps:

  • Cook ziti pasta al dente.
  • In large skillet, brown the chopped onion and ground turkey. Add the minced garlic as the turkey begins to brown. Add the spaghetti sauce and simmer for approximately 15 minute.
  • Preheat oven to 350 degrees.
  • Butter or grease in your preferred way a 9 x 13 " baking dish.
  • Layer the ingredients as follows:.
  • - spread some sauce as the bottom layer to help prevent sticking.
  • -add 1/2 the ziti pasta.
  • - layer the slices of provolone cheese to cover the ziti.
  • -add sour cream.
  • -add 1/2 the sauce mixture.
  • -add remaining ziti.
  • -add1/2 the mozzarella cheese to cover.
  • -add remaining sauce on top.
  • -add remaining mozzarella to cover.
  • -add parmesean on top if desired (I found it not to be necessary).
  • -bake in the covered dish for 30 minutes @ 350 degrees.

1 lb ziti pasta
1 lb ground turkey
15 ounces ricotta cheese
1/2 cup parmesan cheese, grated
1/4 cup fresh parsley, chopped
1 egg, slightly beaten
3/4 teaspoon salt
1/4 teaspoon pepper
29 ounces pasta sauce
8 ounces mozzarella cheese, shredded

Steps:

  • Boil pasta.
  • Drain and set aside.
  • Brown ground beef.
  • Drain and remove from heat.
  • Add ricotta, parmesan, parsley, egg, salt, pepper, and half of sauce to meat and mix well.
  • Add ziti and toss gently to coat.
  • Spoon mixture into a 13x9-inch baking pan.
  • Pour remaining sauce over pasta mixture.
  • Sprinkle with mozzarella cheese.
  • Bake, uncovered, at 350 degrees for 20 minutes, or until hot and bubbly.

1 stick unsalted butter
2 pounds ground turkey
2 medium jars spaghetti sauce with roasted garlic
Pinch dried oregano
Pinch dried parsley
Pinch salt, plus additional salt for pasta water
Pinch pepper
1 medium onion, chopped
1 (1-pound) box rigatoni noodles
2 (1-pound) blocks mozzarella cheese (not the soft kind)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large skillet, melt half of the butter over medium heat. Add turkey and cook until browned. Add tomato sauce, oregano, parsley, salt, pepper, and onion and simmer until onion is tender.
  • Cook pasta in a large pot of boiling, salted water until a little less than al dente. Drain and cool. Cut 1 of the blocks of cheese into cubes and slice the other into thin slices. Melt the remaining butter and pour into the bottom of a deep 9 by 13-inch baking dish. Pour 1 1/2 ladles full of the sauce into the dish, or enough to completely cover the bottom. Add a layer of pasta and then a layer of cubed cheese. Repeat layering until all ingredients are used.
  • Fill 1 of the empty sauce jars 1/8 full with water and shake. Pour over pasta. Top with the thin slices of cheese, and sprinkle with additional oregano and parsley, if desired. Cover casserole with foil and place in oven. Check every 15 minutes until cheese is melted and bubbly. Remove foil for last 5 minutes of cooking to brown cheese.

1 lb ziti pasta (slightly undercooked)
1 lb cooked ground turkey or 1 lb ground beef
26 ounces favorite spaghetti sauce, divided
1 (15 ounce) can diced tomatoes
8 ounces part-skim ricotta cheese
1 teaspoon garlic salt
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon onion powder
1 teaspoon ground black pepper
12 ounces mozzarella cheese

Steps:

  • Preheat oven to 375°F.
  • In a large mixing bowl, blend the ricotta cheese and seasonings until thoroughly mixed.
  • Stir in the diced tomatoes, meat, and half of your sauce. Add the ziti, and stir until all the pasta is coated.
  • Spread half of remaining sauce on bottom of a 9x13 baking pan. Place your ziti mixture on top of it. Spread remaining sauce over the top. Sprinkle your mozzarella on top of the sauce.
  • Cover with aluminum foil and bake for 45 minutes. For a crisper top remove the aluminum foil and place under your broiler for the last 10 minutes of baking time.

I just invented this tonight, and I'm posting it with the picture to tempt you. I formulated this to only use one pot, not including the baking dish. Let me know if I should adjust some of the liquids, because I modified as I went. I like to do two smaller pans instead of one large one because you can freeze one and then pop it in the oven on a later busy night.

1 lb ground turkey (or turkey sausage, removed from casings)
1 (16 ounce) package whole wheat ziti
1 cup fat free sour cream or 1 cup ricotta cheese
4 tablespoons boursin cheese (can substitute ricotta, more sour cream)
1 (26 ounce) jar spaghetti sauce
1 (14 1/2 ounce) can stewed tomatoes
6 ounces shredded mozzarella cheese
2 ounces parmesan cheese
4 ounces mushrooms, sliced
1 medium onion
2 garlic cloves, minced
1 shredded carrot (you can use a peeler to shred it) (optional)
1 tablespoon virgin olive oil
2 tablespoons red wine (optional)
Italian spices, to taste

Steps:

  • Cook ziti according to package directions.
  • In large stockpot on med-high heat, add oil, garlic, onions, carrot shreds, and ground turkey. Cook until turkey is no longer pink. Drain off fat.
  • Add mushrooms and wine to pot, let simmer for 2-3 minutes.
  • Add sauce and tomatoes with juice to pot, heat on medium until warmed through. Add boursin and sour cream to taste, and cooked ziti. You may also add extra sauce or diced tomatoes if it looks too dry for you. Add seasonings, to taste, depending on how flavorful your jar sauce is. I like Bertolli or Barilla or 5 Brothers.
  • Spray baking dish with cooking spray and then put the mixture in the dish. Cook covered for 30 mins at 350, then broil the top for 2 minutes if you like it golden brown.

1 (13 1/4 ounce) box whole wheat ziti
1 large onion, chopped
3 garlic cloves, chopped fine
1 green bell pepper, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
1 dash dried red pepper flakes
1 lb lean ground turkey or 1 lb turkey breast
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 pint skim milk ricotta cheese
2 cups shredded 2% mozzarella cheese

Steps:

  • Sautee onions in a spray of oil until translucent, add garlic and continue cooking.
  • Add peppers and cook for about 5 minutes more, or until peppers start to get soft.
  • Add turkey, basil, oregano, and pepper flakes, and begin cooking over medium heat.
  • When turkey is cooked, remove from pan along with the veggies. Drain out the liquid at the bottom. Return the meat and veg back to the pan, add the tomatoes, crushed and the paste. Stir together and bring to a boil, reduce heat and simmer for about 20 minutes.
  • Meanwhile, prepare pasta according to directions. Cook until very al dente. Set aside and allow to cool, spraying with olive oil and tossing to prevent sticking. You can also toss it with a little olive oil, if you don't have a sprayer.
  • Combine the sauce, ricotta and about 2/3 of the mozzarella cheese with the pasta and pour into a 9x13 baking dish that has been lined with foil Sprinkle with remaining mozzarella cheese.
  • Cover with foil and bake at 350 for 40 minutes, or until bubbly. Remove the foil and bake another 15-20 minutes or until brown on top. If you can stand it, let it set for about 20 minutes more.
