PESTO CHICKEN PANINI
Steps:
- In a plastic bag, combine chicken tenders and 1/4 cup of pesto, set aside and let sit for 15 minutes.
- In a small bowl, stir together 1/4 cup pesto and mayonnaise. Spread mixture on both sides of ciabatta; set aside.
- Preheat an oiled grill pan over medium-high heat. Grill chicken tenders 5 minutes per side. Remove and let rest for 5 minutes. Turn the heat down to medium and re-oil the grill pan.
- Place cheese on both halves of bread. Add arugula, then tomato, then basil leaves, then pesto chicken to bottom piece. Top with top half of bread. Place onto the grill pan and place a heavy pan on top of the sandwich. Grill for 3 minutes per side or until cheese starts to melt.
- Cut into 4 portions and serve.

This sandwich is tasty for lunch or dinner. I experimented and came up with it one night when I wanted to make something quick, easy, and tasty for my girlfriend who loves pesto sauce. Enjoy!

- Preheat an outdoor grill for medium heat; lightly oil the grate.
- Place basil, oil, garlic, Romano cheese, oregano, and pepper into a blender. Blend on high until smooth, adding additional oil if necessary, about 30 seconds.
- Grill chicken until juices run clear, about 5 minutes per side. Do not turn off grill.
- Spoon 1 tablespoon of Caesar dressing onto 2 slices of bread. Top each with lettuce, and an additional slice of bread. Spread the second slice of bread thickly with the pesto. Top each sandwich with a cooked chicken breast, a slice of smoked mozzarella, and the remaining bread.
- Grill sandwiches until the cheese is melted, and the bread is toasted, about 3 minutes per side.

Steps:
- Preheat panini press or other sandwich maker--I use a George Foreman grill.
- Spread 4 slices of bread with pesto on one side and the other 4 slices of bread with mayonnaise.
- Divide the turkey, tomato slices, onion slices, and cheese equally among mayonnaise-dressed bread slices.
- Top with remaining bread slices, pesto side down; brush tops with butter.
- Brush the bottom of the panini press with butter.
- Add 2 sandwiches, close lid, and cook about 5 minutes or until lightly browned and cheese is melted.
- Repeat to make the other two sandwiches.
- Cut each sandwich in half and serve.
