TOMATILLO SALSA

Steps:
- Set up your grill for even medium-high heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides evenly.
- Place the whole tomatillos, scallions and jalapenos on a cooling rack in a single layer. Drizzle with olive oil and sprinkle with salt. Place the cooling rack on the grill and cook, pulling the cooling rack off the grill to flip the vegetables, until softened and charred on both sides, about 5 minutes per side. Using a knife, scrape off the skin from the jalapenos. If you want the salsa to be spicy, leave in the seeds. If you do not, remove the seeds and ribs from the jalapenos.
- To a blender or a food processor, add the tomatillos, scallions, jalapenos, cilantro, cumin, garlic, lime juice and olive oil. Blend until a salsa forms. Blend as much as you need to reach the consistency of the salsa you like. Add salt to taste. The sauce will keep in the refrigerator for up to 1 week.
TOMATO SALSA - UNCLE BILL'S VERSION
A delightful Tomato Salsa recipe that can be adjusted to be spicier if desired. I have been making this for over 30 years.

Steps:
- In a large pot bring water to a rolling boil.
- Drop in tomatoes and scald for 2 minutes.
- Drain and immediately cover with cold water and some ice cubes and let sit for a few minutes.
- Remove skins and discard.
- Remove stem core and discard.
- Cut tomatoes into small chunks.
- Using a large cooking pot, add chopped tomatoes, Jalapeno peppers, red onion, green pepper, sweet red pepper, cilantro, basil, parsley, wine vinegar, lemon juice, ground cumin and liquid honey.
- Bring mixture to a boil.
- On medium-high heat, cook for about 5 minutes stirring frequently.
- Adjust spices and Jalapeno peppers to taste.
- Prepare 4- pint size canning jars by washing in soap and water, then rinsing in hot water.
- Preheat oven to 300 degrees F.
- Place washed jars upside down on oven rack and heat for 15 minutes.
- Prepare snap lids by boiling them in water for about 5 minutes.
- Fill jars with salsa mixture to within 1/4 inch of top of jars (for head space.) Remove any air bubbles by sliding a rubber spatula between glass and salsa; re-adjust head space to 1/4 inch.
- Wipe jar rims very clean to remove any stickiness.
- Place snap lids, then screw bands just until finger tight.
- Prepare a canner and bring water to boil.
- Place jars in canner rack and immerse in water.
- Process for 10 minutes.
- Remove jars from canner and place on a towel, then cover with another towel until cooled.
- Jars are sealed when lids"pop" and are concave (turned downward).
- Wipe jars clean and lable.
- Store jars in a cool, dry place.
UNCLE BILL'S MANGO SALSA

Steps:
- In a large saucepan, combine prepared mango, onions, sweet red pepper, Jalapeno peppers, coriander, garlic and vinegar.
- Grate lime rinds and squeeze juice from both limes and add to saucepan.
- Add sugr and mix well.
- Place saucepan over high heat and bring to a full rolling boil and boil for 1 minute, stirring constantly.
- Remove from heat.
- Immediately stir in liquid pectin.
- Stir for 5 minutes.
- Remove any foam to prevent fruit from floating.
- Prepare canning jars by sterilizing with soap and hot water, rinsing with clean hot water.
- Place jars in oven and heat for 15 minutes at 300 degrees F.
- Fill hot jars to within 1/4" from rim with mixture.
- Prepare canning lids in hot water.
- Carefully clean tops of rims and place lids, then screw tops and tighten just finger tight.
- Place jars on a towel and cover with another towel to cool.
- Jars are sealed when lids"pop" and are concave (turned down).
- Label jars and store in a cool dark place.

UNCLE BILL'S TOMATO AND ONION SOUP
My DW only ate store bought canned tomato soup which was loaded with sodium. I therefore decided to make a good tomato soup that is tasty and healthy. After my DW tasted it, she commented, "this soup is very, very good". I would like to share it with you.

Steps:
- In a large cooking pot over medium-high heat, melt 1/2 the butter and add olive oil.
- Add onions and cook until softened and lightly golden brown, about 15 minutes, stirring occasionally.
- Add carrots, celery, garlic, sugar, paprika, chili powder and pepper and cook for 5 minutes, stirring occasionally.
- Stir in tomatoes (including liquid), tomato paste, broth, water, chicken soup base, sweet red pepper, green pepper, basil and remaining butter; bring to boil.
- Reduce heat, cover and simmer for 30 minutes, stirring occasionally.
- In a blender, puree soup in batches until smooth and return to cooking pot.
- Reheat until soup is hot.
- When serving soup, sprinkle some croutons and chopped fresh parsley.
- Refrigerate any unused portions.
- NOTE: Deleting the Chicken Soup Base will reduce the sodium content in the soup.

UNCLE BILL'S TOMATO SOUP WITH FETA CHEESE
This is a very simple soup to make. It has a nice rich color and a lively flavor. Serve it with grilled pita bread cut into wedges for dipping. Grilled garlic bread is another great dipper, or Italian bread brushed with extra virgin olive oil and lightly grilled is also a good dipper.

- In a large saucepan, heat olive oil over medium heat.
- Add garlic and onion and saute' until very tender, about 5 minutes.
- Mix in flour and tomato paste; stir well and cook for 1 to 2 minutes, stirring slowly constantly.
- Pour in stock and mix well.
- Add tomatoes including liquid, oregano, basil and sugar and simmer for 12 to 15 minutes, stirring occasionally.
- Puree' the soup mixture in batches in a food processor or blender until smooth, then return to the saucepan.
- Bring back to simmer.
- Season with salt and pepper or to taste.
- When serving, sprinkle some feta cheese on top as a garnish.
- Serve Hot.
DEEP FRIED SHRIMP WITH VEGETABLES, UNCLE BILL'S VERSION OF "
This recipe was first tried at a Chinese Restaurant in Vancouver but under a different name. I made some changes to the recipe to bring out the flavors. Very easy to prepare and cook.

- Prepare shrimp, then rinse in cold water; drain.
- Place shrimp in a bowl and sprinkle with additional black pepper and salt and let dry while preparing other ingredients.
- In a mixing bowl, mix together flour, baking powder, baking soda, pinch of salt, pinch of black pepper, beaten egg and water and mix well to a smooth batter.
- Measure oil to a deep medium size saucepan or a frying pan and heat to medium-high heat.
- Dip shrimp into batter to coat well.
- Using tongs, hold shrimp by the tail and dip into hot oil for a couple of seconds so that the shrimp do not curl, then drop.
- Deep fry several shrimp at a time for about 2 minutes, turn over and cook for another 1 1/2 to 2 minutes or until golden brown.
- Remove shrimp onto paper toweling and set aside.
- Heat WOK to high heat, add 2 tablespoons of oil, then add prepared vegetables, stirring well and saute' for about 2 minutes until vegetables are just partially cooked.
- In a small mixing bowl, mix together water, vinegar, sugar, ketchup, soy sauce and tapioca starch until mixture is smooth.
- Add mixture to WOK, stirring constantly to coat vegetables and cook until sauce thickens slightly, about 1 minute.
- Divide shrimp equally to individual serving plates and spoon vegetable mixture over shrimp.
- Serve immediately.

UNCLE BILL'S PASTA WITH A VEGETARIAN TOMATO SAUCE
My DW will not eat pasta that has any meat in the sauce. It took me several tries until I came up with a sauce that she thoroughly enjoys. This is a very simple and easy recipe to make and is very tasty.

- In a large saucepan or frying pan, heat 2 tablespoons of olive oil on medium-high heat.
- Add onion and saute for 4 minutes, stirring often, do not burn.
- Add red and green pepper and saute for another 4 minutes, stirring often.
- Add tomatoes, tomato paste, garlic, basil, dried oregano, Italian herb seasoning, red hot pepper flakes, salt and pepper; stir to mix.
- Reduce heat to medium-low, cover and simmer for 30 minutes, stirring occasionally.
- Remove cover and continue to simmer for another 20 minutes or until sauce begins to thicken slightly. When slightly thickened, remove from heat and set aside.
- Meanwhile, in a large cooking pot or a pasta pot, fill 3/4 full with hot water and bring to boil.
- Add 2 tablespoons of olive oil and 1 tablespoon of salt.
- Add rigatoni and cook for 15 minutes, stirring once during cooking.
- Add bow-tie pasta and continue to cook for another 15 minutes or until both pastas are el dente.
- When pasta is cooked, reserve 1 cup of pasta liquid and set aside.
- Drain the pasta and return to the cooking pot.
- Add 2 tablespoons of butter and the remaining 2 tablespoons of olive oil, 1/4 cup of grated Padano cheese and toss to coat well.
- If pasta appears to be too dry, add a few tablespoons of reserved pasta water.
- You may now add the tomato mixture to the pasta pot and mix well to coat, or ladle the pasta into individual serving plates and then add the tomato mixture over the top.
- Sprinkle with additional grated Padano cheese if desired.
