KITTENCAL'S PARMESAN GARLIC BREAD OR GARLIC TOAST



Kittencal's Parmesan Garlic Bread or Garlic Toast image

For a nice change substitute finely shredded white cheddar cheese for the Parmesan cheese and fresh chopped chives for the parsley and also you could add in 1/4 cup mayo in with the butter mixture :)

1 loaf French bread (not the long thin kind)
1/2-3/4 cup butter, softened (no substitutes)
1 -2 tablespoon fresh minced garlic
2 teaspoons dried parsley or 2 tablespoons fresh parsley
1/3 grated parmesan cheese (you may increase slightly if desired)
1 pinch salt (or to taste)

Steps:

  • Set oven to 375°F.
  • ** FOR GARLIC BREAD; cut slices down the length of the bread about 1-inch intervals without cutting all the way through.
  • In a bowl, combine the softened butter with garlic, parsley and Parmesan cheese; mix well to combine.
  • Spread the butter/garlic mixture between bread slices, and then on the top of the loaf (you may sprinkle more Parmesan cheese on top of the loaf if desired).
  • Wrap the bread in heavy-duty foil leaving the top partially uncovered.
  • Bake until heated through (about 15 minutes).
  • ** FOR GARLIC TOAST; slice the bread into slices, then spread the garlic butter mixture over the top of each slice of bread, then sprinkle more Parmesan cheese over the top of each slice or you can sprinkle shredded cheddar cheese on top in place of the Parmesan.
  • Place onto a baking sheet and bake (350 degrees F) until lightly toasted to desired doneness.
  • Serve warm.
  • TO MAKE AHEAD: Combine all ingredients (except the bread) store covered in refrigerator for up to 3 days or freeze in a covered container ----- this bread can be made without the addition of the Parmesan cheese if desired, but of course it's better with the cheese!

1 pinch salt (teensy weensy) (optional)

Steps:

  • Using your pop-up toaster, toast the slice of bread until it starts to brown.
  • Firmly grasp the garlic clove, and rub it across the toasted bread.
  • Continue rubbing until the entire clove of garlic has been rubbed into the toast.
  • Butter the toast lightly- or heavily- your choice.
  • Sprinkle with a teensy weensy pinch of salt, if desired.

1/4 cup good olive oil
Kosher salt and freshly ground black pepper
1 garlic clove, halved lengthwise

Steps:

  • Preheat the oven to 400 degrees F.
  • Slice the baguette diagonally into 1/4-inch-thick slices. Depending on the size of the baguette, you should get 20 to 25 slices.
  • Lay the slices in one layer on a baking sheet, brush each with olive oil, and sprinkle generously with salt and pepper. Bake the toasts for 15 to 20 minutes, until they are browned and crisp. As soon as they are cool enough to handle, rub one side of the toasts with the cut side of the garlic. Serve at room temperature.

This recipe is so ridiculously cheap and easy that it's almost embarrassing, but I'm posting it anyway for anyone who has picky little eaters or who is simply looking for a quick and easy fix. It is not gourmet by any stretch of the imagination but is just what it's title suggests: easy, cheesy & garlicy. My family said, "yum", and I hope yours does too!

8 slices Italian bread (store-bought sliced bread, white or wheat)
4 tablespoons butter, softened (or margarine spread)
1/2 teaspoon garlic powder
1/8 teaspoon black pepper, ground
1 cup mozzarella cheese, shredded
4 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven broiler to lowest setting and position oven rack 8-10 inches from heating element.
  • Place slices of bread on a baking sheet. Broil for 2-3 minutes or until lightly browned.
  • Turn slices over and spread untoasted side evenly with butter/margarine. Then sprinkle lightly with garlic powder and black pepper. Then sprinkle with shredded mozzarella cheese and parmesan cheese.

1 loaf French bread, split horizontally
1 1/2 cups packed fresh basil leaves
4 tablespoons unsalted butter, room temperature
2 tablespoons olive oil
3 tablespoons grated romano cheese
2 large garlic cloves, finely chopped
salt & freshly ground black pepper, to taste

Steps:

  • Heat oven to 425 degrees. Line baking sheet with aluminum foil.
  • Place bread cut sides up on baking sheet. Process basil in food processor or blender until finely chopped. Add butter, oil, cheese, and garlic; process until smooth. Season to taste with salt and pepper. Spread basil butter evenly over each bread half.

2 tablespoons olive oil
2 garlic cloves, cut in 1/2
1 3/4 cups tomato sauce
1 cup white wine
1 teaspoon chopped fresh thyme leave
1 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 lbs calamari, bodies thinly sliced and tentacles whole (squid)
4 -6 slices bread
olive oil, for drizzling
2 -3 whole garlic cloves

Steps:

  • For the Calamari Stew: Warm the olive oil over medium heat in a medium pot.
  • Add the garlic and let cook until fragrant, about 2 minutes.
  • Remove the garlic.
  • Add the tomato sauce, white wine, thyme, red pepper flakes, salt, and pepper.
  • Bring the mixture to a simmer.
  • Add the calamari and stir to combine.
  • Continue to cook until the mixture comes back up to a simmer, about 2 more minutes.
  • Serve immediately with the Garlic Toasts.
  • For the Garlic Toast: Preheat the oven to 350 degrees F.
  • Meanwhile, drizzle the bread slices with olive oil.
  • Toast until the bread is crisp and turning golden brown, about 8 to 10 minutes.
